    I want to make a few points and a small correction to what Rhonda mentioned:
    First, the enzyme in question, Polyphenol Oxidases (PPO), is in ALL fruits that brown, not just bananas, such as apples, mangos, and avocados. So her suggestion of substituting with avocados would not work.
    Second, I read the paper and it did not cover a wide culinary use of bananas and PPO effects. It purely uses fresh bananas mixed with a polyphenol source and that's it. The reason why the lack of other foods as well as preparation methods is important is because there are natural PPO enzyme inhibitors and deactivation methods. You can in fact verify this by doing experiments on sliced apples to prevent browning.
    A variety of acids -- ascorbic acid (Vitamin C), citric acid (citrus juices), ascetic acid (vinegar) -- all inhibit PPO enzyme. Salt also interferes with the oxidation process.
    Cooking from microwaving to dehydrating also deactivates the enzyme. Have you ever noticed that those apple, mango, etc chips or dried fruit you purchase NEVER browns?
    The amino acid L-cysteine also inhibits PPO, so you can also mix in some L-cysteine powder or open some capsules into your smoothie. Sources:
    scholar.google.com/scholar_lookup?journal=Indian+J.+Chem.+Technol.&title=Reversible+inhibition+of+polyphenol+oxidase+from+apple+using+l-cysteine&author=R.N.+Gacchea&author=A.M.+Shete&author=N.A.+Dhole&author=V.S.+Ghole&volume=13&publication_year=2006&pages=459-463&

    "Cysteine as an inhibitor of enzymic browning. 2. Kinetic studies"
    Furthermore, when PPO reacts polyphenols, the full oxidation process does not occur immediately, it occurs in two steps. First the polyphenol oxidase reacts with the polyphenols to form quinone compounds before reacting with air to form melanin (enzymatic browing), and it's uknown whether these polyphenol quinones have biological activity. For example as an analogy, you know how larger protien molecules are broken down to peptides, which can (but not always) be broken down to amino acids? Each one can still have biological effects, and a researcher may miss out on specific amino acid effects by only looking for metabolites of peptides (which is what this paper on bananas is doing--looking only for metabolites of the polyphenols). I've found out the same applies many other nutritional food compounds, that enzymatic reactions on those compounds, while forming different compounds can still have biological effects. Again, this is something unknown specifically for PPO reacted polphenol derived quinones but I think it's something worth investigating.

      I'm with you on almost everything, but the dried fruit that you buy never brownes because they are covered in syrup, otherwise they are not presentable for sale because almost all of them go brown. In the ingredient list for those there should be only one ingredient listed - the fruit itself, no sulfur, no preservatives etc.

      @@olgaskold6213 All I can say is that I have dried mangos that are just mangos, no sugar or preservatives, both normal dehydrated and freeze-dried that are past expiration date and have kept their color without browning a bit. Same with dried bananas--there is an some browning from the factory from the initial drying process, which involves some exposure to air of course, but it has never continued to brown after that like a fresh banana would

    Avocados and bananas have different nutritional profiles, but they both offer health benefits. Avocados are higher in healthy fats and fiber compared to bananas. While avocados can provide similar benefits in terms of stabilizing blood sugar levels due to their fiber content, they offer different nutrients. Avocados are rich in monounsaturated fats, which are heart-healthy, while bananas are a good source of potassium and vitamin C. Incorporating both into your diet can provide a diverse array of nutrients. 😮🍌🥑 👌🙏

    To counteract the effects of the high oxilates in yellow bananas in a smoothie is to add some type of milk or creme, the same with beets, high in oxilates...so I add organic cultured milk kefir or greek yogurts...for chard or collard grrens when cooked add grass fed butter...to lower or eliminate oxilates. Green bananas which is a prebiotic, i cook it and add it to my meals. Its high in potassium, magnesium and a prebiotic food..cooked green bananas makes your gut healthy n feels good....I grew up eating whole food, no processed foods, we cooked and prepared all our meals and my mom and grandma always spoke of the benefits of certain foods and why we should eat it.. oxilates in beets, chard, collard greens, maka root, kale and ripe bananas, adding cream of any kind or butter eleviates the adverse effects....but i only use organic milk kefir, greek yogurt or grass fed butter...hope this helps...there are studies done on the effects of high oxilate foods and how to eleviate the negative effects... these studies are found especially in the cultured food communities online...one more thing...the negative effects it has on our body once consumed was right side pain....and this only happen when I add these beets, kale or Maka root to my smoothie...then after resesrching and adding the milk kefir or greek yogurt to my smoothie eleviated the pain.

