Serving size: 6 slices
Dough:
1.5 cups part skim mozzarella cheese
2 tbsp cream cheese
1 egg
3/4 cup almond flour
2 tbsp parmesan cheese
Toppings:
1 cup low sugar marinara sauce
Pepperoni
1/2 cup low moisture mozzarella cheese
Optional: Basil leaves
Directions:
1. Preheat your oven to 425F. In a bowl, add your mozzarella, parmesan and cream cheese. Microwave for 1 minute until all the cheese has melted.
2. Mix in your egg and almond flour and knead until a dough has formed. If your dough is super sticky, then you can dust some almond flour on it. Lay this on your countertop until it's combined.
3. Flatten your dough to your desired thickness, add it to your pizza pan OR place it on a cooling rack with an aluminum pan at the bottom. Using a fork, poke holes in your dough to allow it to get crispy
4. Bake for 15 minutes, then take it out, and add your toppings of choice.
5. Bake again for another 10 minutes until the cheese has melted and crust is crispy!
6. Serve and enjoy!
Nutrition per slice (for 6 slices): 210 calories, 19g Fat, 11g Protein, 2g Net carbs

Ingredients: A can of diced tomatoes (you can blend it for a few seconds in a MagicBullet so it's not chunky); Then add a teaspoon or two of Olive Oil ; some salt to your preference; some garlic powder to your preference; and some oregano to your preference. Mix well.

Such a nice receipt. I just made it and it was delicious, tasted like regular pizza and because I don't like tomatos I used aioli sauce because I didn't know what else to use, but it was absolutely heavenly. I had a bit of trouble with converting the amounts so I think I used a bit too much cheese, but I only faintly tasted the cheese which was really nice complimented by the aioli sauce. Thank you a thousand times. SO great.

New today to your channel. Came at a perfect time! Recently diagnosed T2D. I cook almost everything from scratch and bake all my own breads, but having to change even more now and at a learning curve at 57, learning how to make pie crusts, breads etc., a whole different way using different flours. Yours so far looks the most normal to me. I have not eaten pizza in 3 weeks, neither has my husband as he hasn't a choice on what's now our jounney. I am having to learn how to cook differently without loosing the flavor, because otherwise what fun would it to be to cook anymore! I do miss baking. Going to try this out this evening. Thank you.

Loved this recipe. Tip: always crack your eggs separately before adding. I was making a cheese cake one time and cracked the egg into the bowl and the egg was full of blood. Had to throw everything away and I didn’t have all the ingredients to make a new one.
Growing up on a farm, that’s a good standard practice.

Nice recipe but an FYI, the part skim mozzarella cheese has 2 carbs per serving where the regular full fat mozzarellas have only 1 gram or less.

Yes but I think the recipe calls for part skim bc it’s consistency mixes/bakes better. She’s not the only one I’ve seen suggest part skim.
Have made this same dough many times, personally find it's much easier to skip the microwave and make it in a non-stick pan over low-medium heat to keep your cheese constantly warm enough to maintain it's elasticity and ability to bind to the almond flour but without adding unwanted moisture from the microwave. Once it's well mixed, drop it into a bowl to cool slightly, then use hands to mix in the egg before flattening out into the crust.

Does this keep it from becoming a paste? Mine always turns pasty, but I just wet my hands and wash it as I spread it. After baking it’s good, but I don’t know if it would be better if done right.
@@tpmartins I've modified my methods a few ways in the year since I posted this, but generally, the "dough" should be kinda wet and sticky. I'm too often making this in a hurry, so I'll take the entire mix and dump it onto a lightly oiled piece of parchment paper, throw a second piece of paper on top, and spread it out flat, usually using a heavy pan or cookie sheet and then pushing back in any thin or broken edges by hand before sliding the entire thing onto a pizza stone in the oven. Overall, my hands make very little contact with the dough itself now.

I love how you bring your daughter into the taste tests, she has such a cool attitude, and those facial expressions lol 👍. How hard is it to use this crust for making a pizza pocket "calzone, hot pocket" and would the baking time be about the same?
It's not that much harder. My suggestion is filling and shaping the dough and then cook it in the oven.

My pizza dough is
4 eggs
8 oz motzeralla
Add garlic to taste
Put in a sprayed 9x13 pan
Bake at 400 for 15 mins.
Take out add your toppings then
Back in the oven at 425 for 15 min.
Comes out perfect every time.
