I've always been in the "salad as a meal" camp and I've churned out some crave worthy salads in my day. For me, a salad not only have to have textures, but also a variety of colors. Some of my salads combine hot and cold elements. I also like salads that feature contrasting tastes like sweet and salty, or sweet and hot, or savory and salty. Long story short, the salad you just made is right up my alley. Can't wait to make it! Great job as always.
A mashed up regular baked potato is absolutely delicious in most salads, as long as a fatty, savory dressing is being used. I used to always mix baked potatoes in my salads before I became raw vegan. It's very quick and makes a salad seem more like a complete meal. If you are ever looking for a quick, delicious, vegan dinner, pick up 2 bags of Champs Elysees bagged lettuce from Trader Joe's and one bottle of their Goddess salad dressing (Not their green goddess dressing, the regular one). Then microwave yourself a baked potato or two, mash it up with a fork and mix it in with a generous amount of the salad dressing and salad. It's delicious, you definitely won't be disappointed. It's very filling also. Enjoy. :) If you want to try this and aren't near a Trader Joe's, the Annie's Goddess dressing is similar from what I remember and would probably work also. Check the label to make sure that it's vegan though, I may have tried that years ago before I became vegan. :)

When i moved to the Midwest, well that changed a lot. Whipped topping and marshmallows as far as the eye can see. Nowadays I'm more like you, throw what i like into a bowl and toss. I made a warm potato salad last week with a dressing that's just mustard, oil, apple cider vinegar, chopped kimchi, and applesauce. Amazeballs
The panko nut combo is a great idea for a topping. I also prefer the gluten free panko. Fries are great on a salad. One we like is a "big mac" salad with a veg burger and fries and a thousand island dressing. So good. This salad looks great. I'm going to put it on my menu once the weather stays warm.
Made this last night. Incredible flavor profile, great texture. I do not like sweet potatoes. I try them every year. Last night, I loved the sweet potatoes and the way that your spice selection supported the flavor of them while also contrasting them. Thanks so much.

I actually like to have my potatoes cut slightly unevenly because I like the variation in texture after they’ve cooked - some more soft and chewy and others more crispy or even charred a little bit. I’m also not typically much of a salad guy but this looks really good, I’ll have to try that dressing sometime
For some strange reason, i thought i was the only person that made salads like this, cuz i figured if i have to eat a salad everyday, i need to enjoy it! To make kale more palatable I always massage it with a little olive oil, lemon juice and salt, and leave it to rest for at least half hour before draining, it becomes super soft and tasty and just all round easier to eat 💕
I eat salad meals All the time even more during summer as we have a garden ,and there's nothing like heading out to the garden and gathering all the ingredients!!!! 😊

I could never eat all that raw kale without massaging it first with some salt and oil though. It mde my mouth dry just looking at it lol.

Can only imagine the aromas from the chicken peas and sweet potatoes!! The cucumber adding a coolness and crunch!!...yum! To me French fries always have had a "naughtiness" to them due to historically having been deep fried in bad oils...we really go off the rails with fast food fries!!...we try to eat healthy foods but then poison ourselves with fast food French fries when we want to be really "bad"...but these fries combined with Kale and Garbonzo beans would let me redeem myself!!! P.S... have not had fast food in quite some time!!
I think that salads have a similar vibe to pizza, in that they have a basic foundation and then you can do absolutely anything with them. It can be super simple, but also the most complicated, but always customizable.

My mom has an issue with her stomach that makes it difficult for her body to break down vegetables in raw form. It can be painful. Hers is called Gastroparesis.

I often use just lemon juice,,Or tys conscience kitchen has a Great Mango dressing. I stay away from the store dressing
