    This is the exact problem I just discovered in the honey from one hive. You have shown me that I had too much nectar and some pollen. I know now I should have waited. I just got excited.

    The biggest reason honey crystalizes is the temperature of the storage area. Store honey at 75f and it will not chrystalize for a long time. Store it at 50-60f and it will chrystalize quick.

      Last year my honey crystallized within 2 weeks after harvest, being stored at 70deg.

    Wow interesting!! My late neighbor was a bee keeper and he produced such beautiful honey,Norm was old school he never wore a bee suite.

    It has a lot to do with the temperature..I just set it in the sun on my porch and it turns right back into beautiful honey..love the video it was great. God bless.

    Also there are many different varieties of honey depending on the plants the nectar is harvested from and some honey more prone to crystallisation than other honey.

    I store my honey in an old freezer that doesn’t work. I installed a temp controlled heater and keep it at 80 degrees and never had an issue with crystallization

    What is the difference between strain and filter the honey??

      Technically, none... they are synonyms. But in common usage, at least within beekeeping, "straining" refers to somewhat coarse filtering... enough to filter out wax, bee body parts, and other contaminants. "Filtering" is much more fine... enough to even filter out microscopic pollen particles. Large-scale producers do that to provide absolutely crystal clear honey for "shelf-appeal". Unethical producers do that to hide the origins of their foreign or adulterated honey because if they leave any pollen grains in the honey it can be tested and might reveal that it is cheap honey from China or other places that allow adulteration with rice-sugar or other sugars.