I know that potassium is a very important item in the diet, and with the avocado I ate, it was insufficient. Long story short, I broke the keto diet by eating literally two bananas and my arrhythmia stopped shortly after.

And the more sodium you consume the more potassium (along with water) you need to balance it. My own focus is on potassium over sodium, especially in light of the "consume more salt!" trend, since I have salt sensitivity, which like you, I've confirmed with a genetic test.

    Questionz: How quickly are the flavanoids absorbed after consumption? (in the colon as I understand) Will eating a banana "after" the berries leave the stomach (in 20 mins) later catch up to the berries in the gut before flavanoid absorption thus causing the same effect?
    I would assume that eating a banana first & then waiting an hour would still have the same effect since the berries would meet the banana in the colon before having a chance to absorb the flavanoids?

    This comment section is absurd. Why are you even watching nuanced, science-based nutrition content if you’re just going to get upset and reject it? Rhonda Patrick is as legit as they come, and this is honestly an interesting thing to know. No one is saying to never eat bananas again. But it’s worthwhile to be aware of PPO (polyphenol oxidase) so you can optimize your diet if you so choose.

    •  Місяць тому

      What bothers her and does not suit her does not mean that it is the same for other people. I know a man who would die if he ate a strawberry. Does this mean strawberries are bad for everyone? Of course not.
      P.S. if bananas are not perfect, the benefits of eating them definitely outweigh them.

    • @grailsgg
      @grailsgg Місяць тому

      @ This has nothing to do with someone having an allergy. This is about optimal nutrient timing, and it affects everyone equally. She's simply citing a study showing that the PPO in bananas degrades polyphenols. Obviously no one is forcing you to optimize your diet for the preservation of polyphenols, and you are not harmed by eating bananas and blueberries together. But just as you ideally wouldn't take calcium and iron together (calcium can inhibit iron absorption), knowing that bananas degrade the polyphenols in berries is helpful if you care about maximizing your polyphenol consumption.

    Question: So PPO in fruit oxidises i.e turns rhe fruit brown, banana, pear, AVOCADO, apple etc... so why did she swap out banana with avocado if they both have very high PPO levels?
    Also, usually things eaten in a meal stop the one substance being studied from having a real world effect (looking at you G.I index!) So Im guessing having a banana blueberry smoothie with your lunch would nullity all the scary PPO and the polyphenols get through safely.... Thoughts, Rhonda?

    • @pequalsnp
      @pequalsnp 29 днів тому +1

      Finally someone who also understand a bit more on the issue. I cite some ways to easily mitigate PPO enzyme in my comment ua-cam.com/video/B4GHsuo1hJg/v-deo.html&lc=UgyWHooMjN8HYVyGdzh4AaABAg but also wonder if the PPO reacted polyphenols, which form quinones, would themselves have biological effects that the researchers missed by only looking for metabolites of the original polyphenols / flavanols. The mitigation methods are well known for some time and easily verifiable by seeing if the method stops the fruit from browning, and I think my later point quinone compounds (before they turn to melanin) might be investigated by first doing in-vitro experiments on a variety of cells. It would be harder in-vivo if you didn't already know what to look for.

    This is unclear if the people were blending and immediately drinking, or if they were drinking pre-prepared smoothies. If you blend a banana and berry smoothie, and let it sit for a while, there is much more time for polyphenol oxidase to do it's thing, vs. blend and drink immediately?

    • @pequalsnp
      @pequalsnp 29 днів тому

      In my comment, in addition to showing how to easily mitigate effects of polyphenol oxidase (PPO), with sources cited (cooking/drying/combining with cysteine or much more common is combining with acidic fruits all would mitigate PPO enzyme), and something you can verify at home on apples or banans or any fruit that browns, I postulated about how since PPO enzyme actually first reacts with polyphenols to form quinones (again see my citation in the comment; this is also something apparently well known among agricultural and food chemists) before the quinone compounds *then* react with air to form melanin -- basically the polyphenols are transformed to polyphenol-quinone compounds form before browning -- that if in this form--the form you get first from the smoothie without mitigating factors (pure bananas + berries) if you immediately drank it, it would still have biological effects. The researchers only looked for the metabolites of what would be the original polyphenols rather than any enzymatic reacted forms or other compounds. Most byproducts of fermentation and enzymatic reactions still have biological effects. One well-known quinone compound (also derived from fermentation or enzymatic reaction) is Pyrroloquinoline-Quinone aka "PQQ". More here: www.ncbi.nlm.nih.gov/pmc/articles/PMC8533503/
