Just as another budget saver idea; you can save up those red onion and garlic outer peels along with any unused veggie parts like stems and leaves and make into a home made vegan stock for soups. I save up in a big freezer bag ( in freezer)for several weeks. In large stock pot I cover with water and bring to boil. Once cooled I strain and usually make into a homemade miso soup but its good in potato, broccoli, split pea skies the limit to the kinds of soup you can make and super inexpensive. Love your vids-keep up the good work!

I love the simplicity on all of these recipes. I’m not vegan but we eat lots of vegan meals most days and I literally can eat the same thing 3 days in a row. Steamed potatoes 🥔 with salt & pepper and vegan butter and steamed broccoli 🥦 & 🥕 carrots on top. Or pinto beans over a potato. I also make a layered potato and veggie casserole with those frozen veggies you used. Yummmmm…easy & super affordable
I literally just made the Tex Mex Rice with Quinoa ( I’m out of rice) and canned roasted red peppers ( I didn’t have the tomatoes). It turned out great! I wrapped it in a tortilla and topped it with salsa & sour cream & queso fresco( I’m vegetarian). High protein and Easy Peasy… thank u !

Great video! My approach to meal prep is keeping ingredients in stock that maximize utility, ingredients that give me the largest breath of options for the meals I like (eg onions vs almond flour). I always have things like onions, bell peppers, carrots, and spinach in my kitchen.
I am super grateful and privileged for not having to worry about the cost of my meals but I looove a good budget meal - they really force us to eat more whole foods and be creative plus, life is definitely getting expensive due to what's happening in the world (and what has been happening for the past 2 years) so more ideas for cos-efficient cooking are very welcome :D . Made the first meal, divided into three portable lunch containers, avocado and chips on the side..Lunch for 1.50 each the next four days! Awesome work and delicious I might add.! I had canelli beans to use instead of black! I might add ,that I split this recipe in half.

Lol, so you are my twin! I went completely vegan a few weeks ago, and have watched endless videos and if I see any ingredient I don't have I get it! SMH, until reading this I didn't even realize it was my ADHD factoring in. I have to bring myself back down off this high I'm on and focus in on actually planning my meals for the week! Due to lack of planning, I'll say I have nothing to cook even though I have a pantry and fridge full of groceries.

These all look so tasty, & I like that they're budget friendly. In some vegan cooking channels I've seen recipies that look really interesting, but they use ingredients that are expensive or hard to get or that you're not likely able to have lying around. I like that yours use stuff that is easy & affordable to get.

I just found your channel. I am very impressed. My cholesterol is a little too high, blood sugar a little too high, kidney function is borderline and need to lose weight. Though I haven’t committed to vegan, your recipes look just like what my doctor ordered.
After working since age 15. Working lots. Working hard. In my 50s I found myself staring at a convenience store shelf trying to decide between a roll of tp and a can of beans. I had been disabled by a drunk driver and lost my business. I had been eligible for food benefits for a long time but this finally broke through my sinful pride I was wayyyyy eligible. Once I stopped missing meals my health improved markedly. Go figure. If you think you might qualify please apply. That's what we all pay taxes for. So first time here and I subscribed!. Great vid.
Just found your channel, love it, so I'm a happy new subscriber! My cooking is almost all vegan and budget friendly. While I have no issue with canned beans for SUPER ready-in-a-minute meals, I really prefer cooking beans myself from bagged dry beans. I keep a robust display of mason jars of beautiful beans on my countertop, I find the beans themselves to be gorgeous, and consider them a useful part of my kitchen decor! No soaking at all, I just boil however many I need until done to my liking, and add them into whatever I'm cooking. It's no harder or more time consuming to cook dry beans than it is to cook rice. Plus, I prefer beans to have a tiny bit of "snap" when I bite into them - "al dente" if you will 😀- but if you like the texture from a can, you can cook them until you get that. You can control both the texture and the sodium content when you use dry beans. Again, I'm not criticizing canned beans AT ALL, there are a few cans in my pantry too ❤
I love how the fact that you described the rice you use for fried rice has to be cold and one day old (put it in the fridge) 😊. I am an Indonesian and fried rice (nasi goreng) is our DNA, so does to many other asian country, and I got frustrated a lot by so many westerns even world class chef try to cook asian food in this case fried rice the wrong way and make our ancestors cry😢. Cold rice is No. 1 rule of making fried rice! you don't want your fried rice wet or mushy.
I like that you are doing recipes without the meat substitutes; there are times when I want a "burger", but I don't really want to eat a ton of substitutes, I want to learn to eat in a different direction.

