I also used a bit of cumin (just a pinch) to bring more boldness in to the picture. I highly suggest adding those two ingredients when you make this for yourself again

Cook the chickpeas with the kale, coconut milk and other ingredients, then add the zest and juice of one lemon along with a few sun dried tomatoes. Pour it all on top of the baked sweet potato. Yum!!

Speaking of garlic, do you ever buy a bunch of garlic and ferment it? I've had it keep in the fridge for over a year that way, remaining firm enough to slice or grate, and it does something truly magical to the flavor. Sort of opens it up. Not sure how else to describe it. I love it so much; I almost never use fresh garlic anymore. Also, I learned by accident that using pink salt in the brine causes a chemical reaction that turns the garlic a pretty shade of blue throughout. No difference in flavor at all, it's just kinda neat. Just wanted to share. 🙂
Thanks for the meal idea, I love coconut rice and with all my food intolerances, mainly wheat and various food additives and preservatives, rice is one thing I digest quite well, and no problem with spices and chickpeas.
I’m allergic to coconut. It’s such a huge craze right now that I feel like I miss a lot. I love that you talk through alternative ingredients! I can’t wait to try this. Substitute almonds and soy milk ❤🎉

I want to share this tip with everyone here. An amazing replacement for a flax egg 🤮 is using chia seeds and water. I use this in baking and huge difference! The chia seeds have to be ground up first. It also gives more nutrients 👍🏼💚🌱
that looks so good! when i was watching the steps, i kept saying, "i have that ingredient" "i have that" "i have that, too!" it's so exciting to see a new recipe that uses things i already have at home. thank you!
Inflammation! Something I'm always striving to not have in the body. I had told you I have problems with beans, it's the same thing with chickpeas, but I tried those tepary beans and I have found a winner. If you are intersted in giving them a try I ordered them from Ramona Farms. No intestinal gas or bloating with them. I love coconut rice, this reciped looks so good. Thanks Andrew!
This is one of my favorite quick and healthy recipes. I love it so much that I have different iterations. I tried it with chick peas. Then the second time I made this I used some dark meat chicken….as delicious both times I made this, the third time, I used Chinese chili sauce and to balance the heat, I used two four oz cups of pineapple chunk! WOW! The pineapple surely not only complimented the coconut flavor but I had guest for dinner that were literally liking the bowl. 😅
My partner has Crohn's, making this for sure soon! Also how do your stainless pans seem so nonstick? Every time I try to use mine everything sticks to it, let it preheat until water skips along it and everything....
I completely get that. It really does depend on the type of stainless steel you are using, since all stainless steel isnt the same. There is a few different grades. So this cuisinart is linked in the description under "pots/pans". I have a few, some from Calphalon and from Cuisinart and those ones i use often when looking to minimize the amount of oil. My method is to preheat without oil (about 2 -3 mins), add oil and preheat until the oil reaches the skillet temp (1-2mins), then cook from there. hope that helps!
refined grain are not but whole grains are anti-inflammatory such as whole grains include millet; basmati, brown or wild rice; quinoa; amaranth; flax; wheat berries; barley; steel cut oats and buckwheat. Brown rice is being used in here.

My aunt taught me the family curry recipe from North India and told me to add the garlic and ginger last when sautéing and the second the ginger sticks to the bottom of the pan to add your liquids as both burn very fast.
I had this recipe bookmarked for months. Finally made it, and it's a winner! You're right about not using fresh rice, it does make it more moist, and I used short grain but basmati might be the better texture. The next round I'm adding hot red peppers and peas for more veggies and color. Thank you for the great videos and healthy meal options!

I tried this recipe with some modifications, because recipes are just a blueprint. I left out the shredded coconut and sesame seeds. I added a little curry powder to the chickpea and about a quarter cup of chicken stock (what I had on hand) to the green and rice😋 This dish was absolutely delicious 😋 Thanks
I swapped out kale for spinach. I added roasted cashews as a topper. I added a little cumin too. Pine nuts could be a nice addition. Great recipe, the whole family liked it.
Tried this recipe for my mealprep this week....love the combination. But for my taste , it reaaaally needs some acidity to lighten it all up. With some lime, it was absolutely delicious. Thx for that

Thanks for this simple & delicious recipe. I couldn’t find sesame seeds so I used hemp seeds. I forgot to purchase fresh ginger so I used ginger powder. The end result was yummy yummy.

