    I love your recipes! I havent made the full conversion to purely plant based, but your videos really help the transition easier :)
    Next time you make this, try adding the olive oil before the vinegar, the Olive oil sticks to things, and the vinegar just falls off unless the oil is there to catch it. It took me years to figure out why sometimes my salads were amazing and othertimes they tasted off... It was because I added the vinegar first, and that causes the oil to slip right off the veggies.

    ....aghhh.....dang! i don't have any red onion or parsnips & already did the grocery shopping this morning....got everything else though...so..i still might make this..i wonder how some cubed squash might do as replacement?...gonna find out..got me craving it now...
    when you said the "don't feel like cooking" part my mind simply said no, never happen...lol
    You approach cooking same way i do.....same as approaching a blank canvas on the easel....it IS an art form meant to be Enjoyed & Savored.

    I could practically smell what you were cooking! Delicious! You have such a great presentation style. I would like to see you make a version of a 1970s vegetarian meal made with buckwheat, garbanzos, yogurt and fresh dill. (More of an Eastern European dish). It might have been in Recipes for a Small Planet. It was one of my favourites. The buckwheat is cooked in broth (of your choice). I think the dish needs a bit of green somewhere. Just throwing out an idea to you.

    How do you know someone's a pro...? They make everything look like light work! In preparation, "major" ingredients, and cooking method, the dishes you create are simple. Remember, I"m just a kid from the Midwest (Michigan blueberries are poppin' BTW). I'm always going back and watching these videos 3 and 4 times just to catch the seasonings and when they're added. My learning curve is often FLAT! I LOVE that you challenge us to use a diverse palette of flavors! But I can't lie; some days it makes my head spin :). This dish is so loaded with Vitamin A, Iron, Potassium, Folate, and Vitamin C! I might even consider tossing in some Nutritional Yeast for a B Vitamin kick on those root vegies or in the rice. So what did you do with the Beet Greens? When you mentioned Mint... All I could think about was how invasive in can get in a garden setting lol. Keep up the amazing work! PEEEEEEAAAACCCCCCCCCE!

      Mint does well in a pot, and it keeps it contained. We grew it for years in an old cement sink (sounds a bit, um, country, but it worked well and was painted blue so it was pretty!)

      🙌🏾 I so appreciate you! the beet greens i use in salads or pan fry as my side with a dish like this or tofu. Lightly seasoned, a bit of salt and pepper sauteed quickly with olive oil and garlic. also sometimes a splash of balsamic vinegar. Mint is so invasive! that and lemon balm. Still finding that pop up here and there in the garden 😂

      Another rice dish that would be great is a vegetable byriani. I throw whatever is handy in mine plus fresh herbs like cilantro, mint, etc. I have bowls of crispy fried toppings on the table like onions, mushrooms, jalapeños, corn kernels, etc

    So did you use those beet greens for something else? I would've sauteed those up after the chickpeas and added them in! My dad keeps all his beets from his garden (he's selfish with his beets 😂), but he brings me all his greens and I just saute them like spinach 😋👍

      Recipe on his blog says 30-40 minutes or until fork tender in 425 F oven

    I wonder if this would help with my daughter's shingles flare ups. She's young but in a super stressful job (chef) and that triggers it.

      you know... my wife has flare ups from her eczema. But she eats like this all the time and never has the flare ups. a stress induced flare up my be very different but it does hurt to try.
