In searching for a low carb pizza crust recipe that does not make a cauliflower or fat head type dough I found your channel. I made it last night with some substitutions. I used all Victoria Keto Kitchen newest flour mixture (she calls VKK) in place of the flax, almond and oat fiber. I just added them together and used 85 grams of the VKK flour. I omitted the xanthan gum as her flour has this as part of her mixture. It came out amazing 😋This was the best low carb pizza crust I have ever made. I have left overs for today 🙂 Thank you so much 😘

I loved this recipe. I usually look at most keto recipes with such skeptical eyes, mostly because you see too many people claim their recipe to be the closest they have had to the real thing. It's hard not to be critical when you're hopeful that you've finally found that recipe that works, just for it to be gross and/or bought expensive ingredients for it that you'll probably never use again. Thankfully this one was legit, and if the diet would have allowed it, I'd have eaten the whole pizza. Thank you for this recipe, it will definitely be added to my favorites 💕
We totally agree with you. We tried some other peoples' recipes, filmed things even, and throw it away. Some recipes, they look picture perfect but taste bad! Tried two other pizza crusts, were OK not satisfied. Ran across your video, tried to find Anthony's products in store, no luck, ordered from Amazon. Made pizza next day, fantastic! Was looking for that crunch of regular pizza crust and this fits that taste. Put all the toppings on, mozzarella, parmesan, onions, green bell peppers, pepperoni, grass fed ground beef, I cooked & seasoned beef with a little onion/garlic powder, kosher salt/pepper to taste.. I am on Keto and this is just right! I cut dough in half & froze the other half. Now going to try the donuts. Can't wait!

I've been making a similar recipe for about 3-4 years now, I use 2 TBS arrow root, and 2 TBS gelatin to make it a little less bready and more New York pizza like.

So I love you guys! Now following you on IG. I've made some of my own revisions that I'll share. I use all almond flour eliminating the flaxseed meal as I don't like the flavor it imparts or the browning. I also pulse the almond flour in my nutribullet (or any food processor you have) to make it finer and that seemed to make it better. I also use olive oil for a more authentic Italian flavor rather than the butter. It seems to help with flavor. I added some onion powder, adobo powder, and oregano to the dough and it was amazingly flavorful. Some tips for stretching the dough: I found that if you let it stick to the surface you're rolling it on it helps. Also, i decided to use my hands to stretch it. But I roll them out from the thickest areas to avoid holes. And before rolling it on the surface, if you hold it by one of the ends and VERY GENTLY pull, you will see the gluten pull apart slightly which won't stretch back and you can work around the edges doing that kind of breaking the elasticity a little, then roll on the hard surface. It's challenging for sure but so worth it.

I'm still looking for the perfect keto pizza dough recipe, but I have to say I'm very spoiled in that respect. I've never been to the States, but what I've seen up to now in pictures and videos of pizzas over there on the other side of the big herring pound has very little to do with a nice neapolitan pizza (maybe a bit more with a Roman one, but the original pizza is from Naples 😉). The KetoKing's version comes closest, but it still doesn't make me happy. I never thought about adding almond flower, though, so that is what I'll try next. That might also help with another project I haven't found the perfect solution to yet. A proper keto French baguette! Nice a fluffy inside, crisp on the outside. Almond flower makes everything more cake like rather than bread like, so I usually stay away from it when it comes to making keto bread or pizza doughs, but just adding some to a normal gluten/yeast recipe might do the trick. Anyway, I'll give it a try after my holidays and will keep you posted how it goes. Thx a bunch for the idea! 🙏🏼😎

Hey! Just watched the video. I don't have a convection or pizza setting. What temp and time should I use? I am very excited to try your pizza dough. Crispy crust is what I like. Thank you. Dough was easy to work with. I subbed half the almond flour with lupin. Came out great. Crust wasn't crispy but it had a nice chew that I enjoyed. Best pizza dough recipe I have made.
I made this last night. It was great. However, I may have messed up a little. The double recipe is what I did and only cut it in half for two total pizzas. Mine had a little thicker of a crust. Can you please clarify, the double recipe...4 equal parts for 4 pizzas or 2 for 2?

