How To Can Sweet Potatoes In Cinnamon Brown Sugar Syrup ~ Pressure Canning

  • Sweet potatoes are a pantry staple and very easy to can up. Great for beginners. Let's give them a Fall twist with brown sugar and cinnamon syrup ;)
    For 6 quarts:
    10 lbs. medium sweet potatoes
    Water or syrup
    Light syrup
    8 c. water
    3 3/4 c. sugar (I used brown sugar, lightly packed)
    cinnamon stick, optional
    Fill hot jars with sweet potato chunks (do not mash or puree) leaving 1" headspace. Add water or syrup maintaining 1" headspace. Debubble, wipe rims, center lid and add rings to fingertip tight.
    Pressure can pints for 65 minutes and quarts for 90 minutes, adjusting for altitude as follows:
    Weighted gauge Dial gauge
    0-1,000 ft 10 11
    1,001-2,000 ft 15 11
    2,001-4,000 ft 15 12
    4,001-6,000 ft 15 13
    6,001-8,000 ft 15 14
    8,001-10,000 ft 15 15
    This recipe CANNOT be safely water bath or steam canned.
    Allow jars to cool undisturbed 12-24 hours, remove rings, check seals, wash jars and store in a cool dark place.

    I love canning sweet potatoes. I always do some this way with
    the cinnamon to use for my sweet potato pies. I always see people using a ladle for the pouring the water into the jars, I just make a huge mess with it. I find it much easier to use my glass measuring cup to dip and pour into the funnel lol. Thanks for the video.

    Thank for the siphoning education. I water canned/pickled okra and that's what happened this year. Just about an inch from the top but had good seal.

    You are so thoughtful to help everyone look up their elevation to provide information for safe canning. I haven’t canned sweet potatoes before however they are in the All American canner now. I picked up a case of odd sized sweet potatoes from a local farmer store. The house smells wonderful! I am looking forward to sweet potato soufflé and sweet potato pies! Thanks for your instructions and your information on the weighted gauge. Those are the kinds of things that I needed to know when I first started canning. It isn’t stresed enough for newbies most of the time.

      I had to give an update as i love sweet potatoes. I finally opened a jar of these and although i am a lover of all things sweet, the light syrup i used was too sweet for my husband and i. I will decrease sugar next time by at least half for our taste. I will definitely make these again.

    New to your channel. I've been canning since I was a teenager. Always learning about canning new foods to have in my pantry for my family. My husband found sweet potatoes at Kroger on Thanksgiving for .19 per pound! I'm not a fan of sweet potatoes but I have been finding different ways to eat them.       ​@@carol-thriftychichousewife6231Miss Carol, I grew sweet potatoes at home and they are longer tube like shapes that swirl and twist. They are approximately as big around S English cucumbers. Are they safe to can? How would I chunk them, in thick slices, maybe an inch and a half thick work? I absolutely love the effort and love you put into your channel.     Did a half batch of your sweet potato recipe. Silly me picked up 5 pounds of sweet potatoes and did not think about the fact they did not have an orange looking skin. Began to cut them up and realized the insides were white. The label clearly stated sweet potatoes. I looked online and they do have a white sweet potato. I canned up them anyways. But I barely got 5 pints. That is probably a good thing as they may not taste like a sweet potato we are all used to. lol

    I use an ice bath to cool them down before peeling. Once they are no longer hot to the touch i throw off the water. The skin usually starts separating and easy to take oof.

    I did frozen sweet potatoes and put my syrup then an hour later they had been waiting for the canner to empty. But I looked and the syrup was gone. Would it soak in the sweet potatoes ??

    In referencing the siphoning, could the sugar that leaks out make a false seal because it’s sticky?

      No it won’t. Let your jars sit 12-24 hours then check to make sure your lids don’t flex up and down 😊

    Carol on the all American pressure canner when your time is up and you’re dial drops down to zero and you start to take off your weight and you hear pressure coming out. Do you just leave the weight on for a little more time for all the pressure to get out, or go ahead and take it off?

      reta strong that’s a great question and I’ll try to remember to talk about this in my next video. If I still hear pressure coming out when I start to remove the weight I immediately put it back on wait a few minutes and try again. Taking it off will cause siphoning. Very little to no steam should be released when you remove your weight 😊

    Love your channel! Thank you for teaching us all such valuable skills! I have a question...I canned my sweet potatoes in the brown sugar syrup..they looked so beautiful! Now that they've set on the shelf for about a month, the syrup is super thick!! Do you think they're still ok? The pressure was correct, and the time too. It sure is thick though...maybe starchy potatoes? I didn't let them cure for the full two weeks...🤔

      Honestly it’s hard to guess. You can always store extra syrup in the fridge for another batch if you have any leftover

    Question please. I followed your video exactly. This morning I heated up a jar to test the flavor before I did any more batches. They yams are way too watery. This is my first time canning yams. So how do I reheat these jars of yams that they are edible? How do you use them after you can them? Can I pressure can yams w/o additional water?

