    I just canned up 10 quarts Saturday. My friend gave me an organic sweet potato that sprouted in her pantry. I planted it in a 100 gallon fabric tub and go 17 lbs of potatoes.

    We had a fairly small crop of the deep purple Ube sweet potatoes this year. They are really good to eat.

    You really should let the canner vent for 10 minutes. Venting removes all the air in there.

    Hi Happy thanksgiving to you and your family. Looks like you have a glass top electric stove, are you worried about the glass cracking from the weight of the presser canners?

    Are you using a glass top stove? I have a glass top stove but I am nervous about canning on it because it may break.☹

    Do you leave the heat at the same temperature once the weight begins jigging? And how long does it take to depressurize?

      I usually leave it on medium the whole time. It verys, but it takes a good little bit

    I can white potatoes just like my mom used to we put a tip of salt per jar to help preserve the potatoes i noticed you didn't

    Don’t mash them! It’s not safe to can mashed potatoes according to the USDA rules. I love canned potatoes! They’re super easy to mash when you need them but more versatile chunked.

      I was going to say this too! Only safe way to can sweet potatoes, potatoes, and pumpkin and butternut squash is in chunks. :)

    Andrea why are you pressure cooking those so long under 10 lb of pressure won't they be mush when you take them out of the jars just trying to find out because I pressure canned my potatoes and my root crops under 10 lb of pressure for 10 minutes and they're fine Mississippi girl just trying to find out something

      You arent canning your white potatoes for even close to what the ball book says. I have just finished canning 200 pounds of our white potatoes. I canned them in quarts and it is for 40 minutes at 10 pound at sea level. I live on the oregon coast. And sweet potatoes are done at 90 min like meat at 10 pounds pressure. I have been canning for 42 years now and never have read anywhere for that short of processing time for potatoes. Better get a canning book. I still refer to mine to refresh my memory on the processing times. As I can so many different things. I cant remember them all off the top of my head. I have been canning since july. Still have more to do. Please be safe with your canning times. Its extremely important.

    I have canned sweet potatoes before. Not a fan. Never will can the mushy yucky things again. I love canned white potatoes. But sweet potatoes take alot longer processing. And they mush out. That's one thing I will never waste my time doing again. I just finished canning about 200 pounds of white potatoes that we grew this year. But I still need to can more quarts to get us through the year. We love them. So fast to fry. Especially for breakfast. I just rinse them and use paper towels to squeeze the water out of them before cutting them and frying them up. They brown faster and better that way. 🥔🥔🥔

    I do not believe I will ever can sweet potatoes ever again. Did TWO batches, TWO different days, TWO different batch of potatoes also, and they are disgusting. Mushy, worse than mashed potatoes, tastes as if spoiled potatoes. Followed directions faithfully. Sweet potatoes were organic (expensive), water, and a little bit of salt. Nothing else. Jars sealed perfectly, both times. Cooked them on the stove and they were delicious. So, it wasn't the sweet potatoes. I shook a jar and the potatoes disintegrated. Maybe that's what is supposed to happen, but it is disgusting (for me).
    I see all these videos with these beautiful canned sweet potatoes that look so delicious. Tossed both experiments in the garbage. So disappointed.