I found myself wanting to quibble about certain choices, but honestly this is just a great video for someone who is just starting out on their cooking journey. Nearly every single one of these dishes I've made something similar starting out. There are definitely improvements as you move up in confidence and skill (a yeasted dough pizza, for example), but these staples will get you a well rounded, healthy, and delicious mix of meals.
You should wash the rice and soak it for about 30 minutes before cooking. This friction between the dry grains of rice creates starch dust that coats the grains. If the grains aren't washed before cooking, this residual starch will gelatinize in the hot cooking water and make the cooked grains of rice stick to each other.

I had to rewind the way you cored that bell pepper... I have NEVER cored a bell pepper like THAT. And I am a huge fan of your Calphalon pot.
I make pizza crust but use no oil but I do use yeast. Just splet flour water and yeast. Good to go in my bread maker. No salt either. I am SOS free. Saved money on not purchasing oil and i feel so much better. Love some of your recipes. Thank u for help us keep healthy.

I made the Tex Mex rice tonight. It was a hit. My husband is a vegan only at home. My son and I have only been vegan and I'm always looking for food my husband will love because my done and I are easy. This was a total hit! My husband asked for it in his lunch. Tomorrow's dinner is going to be pizza!
People assume a vegan diet is more expensive because they see the pre-made vegan stuff on shelves or organic boxed food which is usually double in price but if you cook yourself it's a fraction of the price. My animal eating family has grocery bills 3 times mine. I personally buy frozen because it lasts longer and I don't have any preparation time. I also think even frozen is cheaper. I can buy all my veggies for a month with 15-18 dollars.
I'm now addicted to your videos and recipes. I love the dry humor we would be good friends lol. I've tried the Cashew tofu with garlic turmeric rice, and the vegan chicken noodle soup. My daughter LOVED the soup so being kid approved is HUGE! Cant' wait to keep trying your recipes. I love how they make a lot, and are so full of healthy nutrition.

I love this guy. Has a great sense of humor, relatable life advice, and meals you can actually cook without having "chef skills". But I am just starting out and planning to use garlic powder until I get better at the cooking of plant-based meals before I use fresh garlic. I don't even really like chunks of garlic in my food all that much. I love the Make it Dairy Free channel, too as well as Pick Up Limes; however, the use of the herbs seems intimidating to me. Anyway, I plan to try this meal soon! LOL
I love you right back! Its all good to go at your own pace. fresh ingredients can be imitating and have a bit of a learning curve. But you're taking the same steps I did to get there by watching and being a student. Once you're ready to take the next step, its usually is much simpler than what we built up in our heads.🤗
Hi, Elaine! If you have a micro plane or small grater you can really get that garlic into an almost paste. There’s also a technique of pasting garlic with salt to get it fine (not chunky). Just an FYI when/if you try fresh garlic.

I found that Indian grocers often sell very reasonably priced spices common to a lot of ethnicities - cumin, red pepper, garlic powder, etc.

I just found your channel. I am very impressed. My cholesterol is a little too high, blood sugar a little too high, kidney function is borderline and need to lose weight. Though I haven’t committed to vegan, your recipes look just like what my doctor ordered.

