What You Need To Make a Cauliflower Crust Pizza:
2 cups of grated CAULIFLOWER
1 cup of freshly grated PARMESAN CHEESE
1 EGG beaten
PARCHMENT PAPER to line your baking sheet
and whatever PIZZA SAUCE and
PIZZA TOPPINGS you desire
How to Cook the A Cauliflower Crust Pizza Recipe:
Grate fresh cauliflower florets into granules resembling "poprocks"
Heat the grated cauliflower in a skillet--don't add oil or water--use medium heat, not too hot. Stir until the cauliflower has dried out somewhat, it won't dry completely, but the dryer the better. Heat at least 10 minutes, just enough to evaporate the moisture, not enough to color or cook down.
Remove skillet from burner and set aside to allow cauliflower to slightly cool.
In a bowl, beat 1 egg.
Add grated Parmesan cheese to the egg. You can substitute, asiago or romano cheeses, just be sure you use a hard cheese for best results.
Add the cauliflower to the bowl and mix well with the egg and cheese and form into a ball.
Spread parchment paper onto a baking sheet. DEFINITELY USE PARCHMENT PAPER, otherwise your crust may tear when you try to pick it up (and also be sure not to mix up parchment paper with wax paper!)
Place the balled cauliflower and cheese onto the parchment paper and spread out into a pizza shape about ¼ inch thick. The crust will be about 10" across.
Do not make the edges of the crust too thin; keep the size of the crust uniform for even cooking. The cauliflower will darken quite rapidly around the edges if too thin.
Place crust into an oven preheated to 400 degrees Fahrenheit and cook approx. 15-20 minutes until the crust has colored and firmed up.
Remove cauliflower pizza crust from the oven and top with your favorite pizza sauce. Use a marinara sauce, pesto, white sauce, or whatever. Top with your favorite pizza toppings.
Return pizza to the oven and continue to cook at 400 F for about 10 minutes until the toppings are done, watch the edges of the cauliflower crust; the edges will darken too much if overcooked.
Remove the pizza from the oven and set on a cooling rack -or don't- this step isn't make or break.
And that's it.

A cauliflower pizza crust will not rise since there is no yeast involved, and since the crust is entirely cauliflower, cheese, and egg, it will not achieve the same crispness as a thin dough pizza. But the pizza will stay together just fine, and will taste very much like a pizza.

Are you vegan or vegetarian? I noticed you didn't put any meat on your pizza. Great video though, I will definitely be making these pizza crusts tomorrow. Spend Sunday afternoon making a few of them, freeze the extras for later.

I made this in a slab style pizza with many different toppings, thanks for the recipe!
On one quarter I did mushrooms, green peppers, and feta cheese
Second quarter I did green olives, and cherry tomatoes with partly skimmed mozzarella
3rd quarter I did diced turkey bacon with green peppers and feta
Then the last quarter of the slab I did green olives and pineapple with the partly skimmed mozzarella

@@wmaffia dude its healthy made with healthy ingredients. If youre type1 put so 1.5 slices for 1 unit. So 3 slices is about 2 units i think. Pretty close :/

Just wanted to mention that you have been instrumental in my renewed interest in eating pizza on keto. This is by far the best recipe I've found online but I made a few tweaks to the seasonings and think this has got to be the best pizza ever made and is even better than a regular crust pizza to boot. I added Italian seasoning, garlic powder, onion powder, red pepper flakes, and salt and pepper for a kick and it's outta this world delicious! And for the toppings, I added hot banana peppers, pepperoni, spinach, mushrooms, black olives, on top of a homemade tomato sauce with even more spicy pepper flakes.Thanks for the inspiration because if I hadn't stumbled upon your recipe, I'd still be trying to figure out how to live for the rest of my life on keto. 😀🍕 Gotta love spice!

Made this for the first time today. INCREDIBLY DELISH!! Can't even taste the cauliflower, lol. I added 1 tsp unrefined coconut flour/garlic powder/crushed red pepper flakes and oregano to the crust prior to baking first time. Then topped it w a quick no cook sauce, added fresh mushrooms, sliced provolone and baked it till cheese melted. AMAZING. Even better than real pizza crust!! Thank you Chef Buck for an awesome recipe

The smell of cauliflower reminds me of my primary school kitchen. Although they never served us cauliflower, for some reason, the whole kitchen smelled of cauliflower. It really takes me back to those good ol' days...

This recipe actually works! Thank you! I used thawed, frozen cauliflower rice in the bags from Costco, (I’m too lazy to grate cauliflower), drained the water from the bags, one bag per pizza crust. Smashing the bag and squishing the water out, put in a bowl and added a cup of Parmesan cheese and one egg per bag of “rice” patted it out onto parchment and cooked it at 350 F until golden brown, flipping over if needed for further cooking. I didn’t make pizza with it, I just enjoyed the crust as a flat bread.
I want to try this but Costco was out of cauliflower rice. Hope they get it in soon or guess I’ll grate my own.

Just made this using a large stainless steel fry pan and it was awesome! Great job on the recipe Buck, loved how you simplified it! I ended up using a softer cheese, colby jack mostly and still came out great. Sure beats all the work making a regular yeasted dough especially for me cuz I need gluten free. This was so simple and soooo delicious!

Just made this the other night. I added about 1/2 cup more grated cauliflower since I knew it would shrink after it cooked in the pan for a bit. I added a little more cheese, about two tablespoons of almond flour for extra stability, and since my eggs weren't large I added two. It came out so amazing I couldn't believe how delicious it was!
yeah, it doesn't seem like that much cauliflower would be a good idea in a pizza recipe, but it definitely works

Thank you, I just doubled the ingredients and made this in a 12" Cast Iron pizza pan (no parchment paper but very well seasoned though) and it came out amazing. I went with pepperoni, mushroom, onion, green paper, sausage, and bacon. I also added fresh garlic and basil with my own canned sauce from our garden last year.

@THE SCHOOL OF ART Every cheese has to be processed, otherwise how do you even expect to have cheese ...just because something is 'processed' doesn't mean it's unhealthy, depends what ingredients you put in during that process. Real parmesan cheese only has 3 ingredients, otherwise it's not even Parmesan :)

We just made this pizza crust for dinner, and it was fabulous. Thank you so much for the "top of the stove" drying tip. It took longer than expected to dry out but it turned out perfectly. I can't stand wringing food out in my tea towels. My pizza did not stick to the parchment paper but I did lightly oil the paper first. We topped it with sauce made from tomato paste, olive oil, garlic and herbs, then some mozzarella cheese, pre-sautéed turkey sausage and mushrooms. A little parmesan and arugula on top made it even better.I watched quite a few videos for cauliflower pizza crust, and yours is the best!

I have used your recipe now for years. I also cook my cauliflower rice in a dry pan for the dishes like fried rice, etc. Such a great way to get rid of the cauliflower taste too.