      I’m sorry you’ve had problems. These are intended to be used the same as a can of sweet potatoes from the grocery store. I pour the contents of the jar into a casserole dish or sauce pan, add a few pats of butter, heat through in the oven or stove top. I canned my potatoes in syrup. I don’t know why yours would be watery. I’ve never had that issue.

    So what will you do with that delicious syrup when you eat those yummy potatoes? Just pour it over the potatoes? I think my mother used to slice them length wise and bake them in sweet syrup till they got soft and sticky.

    Would it be OK if I just did half a batch? If the potatoes get mushy I don't want to have 6 quarts because I am afraid no one would eat them. I think I will do them in pints.

      Troyetta Fontenette I googled it. Your elevation/altitude is 20ft. Which means your less than 1000ft. You will pressure can at 10PSI. Follow my instructions with no adjustments 😊

    I'm curious how you use these when you open them up? Do you drain that juice off or just mash it all together?

      Jennifer Porter we add butter to them and bake until heated through then top with marshmallows and bake until the marshmallows are browned. If you want to mash them, heat, drain then add butter and some of the syrup and mash 😊

      I top mine with chopped walnuts, coconut, brown sugar and melted butter. My family is not a huge fan of marshmallows with sweet potatoes

    I have the exact canner with the weight and the gauge. My weight gauge(10 lbs) starts rocking and I check the pressure gauge which shows 10 lbs also but doesn't go above. I have heard the pressure gauge should be at 11 lbs though. What does your pressure gauge show when your 10 lb weight is rocking?

      janathefirst on the AA canner the gauge is just for reference. Our canner functions as a weighted gauge meaning you go by the rocking of the weight. My gauge rocks at 10 psi and stays there just like yours. For those who have a dial gauge only it should read 11. Yours is working properly 😊

    I'm in Australia, we don't usually "candy" sweet potatoes. I've given it a try but now I don't know how to use them. Do I just steam them, fry or bake them please

      Hi! Canned sweet potatoes are very soft so they only need to be gently reheated. To make true candied sweet potatoes, empty jar into a casserole dish, add a few pats of butter, cover and heat in the oven for about 20 minutes, remove cover and add marshmallows, return to oven until marshmallows puff and brown slightly 😋😋. Or you can pour the contents of the jar in a saucepan and just warm them through. They are delicious mashed with a bit of butter and cream (drain liquid before mashing). You can also use them to make sweet potato casserole. If you find you don’t care for them candied, next time just can them in water 😊

    My second batch got cloudy overnight. Is that a problem? Everything went as planned and the lids are sealed down properly. Didn't even have any noticeable siphoning like with my first batch.

    I got my American Pressure Canner a month ago and am terrified to use it .

    My canner came with a 15 pound weight, is that ok to use when I only need a 10 pound.

      frazeeken no, you must can at 10 psi. Are you sure it’s not an adjustable weight? If not you’ll have to purchase a 10 lb weight

    I bet those are delicious, great canning instructions. I just got a heads up that Ball, Bernardin, Kerr and Harvest Guard parent company Newell that they will not be shipping anything until March 2021, due to demand and trying to build up supplies, 6 months, that means no lids, jars, nothing. What ever is out there is it. So people need to be cautious about where they order from, price gouging and false websites. Carol have you ever tried Tattler lids, I might try that next year when hopefully things calm down, I have about 75 small and hardly any large mouth lids so I am going to have to be careful about what I can.

      Henry Cooks the shortage is disappointing for sure. I have ordered some Harvest Guard lids, similar to Tattler. I will be doing a video on using them. Just be aware, technically they are not approved by the USDA yet. 🤷‍♀️

    Keep your sweet potatoes in cold water that will keep them from getting oxidized as you feel them

    Carol would it be okay if I added a little orange juice or orange zest to the syrup??? It would change the ph and I'm not sure if that would compromise safety...newbie here!!!! xoxo Gabrielle

      We’re pressure canning here so the ph is not important. Orange juice is safe for canning and would be delish 😊

    Here I am again Carol. So, I am short a canner load. I am cold packing a partial load at 75 min My question is, can I use your sweet potato recipe, allow the cans of potatoes to cool down and add them with my other cold pack cans and I am using pints (65min) but don't care about the xtra 10 min.

    Just a FYI there are lots of fake counterfeit jar lids now on Amazon that are coming from China and are super flimsy. Also, Ball has started outsourcing production so who knows what they'll be like or if they will actually be coming from China. Just bought a whole bunch of Tattler lids. I have forty pound of yams waiting for me to can them.

    Soak peeled potatoes in water with Citric acid to stop the browning process after peeling. No need to cook them first.

      KnotsinYarn yes you don’t want to take them too far. Honestly, I think boiling for five minutes is enough. Just heat them and make them easy to peel

      You can also steam the sweet potatoes for 15 min they’re still easy to peel and not softened too much making them still firm to cut up it’s what I do and works like a charm

    I have scoured the internet and youtube looking for canning sweet potatoes for diabetics. Every single person on the planet must put sugar in their sweet potatoes when canning because I cannot find anything about canning them without sugar. Maybe you will know the answer: Can you can can sweet potatoes using only water and not syrup? I found one thing online and it said "NO!".
