I canned a box of sweet potatoes
I’m canning about 25 pounds of butternut squash this weekend, and I can them exactly like this, and sweet potatoes. I use a very light syrup of 10-1 water and brown sugar. We had a horrible crop of sweet potatoes this year, so I had to buy some, and 50 pounds of gold potatoes. But my butternut, and other squash like acorn, did excellent. I can’t wait for butternut soup this winter. I know you did this a year ago, but knowledge is timeless. Thank you, Leisa. (My next endeavor will be canning seasoned green beans and potatoes together, small batch. It’s not “approved” but the end product is great.)
I love sweet potatoes and I have a bunch in storage. I need to stop watching UA-cam and get busy canning those potatoes! They really are wonderful to have on the shelf. Thanks for reminding me I need to get busy!😊
I dehydrated, after steam blanching, some sweet potatoes for the first time recently. To cook them I just dropped the slices into boiling water. They turned out just like if I'd cooked them from raw potatoes. Yummy, so easy and saved space. I will try finishing them in the brown sugar glaze next time.
I'm going to have to try this for hubby. He loves sweet potatoes. I'm not a big fan, so I'll do it for him.

I've been waiting for a good deal on sweet potatoes so I can do this! I love sweet potatoes and broccoli drizzled with sriracha. And yes, you're right...sweet potatoes end up soft regardless of how they're cooked. Having them on the shelf ready to eat really is a great prep. I used my Forjar lids for the first time this week. I bought the 1000 pack. I don't play around. 🤣🤣They're awesome!

TY for showing how to prepare canned sweet potatoes. They hold so much liquid I couldn't figure out what to do w/them. Another YT showed how she hung up the sweet potatoes in cheesecloth and let it drain all the excess water off. Then she prepared them as usual in the oven. That helped too. There are so many of us who are new to canning that it helps to see how to actually use your canned pantry at mealtime.
Looks amazing . I also like to mash them up with butter and a well betten egg, some cinnamon , ginger , and brown sugar . Fry them like a potato cake .. gently turn them to brown both side . Serve sliced ham and some green beans.. heaven

Really wonderful! Thank you. I had to can up all my onions today too. My entire crop started going soft, so I got to work and ended up with 26 jars of onions. They turned out so nice, that I may just can next years crop as well!!!

We dug up sixty pounds of sweet potatoes from our 2022 garden. They still look pretty good in the basement, but some are really big, and some really small. I'm working them up today to can and put on the shelf, and keeping out all the baking sized ones for me (hubby doesn't like sweet potatoes 🙄🤔. I'm wishing I had canned up my white potatoes because they were pretty small, and now they are all ready to plant!

I just cut up and blanched 3 gallon bags of sweet potatoes to freeze for roasting later. I have 11 pounds peeled and cut up to process in pints tomorrow. I love sweet potatoes! I am also going to take some of the canned ones that I have left from last year and dehydrate them for powder. I make all kinds of stuff with them, including pancakes.

They never used to get ugly. We canned for three generations and rings stayed the same and lids rarely failed.

My recipe (NCHFP) said to blanch then peel. I assumed that was to only assist in removing the peel, also blanching them in pieces for 15 minutes would make them softer than blanching a whole potato for the same time. I personally didn't find them hard to peel raw....but that just me.
I’m drooling at the end… now I wish I didn’t have 3 cases (120lb) of chicken coming to can, just so I can sweet potatoes instead…. Lol no I’m happy I found chicken breasts for $1.20 a lb!!!

Hey Leisa, did any of your jars turn cloudy? I scored $.25/lb at Meijer & did 7 quarts, but 2 of them were clouded on day 2. I figure it's starch, but why only 2? Strange.

I canned yams on Monday. I boiled mine to remove the skins but got side tracked and had very soft yams to start with. They partially disintegrated in the bottles. Trying to think of ideas on what I could use the liquid with the sediment so it doesn't go to waste. Anybody with any ideas?

So, this might be a dumb question but I’m wondering if I slice my sweet potatoes lengthwise and stand them up in the jars would be okay. I’m sort of afraid they might stick together and not enough space between slices for proper temperature. Thoughts?

About the rings mine have black spots on them not sure what is making them do that. Was wondering if it’s the city water I put in the canner? Should I buy filtered water for that too? Never canned with city water till I moved to Florida. My well water here has sulfur so I haul drinking water from the water machines in town. I buy water in gallon jugs to can with. But I put the water from the water machine in town in my canner. And my rings have been getting dark spots

These look like the orange.flesh yams...do you follow the same process with the white.sweet potaotes? The white sweet potatoes are not so sweet and I l prefer those over.thw orange yams

You steam or boil them whole, cool a little bit and the skins slip right off. I pulled up the directions it never says to blanch

@@SuttonsDazeI think they are much smaller and go to mash in 15 mins. I ended up going raw and hot water according to ball book and then 90 mins in the canner. (Miss Lippy) They look very soft - I will open one soon and check them out 😊 I think I might just blanch 2 mins and 40 mins like potatoes next time??!!!

Not sure why anyone would not want a soft,sweet potato? No one eats hard crunchy sweet potatoes.
I made these after watching, they looked great until I washed the jars, lol. I think I shook the jars too much. Some fell apart and became mushy in the jar. They don't look that appetizing but I'm still going to eat them, lesson learned.
Planning to get some canned and dehydrated, they are 39 cents a pound here.