@@seanjean9677 and all this time we thought algebra was useless 😅😅😅.
great idea, I just bought some elephant garlic and will drop it in with my dill pickles and see what happens.
Thank you for that great info 🤍I will try this!!
Thanks for the meal idea, I love coconut rice and with all my food intolerances, mainly wheat and various food additives and preservatives, rice is one thing I digest quite well, and no problem with spices and chickpeas.
I respect it my brother. Great channel, great recipes, great mannerism! Keep up the solid work!!
I’m allergic to coconut. It’s such a huge craze right now that I feel like I miss a lot. I love that you talk through alternative ingredients! I can’t wait to try this. Substitute almonds and soy milk ❤🎉
Why does every vegan recipe turn into a vegan vs meat diet battle? I’m an avid meat eater but I’m making this tonight. It looks great. It’s just energy folks, do what works for you.
I used to be vegan. I now eat according to my blood type. #eatrightforyourbloodtype
I made this yesterday and it was EXCELLENT! We loved it and didn't miss the meat. Making it again today just to have in the fridge for a quick meal/snack
I just made this and well,
IT WAS DELICIOUS!!!!😋 ❤
I’m trying to cook healthier foods that include freshly grated turmeric, garlic, and ginger.
I had two bowls and I’m stuffed. I did not add the rice as I’m trying to avoid high carb foods. Again thank you for this recipe and easy to follow video.
Chickpea curries are amazing. So filling and delicious! Love your recipes :)
I so enjoy your recipes because your laid back, chill prep and cook makes me feel that I can do it! And thanks for the coconut milk sub - it helped me stay with you and not get lost going to google to look up subs, and end up looking at minimizing my home. You keep me focused. Thanks!!
I cooked this tonight for the family, adults loved it, kids didn't....their loss 😂
Kids are like dogs. They know what they should eat.
Don't feed that trash
As delicious as it looks i could see how maybe this may be a bit advanced for a child’s palate 😅
😂👍good for You !
Kids dont know what is good gor them
No doubt this recipe its one of my favs!!!😺
New sub here. Love your recipes! Easy to follow, delicious and look great. Most of my meals are vegetarian and I'm always looking for new stuff to cook. Great channel!
🙏🏾 thank you!!
This dish looks really delicious, this video is going into my "you need to try this" playlist for later use 🙂
Also, I really appreciated how you explained which other ingredients could be used. I'm not a fan of kale or coconut shreds and probably would've simply left them out, but almonds and spinach sounds like an amazing alternative
like the alternative
just made it with spinach (and didn't have the coconut flakes) and I have to say as a newly "forced" vegetarian..this was damn good, I did the Playlist for later too on this lol
I’m not a huge kale or coconut gut but keep an open mind. It was delicious!!!
I want to share this tip with everyone here. An amazing replacement for a flax egg 🤮 is using chia seeds and water. I use this in baking and huge difference! The chia seeds have to be ground up first. It also gives more nutrients 👍🏼💚🌱
that looks so good! when i was watching the steps, i kept saying, "i have that ingredient" "i have that" "i have that, too!" it's so exciting to see a new recipe that uses things i already have at home. thank you!
Playing it at 2X. Still feels like normal. 1:11
Hey, Adele! Thank you for following up and letting me know. I think i will be giving them a try. So happy you found something that will work!
New subscriber - this sounds delicious and amazing. Excited to give it a try!
Every time I try to use mine everything sticks to it, let it preheat until water skips along it and everything....
oil
I completely get that. It really does depend on the type of stainless steel you are using, since all stainless steel isnt the same. There is a few different grades. So this cuisinart is linked in the description under "pots/pans". I have a few, some from Calphalon and from Cuisinart and those ones i use often when looking to minimize the amount of oil. My method is to preheat without oil (about 2 -3 mins), add oil and preheat until the oil reaches the skillet temp (1-2mins), then cook from there. hope that helps!
Amazing, brother! ❤🙌🏽✨😁
Thank you 🙌🏾
Is rice anti-inflammatory?
refined grain are not but whole grains are anti-inflammatory such as whole grains include millet; basmati, brown or wild rice; quinoa; amaranth; flax; wheat berries; barley; steel cut oats and buckwheat. Brown rice is being used in here.
@@thenarddogcooks got it thanks!!
I so love your logic, you actually make me laugh without laughing at you. Your 1 pot recipe is so awesome n the various options is wonderful. Your sense of humor is truly a welcome. You so know what expression we may make at the time you give a unusual suggestion, lol, genius 😄
I love that you show the slowness of the process. Truly motivates me to enjoy cooking. I will be buying that garlic majigg!
People are still eating kale and rice and calling it healthy? lol
What’s wrong with kale and rice?
@@abdibakr1959 Kale is toxic, rice has no real nutrition and causes inflammation.
@@abdibakr1959 Nothing wrong, rice is a bit caloric so don't eat too much if you're trying to watch your weight and don't execise a lot but that's about it (it's a great energy source however if you DO exercise).
