I’m having an awful time getting my pressure canner lid to lock closed. The lid will seat, but the arrow wont rotate enough and the handles won’t line up. It may feel locked,but I don’t trust it. Got any ideas? I was hoping to can my sweet potatoes today. Thank God I didn’t peel and boil them yet. Phew, that was close.
That is, by far, the BEST explanation of "finger tight" I have seen/heard in the 3 years I've been learning to can! lol Absolutely no reason why you shouldn't can for yourself, especially when you are doing the work! EVERYONE deserves "comfort food" and that includes you. Love listening to you, your voice is exceptionally calming and you explain things very well. Thank you for all that do to help us learn and understand the process.
I love the single serving idea. I have walked my two mothers home and as they got older they needed small servings. Canning for your single or older loved ones is a great service for them. Thank you I love sweet potatoes too.

After watching Canuary I decided I need to buy a pressure canner. I have been buying one or two sweet potatoes a month and preparing them for our precious dog and me. I think canning these is a great idea, I never gave it a thought before. Dah! I have been so inspired watching the things I would love to can but need a pressure canner. AND to think that 10 years ago I gave away the majority of my canning jars, another dah! Thank you.

My late Mom & LOVE sweet potatoes and I just got about 25 lbs and will be canning them very soon. I had a pipe burst and will be getting it fixed this weekend and then “Katy bar the door”. I hope to win a brand new canner as I was just gifted a used one. But I’m blessed! ❤️🙏🏻

I'm so glad I recently found your channel. Every time I watch you I think Thank God FINALLY an ethical and responsible canner. It always makes me upset when I see the rogue canners or ones who don't bother stating to follow safety rules. Little do they know, but likely don't care how far reaching and possibly disastrous their lessons reach and how many it can affect. To me if only one person watches its the responsibility of the videographer to stress safety. I'd feel awful if a single person got ill because I was irresponsible in my presentation. THANK YOU
As someone that is new to canning, I really appreciate you wanting to teach “proper” tested methods. I agree that when learning the skill, new people should learn tested ways first! Before watching UA-cam videos, I’d never known about de-bubbling, because my mother never did it. I was able to teach her something!

I love canning in half pints and pints. I was raised cooking for a family of 7, cooked for my own family of 5 and still can't "cook small"...canning like this has saved so much time and money. Thanks for sharing this.
My husband only likes sweet potatoes in sweet potato casserole. I hate making it if I don't have enough time because it's a long process just doing the sweet potato part before you add all the ingredients and recook it in the oven. I think if I do these in quarts that will be so much easier for me. It's going to save a lot of time and my husband will get his favorite dish more often! Thank you so much for posting this video.
I love the idea of canning for a single person, I now look at a pint of food in a whole different way. Love it.... I also wanted to say that I really appreciate the great example of the speed and sound of the Value juggling. I have so many times tried to find something to assure me that I was doing it right. You have done that. And I love your set up and step by step canning example....

I am glad you did this. I often wondered about canning sweet potatoes. Usually in canning they tell you to peel potatoes first...I would imagine that the steaming first then peeling is more about the ease in peeling rather than safety. It is a chore to peel sweet potatoes. Thank you for sharing this!

This is my first year canning sweet potatoes because I love them fresh. My single person canning is vegetable beef soup with jalapeño peppers. My husband loves everything chicken or those chunky soups from store. I'm a beef girl!

Thank you for mentioning that the jars should not be warmed in the oven! I’m a relatively new canner and so many people/videos mention warming the jars in the oven so it’s great to know the safest way.

I am the only one that loves sweet potatoes in my family. The 1st time I canned sweets, I assumed I was supposed to peel, cut, boil, then can. Well, I learned to steam or boil them whole because cutting them first made them mushy. It sure works better. I am so glad you make this video for me to see. I also love to use the same peeler. It works better.
Boy, I wish I'd had this video about 2 months ago when my mom and I bought 96 lbs of sweet potatoes at the farmer's market-yeah, 96 wasn't a typo, lol. We've got 'em comin' out of our ears, but they're sooo yummy. Yours look delicious and it's great to hear you encouraging others to can for individuals (in moderation, of course). Great idea to can the sweet potatoes, we love them and I purchased a 1/2 bushel before Christmas because it was just cheaper that way so I have some I need to use so this is a great option. I put them in soups, roast them, my husband likes them candied with a little brown sugar and butter in a skillet, they are such a great vegetable. Thanks for another great video, I'm enjoying this canuary series and learning a lot.

Such great advice about 1 person making a large meal and canning the rest. Before empty nest, I made big meals and put them in individual containers in the freezer for easy meals for the kids. Now I do similar, a large meal and eat leftovers during the week. And I am starting to can the extra instead of freeze. It works out great.
This year I learned to can for a single person, I help an older friend out with her groceries and food preservation as she doesn't know how but loves having homemade shelf stable. She can grow a mean garden tho. This year we(she) grew sweet potatoes and I was thinking on canning them but the process seemed daunting thank you for giving me ideas. Thank you for a great video.
