Kutsinta

Kutsinta or Kutchinta is a popular, soft and chewy Filipino snack and in this recipe we made the traditional one and the Buko Pandan flavor with 2 topping options. This recipe yields 22 pieces using the large Kutsinta molds.
INGREDIENTS
Kutsinta:
8 pieces Pandan leaves, washed
4 cups (960 ml) water
(you only need to use 3 cups Pandan water)
1½ tablespoons annatto seeds
2 tablespoons hot water
1 cup (200 grams) brown sugar
1 cup (125 grams) all-purpose flour
1 cup (125 grams) cassava starch
2 teaspoons Lye water
1 teaspoon Buko Pandan Flavor
Toppings:
2 cups (150 grams) freshly grated coconut, divided
½ cup (100 grams) brown sugar