Just watched this yesterday and made it today before work for my lunch. Told myself I could wait until lunchtime, but just couldn't do it! This is so delicious and easy! Thank you
My aunt taught me the family curry recipe from North India and told me to add the garlic and ginger last when sautéing and the second the ginger sticks to the bottom of the pan to add your liquids as both burn very fast.
I love to watch how tidy and systematic you make the food..It is sooo sooothing for my OCD tendencies...
I am so grateful that i found your videos!!! I need anti inflammatory stuff and i am trying this next! I did the sweet mashed potatoe and Brokkoli yesterday! Didnt have all the ingredients at home but it was still really good and the roasted garlic?? Game changer. My tummy cant handle raw garlic and the roasted version was just fine! Thank you!!
Made this in a rush for a meal prep at my busy airbnb. This is legit! I'm sure I missed a step but it was delicious and fulfilling.
Thanks for this easy to follow recipe. I suffer from psoriatic arthritis and I'm aiming for a healthier diet. This is going to be great!
Thank you. I am vegan but have always had gi/gut/digestive problems and everything you cooked here looks delicious and not too hard to make. I am subscribed now to see more.
I made this with almonds instead of coconut shreds, and I added some harissa. I had an excellent meal. Thank you.
I actually made this dish this evening. I have to say it is the first recipe I have tried that actually delivered. Flavor, anti-inflammatory and feel great. Thank you. First time in many months I did not have the bubble guts after dinner.❤
Andrew, I had my laptop next to the stove and replicated this dish step by step. Such a delicious meal! So flavorful and satisfying. Will definitely be making this again in the near future. Thank you for sharing!
So glad I found this video! new autoimmune diagnosis and one recommendation from my Rheumatologist is anti-inflammatory diet. This recipe is perfect!
Omg! I tried this dish für my partner bc he has strong inflammations in his body.l was literally in heaven!!! These flavor’s ❤🥰🥰🥰🥰🙏🙏🙏🙏❤️❤️❤️ thank you!!
I grow my own veg, and garlic is one of my biggest crops. I use a full bulb every time. Thanks for this recipe
I tried this recipe with some modifications, because recipes are just a blueprint.
I left out the shredded coconut and sesame seeds.
I added a little curry powder to the chickpea and about a quarter cup of chicken stock (what I had on hand) to the green and rice😋
This dish was absolutely delicious 😋
Thanks
I swapped out kale for spinach. I added roasted cashews as a topper. I added a little cumin too. Pine nuts could be a nice addition. Great recipe, the whole family liked it.
Tried this recipe for my mealprep this week....love the combination. But for my taste , it reaaaally needs some acidity to lighten it all up. With some lime, it was absolutely delicious. Thx for that
I made the mistake of just watching the first 1.5 mins of the video several times over while guessing quantities of everything 1.5-2x… and somehow I still nailed this dish😅 Thanks for sharing
I didn't realize the sound of sliding glass bowls across a table was so satisfying...I thank you for this.🙃
I personally prefer the satisfying act of chopping everything vs the food processor. I enjoyed watching you do all of this!
Thanks for this simple & delicious recipe. I couldn’t find sesame seeds so I used hemp seeds. I forgot to purchase fresh ginger so I used ginger powder. The end result was yummy yummy.
Being a Sri Lankan, coconut is a HUGE part of our food culture- curries, condiments desserts EVERYTHING. And finding newer and better ways to make delicious food like this is just AMAZING. This got me so excited given how LAZY I am when coming.
As someone who is recently plant based but can't consume rice or bulgar I normally ignore videos with rice in them. I have had to really come to terms with being comfortable with Quiona as my main grain so I can slowly try things like this again. Tried to cook things without grains like nut roasts etc but gosh what a hold a rice texture has on my Nigerian self!
i asked my parents what they wanted for dinner, and they were talking about anti inflammatory food. so i found this video, and they absolutely loved it. only thing is i did add two small chicken breast, cut up, and seared in a sperate pan. the spice ratio was perfect, and it was awesome
Love it, i’m cooking this for my wife who is vegetarian, I’m sure she will love it
Your channel has quickly become my favorite cooking channel on UA-cam! All of these recipes have been delicious and easy to make - keep up the good work!
the herbs and spices blends together creating a delicious tasty and healthy meal thank you for this my family loves it.
It’s the details and the explanation for me. You give me confidence that I can replicate your meals. Thank you. Thank you. Thank you.
Sir,
I cooked this last night for my husband and I and he ❤ it. I used a different type of rice, but it came out great. Thank you for what you and have a great day.
This sounds like it would be great for me. I have a lot of injuries from a car crash. That left me with inflammation throughout my body. I think if I eat more like this every day I will feel better ❤
