  • Freezing corn on the cob is a tasty summer-time chore. We make freezing corn on the cob easier by processing it outside right next to the garden. Growing sweet corn is an art so freezing the harvest is extremely important.
    The process of corn on the cob is made simple if performed outside. The way we process and freeze our corn will not heat up the kitchen. However, you can do this in your kitchen.
    Finally we show you how to load the freezer bag which is important when freezing sweet corn.

    I am an OLD FARM BROAD and I do not blanche my corn, the minute you wash or put it in water you are starting the deterioration of the taste and nutrients. I vacuum seal the ears and when I take them out I wrap them in a paper towel and microwave them 5 to 7 minutes for one ear. Tastes like fresh! Mine are in the freezer within an hour of coming out of the field.

    Nothing like a good sweet corn harvest. Having those yummy summer corn cobs for the winter instead of that canned stuff. Nothing compares.

    I no longer blanch corn. I clean it, vacuum seal it and freeze it. I have corn from over a year ago and tastes the same now as it did a year ago when cooked in my pressure cooker.

    Great video. Never thought of the two cooler setup. Some suggestions: Use a basket with your fryer. I put about one to two dozen ears in a fryer basket then drop into my turkey fryer full of boiling water. Makes it so much easier to get in and out in one shot and saves time. Also, once the corn is cooled down enough, I place directly in the freezer for about an hour and allow the freezer to pull some of the moisture off the corn, then vacuum seal in bags. This prevents freezer burn from too much moisture on the corn and also you can make customs sized bags with the vacuum system. But doing this I have eaten corn over a year later and it taste like it was just picked.

      Work smarter not harder. :-) I am always looking for ways to improve my process. So happy to share from my experience and learn from others. Next year I am going with the two cooler technique. :-)

      I'm definitely using the fryer basket idea next year. I have two sitting on a shelf. I haven't had issues with freezer burn but I do have a big sealer so I may employee that as well.

      Have used the baskets to blanch for 3 minutes, then additional coolers to cool with ice in the buckets, then use vacuum sealed freezer bags for several years. We do place the corn in the freezer for a short period of time to eliminate some of the water problems by freezing before sealing with them vacuumed sealer. If not the the moisture will interfere with the vacuum seal. We also add salt and butter to the freezer bags so they are ready to cook in the Microwave in the vacuum sealed freezer bag as soon as they are removed from the freezer. We have had corn on the cob that was over 3 years old straight out of the freezer and it tastes just like it was just picked. Amazing!

      Hi. Never had an issue with freezer fur or burn as long as I get most of the water out.

      Hi. Yes, they boil up in about 10 minutes from the freezer. I’ve also been freezing corn without blanching and it’s great. Check out our channel for the video.

    Great video, but I think I would get the collander type basket like you use with crawfish to remove the corn all at a time, let it drain, then empty it into the first cooler.

    I am SOOOOO jealous!
    QUESTION (A): WHEN ITS TIME TO USE IT, DO YOU LET IT THAW FIRST, OR PUT IT RIGHT IN THE WATER TO COOK FOR THE MEAL?
    QUESTION (B): I NOTED YOU DIDN'T DRAIN THE CORN WATER FROM THE FREEZER BAG. WAS THAT DONE DELIBERATELY? IS IT NECESSARY TO HAVE THE BEST CORN LATER ON??

      J Jo. Hi. I do drain as much water as I can out of the bag. To answer your question, I take the corn out of the freezer and place it straight in the boiling water. The frozen corn stops the water from boiling so after the water comes back to a boil, I boil for about 7 minutes. Sounds like you love corn as much as I do.

    We freeze it without blanching it & it works good, please tell me the benefit of blanching before freezing, thank you

      Jj Jj . Hi. Blanching is supposed to stop enzymes that reduce the quality of food when it’s frozen for an amount of time. With that said, last summer I put up about 10 bags of corn not blanched with just the top and bottom of shuck chopped off. So basically I froze them with the shuck on in a ziplock bag. This was a sample run for a video I’m going to make this summer. The good news is the corn is great with no loss of flavor. I just ate some yesterday. I just shuck enough for my wife and myself when we want some.

      I’m a little confused. Should I blanch the shucked corn for 5 min then cool and freeze, shuck without blanching then to the freezer, or freeze the corn with the shuck then freeze. Thanks for the video.

      It allows the sugars to stay intact, instead of getting starchy. It would work for 3 months or so without blanching, but if you blanch it it's been my experience that it stays sweeter longer. (A farmer told me this...)

    Did you try revers proces: corn go first in freezer, then after a year from freezer in boiler and when it is ready and go for eat?

    Hi. I enjoyed your video on freezing fresh corn on the cob. Questions: They don't need to be dryed off before they are put in the freezer bags? Also, when you take them out of the freezer to eat; how do you cook them? Thank you! ☺☺

      Abigail Vomelmo Hi. I drain as much water as possible out of the freezer bag. The cook, I get a pot of water boiling and place the corn in straight from the freezer. When the water gets back up to a boil, boil for 5 minutes and it’s done. No need to thaw.

      Hi. Thanks! I plant G90 sweet corn. Its a hybrid that has been around for at least 20 years but it's not a GMO. The stalks will grow 8ft tall every year. This year they were almost 9ft because of the rain we got this summer.

    Do you find that the texture of the corn is different after freezing vs eating it fresh? It’s the beginning of corn season here in British Columbia 🇨🇦 and I’ve always wanted to buy in bulk and preserve it to have in the winter months. I’m just worried the corns texture would be compromised after frozen? The only time I’ve had frozen corn on the cob it was quite mushy . Thoughts?

      What variety did you freeze because mine has never been mushy. None of my friends and relatives have been mushy.

    I would think it would keep it much fresher if you completely dry off the ears with a towel before you put the wet corn cobs into the freezer.

      Mark Young. Hi. I haven’t had any issues as long as I make sure that most of the water is out of the bag before it goes in the freezer. Drying it off is worth a try but I’m usually in to much of a hurry to completely dry it.

    I BLANCH,then put whatever I'm going to Freeze and Vacuum-seal It with my FOOD SAVER.Iv'e lost too much from FREEZER BURN over the years to do It any other way besides canning.

    There seems to be quite a bit of water in the bag,does it matter.

      sandra burke Hi. I usually turn the bag over just to make sure that there is no extra water in the bag. There is some water but It really doesn't hurt the corn. Corn is tough and does well in the freezer.

    It took my corn off the Cobb and put it in freezer bags and it was mushy when it was time to eat, any ideas to avoid this?

      It's 10 minutes after the water comes back to a boil. No defrosting required. At that point, I usually turn it off and let the corn sit in the hot water until everything else is ready for supper.

      Brandon. Hi. Great question. I have never frozen corn with the shucks on because we always have some earworms in Alabama. I have a friend that does it and swears by it. He says that he cuts off the top and bottom of the ear and freezes then in the shuck with no blanching.

      yes you can that is the way i freeze my corn pull it from tth stalk cut off about 1 inch from each end put in freezer bag an freeze

    Ahhh, why don't you remove the kernals and then freeze? Saves space, never seen anyone freeze whole cobs, good stuff though, peace.

    Nice looking corn...mine are great may 11 2023...earliest ever...but only about six inches long..all plump straight corn..couple have worm..ugh..
