    You will enjoy your sweet potatoes. I make sweet potato pies not pumpkin pies for holidays. My mom grew up in a large family and on a farm and in winter her poppa would fireplace cook sweet potatoes all day long so when they got home from school they could eat them as a sweet treat before chores, homework, dinner and baths.

    Here's a tip - wash your sweet potatoes and place in large pot of boiling water. Cook for 5 minutes or so then remove and cool to the touch. the peeling will slip right off or easily peel off with a knife. Much easier and quicker! Then cut and place in jars and process.

    Know it's a little late but if you will boil your sweet potatoes with the skin on for few minutes (10 to 15) then simply let cool without ice bath, the skin will slide off with a little rubbing pressure then all you have to do is cut off any blemishes. Maybe will help next year. Learned this at restaurant getting ready for Thanksgiving!

    My wife interchanges sweet potatoes for pumpkin things and also mixed half and half. Great in muffins, breads, cookies, cinnamon rolls.

    I was just feeling waves of admiration when Todd came in to help. So sweet. But then…. He wiped his knife on his dirty pant leg and started cutting the potatoes with it. 😂 just like my husband. Gotta watch ‘‘em every second. Lol.

    We made a batch of Sweet Potato Hummus from a quart of canned Sweet Potatoes. It came out just like Chickpea Hummus. We just swapped out the sweet potatoes for the Chickpeas. We will be canning alot more sweet potatoes! We grow Japanese Red, Carolina Ruby, Diane, Garnet, Hanna, and Kotobuki sweet potatoes. We used the canned Hanna sweet potato. No one knew it was sweet potatoes in the Hummus! To cure sweet potatoes, we place them in plastic grocery bags with holes poked in them or clear plastic totes with holes for ventilation, then set in a sunny room for 2 weeks. Then store in a cool dark area.

    So nice to meet you. I just came across your channel. I am a pressure canner addict. I just can't stop. Nothing like going into your pantry and seeing nothing but goodness. Our canned food in the store is terrible. Full of ingredients half of us don't even know what it is. I do a lot of one jar meals. Beans and veggies. I just picked up about 30 pounds of yams ( sweet potatoes ) because they had a crazy sale on them at the market. One nice thing about this pressure canner is looking for deals on veggies or meats as groceries are just getting out of hand. I find it very satisfying opening up your lid and taking the jars out boiling like mad then hearing the pop!

    I love to see you wash the cast iron - I even use soap on mine, rinse them and after drying them really well I coat the inside with a very, very thin coat of olive oil. The pans never fail me - everything comes right out and the cooking is always very even. And Todd, you are a kindred spirit - after we sharpen our knives here, I must confess, we also wipe the knives on the leg of our pants. Thank goodness there are other people like us out there.

    I have nipped the end of a finger a couple of times using my mandolin. I purchased "anti cut" gloves on Amazon. I got 5 of them in a package and they really do help. If you do happen to get a nip, it isn't as bad and most of the time you get nothing. Give them a try!

      I bought an electric mandolin after cutting myself really bad. And there is no way to get your hand near the sharp blades. It works really good. But the glove would be good when chopping alot of different types of food by hand.

      She would die if she saw the commercial that interrupted the video RIGHT IN THE MIDDLE of that cut finger segment. At first, I thought the ad was a joke, but then realized it was just poor timing. It started out with this guy taking his wife to the emergency room, then she had an organ removed! That's when I realized it was not a joke or part of the video. OMG.

    I am watching a bunch of your canning videos and appreciate that you made those and published them. I hope you are well and excited for spring and summer after the time away from the garden.
    I have learned that I take too much on…too many projects, too many plants, too many flowers. And then feel guilty when I cant get to all of it.
    This year I want to relax if I cant get to everything and embrace composting things if it doesnt work out.

    I cut my thumb using a mandoline. It was two months age and it's still sensitive! My daughter and I are just starting to can with a presto canner. We're going to do chicken tonight!

      I bought on line the gloves that do not cut through and have not cut myself on the mandolin also will use them with my rotary cutter. Not to expensive for 2 pairs.

    Our first batch of coleslaw/pickled green cabbage, is cooling on the bench next to apple slices and lemony pickled cauliflower. And 2 big jars of apple scrap vinegar is going to slowly ferment over the next few weeks from the "waste". Perfect.xxoo hope your finger gets better soon, mine was on the food processor blade after doing the cabbage. Totally worth it.

    I love bamboo "paper" towels! Washing and using and using and using.......I also had scraps of flannel and terry cloth, so I sewed them back to back and they are homemade paper size towels. Infinitely washable until they wear out - it does take some time for them to wear out.