Made it and it was good. Wasn't dry or anything. My only problem was that I couldn't get the pizza to a large size...it was between small and medium. I kept pushing out (or however one calls it) from the edge but it started to form holes. The whole thing looked like a thin crust pizza rather than the beautiful crust on your pizzas. :-( Curious, what's the trick?
Glad to hear you made it and you liked it. Sometimes stretching the dough out can be tricky as the gluten when activated is quite springy. Even with regular flour pizza dough, the technique is to stretch it out, then let it rest for a few minutes before working the dough wider again. Avoiding holes, just have to stretch carefully. Did your dough ball double in size at the rise time? Also crust edge depends on how wide the sauce and toppings are put on, and how strong your yeast works when it hits the hot oven. Don't have a mixer. Can I get the same results kneading by hand?
If you are good at kneading it should work OK. Probably would want to use buttered hands as the dough is sticky at first!

I made this again last night using no flax seed (don't like the taste) and substituted more almond flour for the flax. It was AMAZING! I also put the almond flour in my bullet and pulsed it to make it finer. I also added some onion powder, adobo powder, and oregano to the mix and it was great. And I used olive oil rather than butter and it was better.
You cut this dough in half 2 times, so does this recipe actually make 4 medium pizzas, or 2 larger pizzas?
Hi. I’m new to making this recipe but he made a double batch in this video as he wanted to make donuts with some of the dough. So the recipe in the description is a single batch and it makes 2 large pizzas. So if you double it you can make 4 large pizzas or go to their doughnut recipe video and make doughnuts with the other. That’s what I’m going to try. Cheers.

The dough seems good, but the sauce... Here is a good basic recipe - 1 28oz can peeled plum tomatoes, 3 tbsp of olive oil, 1 tsp sugar and 2-3 tsp of dried oregano. Well this is a basic traditional NY Style pizzeria pizza sauce. Everything else looked good and I think you're right about the dough not needing to be 'precooked'.

Probably! We sometimes cook half the recipe after the main rising, and put the other half in the fridge and it’s still good for about 4 days.

If you have a scale that does ounces, you can convert the measurements using your phone or something like www.metric-conversions.org/weight/grams-to-ounces.htm , but just be careful because ounces wouldn't be as accurate as grams. Hi I am about to make this but I just realized that you forgot to say what size the egg is.
You mentioned that you put the pizza in a rising temperature oven for about an hour. What temperature was the oven and does it stay on while you have the pizza in there?
Last question. Did your pizza have that beautiful brown crust cuz of the pan or cuz you have a pizza setting on your oven? If it’s the pan, what pan do you use and where can I get it?

Hi Pat - Thanks for the great questions!
1. Egg size isn't too critical - a large or extra large egg should work fine.
2. I usually rise my dough in a 100 degree F oven, sometimes 120 if it's colder outside. Our oven has a 'proof' setting that keeps it on at those low temperatures, but if you don't have that, you could preheat to 200, then turn it off and put the dough inside the warmed for the duration of the rise time.
3. The silicone baking mats we use are here: amzn.to/3pXJNLz - they're awesome for baking of any kind. Our sheet pans are these - amzn.to/3bG4erh That being said, if you have any kind of convection mode on your oven, it's a good idea for pizza. You can also rotate the pans halfway through to make sure it cooks evenly. Depends on your oven...
Also don't forget buttering the crust right away when it comes out of the oven! Good luck and let us know how it comes out.

I’m sure you can use it, but watch how hot it gets. If it goes to 800° your pizza may be toast. This one was cooked probably at 450° to 500° since it’s a home oven.
What can I substitute for the Vital Wheat gluten? I can't eat it
I don’t think there is a replacement for VWG. It is what gives it the stretch and chew. It would need to be a completely different recipe and I’m sure it would affect the the taste and end result. 😢
Keto Upgrade does recipes without using nut flours or gluten & she probably has a recipe for you. Hope that helps.

Hi. He doubled the recipe in the video. The single recipe is in the description. After rising he cut the doubled recipe in half and put that away for a doughnut recipe he has. Then he cut the other half in half again and made the two pizzas. Cheers.