After working since age 15. Working lots. Working hard. In my 50s I found myself staring at a convenience store shelf trying to decide between a roll of tp and a can of beans. I had been disabled by a drunk driver and lost my business. I had been eligible for food benefits for a long time but this finally broke through my sinful pride
I was wayyyyy eligible. Once I stopped missing meals my health improved markedly. Go figure.

Just found your channel, love it, so I'm a happy new subscriber! My cooking is almost all vegan and budget friendly. While I have no issue with canned beans for SUPER ready-in-a-minute meals, I really prefer cooking beans myself from bagged dry beans. I keep a robust display of mason jars of beautiful beans on my countertop, I find the beans themselves to be gorgeous, and consider them a useful part of my kitchen decor! No soaking at all, I just boil however many I need until done to my liking, and add them into whatever I'm cooking. It's no harder or more time consuming to cook dry beans than it is to cook rice. Plus, I prefer beans to have a tiny bit of "snap" when I bite into them - "al dente" if you will 😀- but if you like the texture from a can, you can cook them until you get that. You can control both the texture and the sodium content when you use dry beans. Again, I'm not criticizing canned beans AT ALL, there are a few cans in my pantry too ❤
I love how the fact that you described the rice you use for fried rice has to be cold and one day old (put it in the fridge) 😊. I am an Indonesian and fried rice (nasi goreng) is our DNA, so does to many other asian country, and I got frustrated a lot by so many westerns even world class chef try to cook asian food in this case fried rice the wrong way and make our ancestors cry😢. Cold rice is No. 1 rule of making fried rice!

I found myself wanting to quibble about certain choices, but honestly this is just a great video for someone who is just starting out on their cooking journey. Nearly every single one of these dishes I've made something similar starting out. There are definitely improvements as you move up in confidence and skill (a yeasted dough pizza, for example), but these staples will get you a well rounded, healthy, and delicious mix of meals.

You should wash the rice and soak it for about 30 minutes before cooking.
This friction between the dry grains of rice creates starch dust that coats the grains. If the grains aren't washed before cooking, this residual starch will gelatinize in the hot cooking water and make the cooked grains of rice stick to each other.
I just made the vegan fried rice (yes, I incorporated some substitutes). So good! This will be on a weekly rotation. Thanks.

I make pizza crust but use no oil but I do use yeast. Just splet flour water and yeast. Good to go in my bread maker. No salt either. I am SOS free. Saved money on not purchasing oil and i feel so much better. Love some of your recipes. Thank u for help us keep healthy.

I made the Tex Mex rice tonight. It was a hit. My husband is a vegan only at home. My son and I have only been vegan and I'm always looking for food my husband will love because my done and I are easy. This was a total hit! My husband asked for it in his lunch. Tomorrow's dinner is going to be pizza!
People assume a vegan diet is more expensive because they see the pre-made vegan stuff on shelves or organic boxed food which is usually double in price but if you cook yourself it's a fraction of the price. My animal eating family has grocery bills 3 times mine. I personally buy frozen because it lasts longer and I don't have any preparation time. I also think even frozen is cheaper. I can buy all my veggies for a month with 15-18 dollars.

I love this guy. Has a great sense of humor, relatable life advice, and meals you can actually cook without having "chef skills". But I am just starting out and planning to use garlic powder until I get better at the cooking of plant-based meals before I use fresh garlic. I don't even really like chunks of garlic in my food all that much. I love the Make it Dairy Free channel, too as well as Pick Up Limes; however, the use of the herbs seems intimidating to me. Anyway, I plan to try this meal soon! LOL
I love you right back! Its all good to go at your own pace. fresh ingredients can be imitating and have a bit of a learning curve. But you're taking the same steps I did to get there by watching and being a student. Once you're ready to take the next step, its usually is much simpler than what we built up in our heads.🤗
Hi, Elaine! If you have a micro plane or small grater you can really get that garlic into an almost paste. There’s also a technique of pasting garlic with salt to get it fine (not chunky). Just an FYI when/if you try fresh garlic.