    I have butternut squash in the canner now. Haven’t dug my sweet potatoes yet. Yours canned beautifully. Ouch on that finger. I’ve done the same thing and blasted, it hurts. Now you can enjoy that pumpkin bread...tee hee. God bless. 👏🏻💕👏🏻

    My friend who was a nurse. Showed me what to do with a bad cut. I did one on a mandoline when I had my bakery. She put a bandaid on it really tight around my thumb. And told me to leave it like that for 30 minutes. Then remove, it should not be bleeding anymore. And mine was bad. Then she put on a new bandaid a little looser. Because your digit will feel numb. Because of the tightness of the first bandaid. But that makes it stop bleeding. And it worked. I just wore a rubber glove on that hand over the bandaid. Remember, working with food!

    Love this, I love sweet potatoes in the south were im from we bake them and bitter and blackstrap molasses on them so good, and then sweet potatoe pie yummy so canning them would be awesome.. thanks for sharing love your videos

    Rachel, I’m So sorry you cut yourself!! Ouch!! I hate cutting myself.
    Those potatoes look incredible. I’m sure you will be so glad this winter that you canned them. It’s a lot of very hard work, but well worth it. Todd can really cut those vegetables up fast. Man hands and strength, I believe. Glad he was able to help you!!

    Oh No!!! Is your finger okay? I’ve done that before and it literally took the tip off my finger and I immediately ran it in cold water and it began to burn soooo bad but I did mine with a mandolin because I wasn’t using the guard...note to self and anyone else reading...those finger guards are there for a reason!!! Use the finger guard when slicing with a mandolin!! I sure hope your finger heals well and is okay. I also noticed you mentioned making a stir fry for dinner and using leftover cabbage, just curious if you’ve heard of “crackslaw” it’s nothing like coleslaw, it’s a hot meal and you can make pretty much any meat with it and any kind of sauce you like, I typically make a Chinese teriyaki type flavour with Tamari sauce or coconut aminos instead of soya sauce and I add fresh minced garlic and water and some surkin gold which is a sugar free brown sugar substitute. Anyway do a search on google for crackslaw and you’ll get a ton of various recipes. You’ve probably already heard of it but I hadn’t and I couldn’t believe how incredible it tasted and easy and fast it was to make with ground beef or leftover chicken.

    Not sure why or how it works but I just put my sweet potatoes in a basket under my basement stairs and they last for 2 years, they even dry out as if they are dehydrated but turn out moist and juicy after baking them

    Pro-tip for curing sweet potatoes in colder climates. Place them in big plastic storage totes with a good lid and stick a heating pad or heat mat under them on low. I sprinkle about a 1/4 cup of water in there as well.

    I made raw packed sweet potatoes a few weeks ago. Now all I can think about is sweet potato pie. Sorry about your finger, I know that hurt. I always have carb cravings summer or winter, lol. They do look amazing in the jars.

    I was given a box of white sweet potatoes this week. I think this weekend I want to try to can them!! I will do those, and maybe some white potatoes. I was given 2 5lb bags of them, and need to use 1 bag so... I have a brand new canner (the 1st one that's my own and not borrowed) and I have so much stuff I want to do but no idea where to start! LOL I think it maybe be potatoes!

    You are a real blessing to me, I love your true to life things that happen. I am waiting to get my first presto 16 quart pressure canner with the gauge. At 69 years old, I will make an outdoor space for my canning. We rent a place and it has a wonky flat top stove, which I hate, but it will work outside. What kind of outdoor stove do you use? Pat from the Oregon coast.

      Here's the outdoor cooker we use. amzn.to/3mYPGrP Be careful with the heat though, on a Presto. The metal walls are a lot thinner than our All American, so with any propane based cooker, you run the risk of damage if you run the heat too high. If you keep it Medium or below, you'll probably be fine. Just don't crank it up full blast.

    Ouch! I did the same thing with my mandolin several years ago while processing squash! It's a horrible pain that just takes your breath away!

    Ahh the only reason Todd chops faster is because he uses a bigger knife. Try that. You will be far stronger cutting through the spud with a heavy knife. Just keep those fingers tucked in. Excellent canning tips!

    The extra jar of potatoes would make a great Sweet Potato Pie, just mash the potatoes and make it just like you would a Pumpkin Pie, DELICIOUS 😋
    I love roasted root vegetables. Just pick out a variety of root vegetables of your choice, throw in the sweet potatoes and I always add onions. For me this is a Meatless Meal, I LOVE IT🥰😋😋🥰

    I imagine you could make some amazing chicken ala king with Your home raised chicken and veggies and homemade bread With a Side of sweet potatoes. Super carby and delicious. Love your channel. 🥰
