I choose lower fat meat not because is not keto just because in this pizza if you use to much fat it will become too soggy. I made the easiest keto pizza recipe do you agree?

I made this tonight! I made poolish with it last night, used what Vito has been teaching and adjusted for 4 pizzas. I wish I could post picture. Soft, crunch and thick. A great alternative for a once a week treat. 3 slices 85g Protein, 23 carbs, 27g fat. Thanks Vito!

Just a note on Keto: it’s a low carb, HIGH fat diet, so if your liver is in ketosis state, no need to look for low fat meat. Recipes look great, will try it tonight 😊

Vito - thank you for this video…have been following you for a while and have been looking for Keto friendly recipes for my kids that have food allergies to regular flour.
Would be great if you could make a video comparing almond, coconut, and other flour types and/or what is the best combination to get close to a “crunchy style Neapolitan style pizza”
For food allergies try making your crust out of lean ground chicken with some egg whites anc salt mixed in. Press out into pizza crust and par bake till firm, drain off juices then add toppings and finish in oven till your allergy appropriate toppings and cheese is melted and browned to your liking. Makes for a delicious pizza substitute and can actually be made extremely low carb. True it's not traditional pizza but will meet most food allergy issues (except egg allergies).
He used a keto WHEAT flour for this pizza, so it would NOT be ok for wheat or gluten allergies... 😥

It look like you can reverse your refrigerator door handles and hinges to the right side as to probably make it easier and more convenient to open. Usually the handles lift up to come off and the hinges are just screwed on. Check on UA-cam. Just a thought...

It’s a perfect looking Keto Pizza, specially the last one. I think if we want to reduce glycemic index for “regular flour” then long fermentation like 72h can help. yeast and enzymes process more carbs and reduce glycemic index.

I’ve been doing keto for the last two years. My wife makes a keto pizza dough using almond flour, mozzarella cheese,cream cheese, an egg and garlic powder it’s pretty damn good when your on a diet. Just a heads up Leto you want to use high fat meats 80-20 for ground meat. Really enjoy your videos pizza look great

King Arthur Keto Wheat Flour is awful. Vito also used regular flour when rolling out the dough, making it even less low-carb. For a much better pizza dough recipe, check out Black Tie Kitchen's keto pizza 2.0.

Made this pizza used EVOO instead of coconut oil and cooked in oven on a pizza stone at 500 degrees F.
Good flavor however very tender crust compared to pizza made with flour. Had one pizza left over stored in fridge overnight and reheated next day on pizza stone at 400 degrees F for approx 10 minutes. Was actually even better and more closely resembled a traditional crust. Definitely the best low carb pizza ever. Next time I will par bake crust for 5 minutes then add my toppings and see how that works out.
Looks great!!! I would do the base and substitute the beef with prosciutto, basil and rocket. Remember fat is good with keto! Bravo Vito!!

Question…can you refrigerate/cold proof the dough
Since Vito didn't reply...I can tell you that I have done that with bread based on Carbalose flour (a similar type--apparently not as good as this stuff), so I don't see why not. When making bread with it, I ended up finding it more convenient to mix the dough with a small part of the yeast and just let it rest for a longer period (like a few days to a few weeks) in the fridge, wrapped well but loosely in plastic wrap. That way it got the long ferment before the final kneading and proofing.

I've been wondering whether or not it was worth the premium price and if it performed anything at all like real wheat flour. Very interesting Maestro, Bari in the oven looks the best. I can get my gas grill with stone up to 325°C. I use my pellet smoker tube to give it a wood taste. One day I'll have a Pompeii oven.

I have been doing keto for several months now and before that I was a mad woman in the kitchen and loved to make my own pasta and pizza dough and cook everything from scratch. After going keto I got kind of depressed about the lack of pasta and bread. I just got this same flour yesterday so going to try this today. I also used the Caputo gluten free flour makes excellent pasta! I wonder if this flour can also make pasta?

You need to add some shredded mozzarella into the dough, so when you pan fry it, it makes it crunchy from the browned cheese, that or sprinkle on some ground up pork rinds.

I just finished watching your video, thank you for the honesty. I love your videos! Too bad it didn't pass the soft and crunchy test for the Neopolitan style. I am looking forward to another try with a different kind of flour, perhaps a nutflour? I read the flour you used is made of whole wheat, so that explains why it tears so easily and why it doesn't get as crunchy when baked.

Thanks for showing how to make this dough! When cooking keto, there is no reason to use a low fat meat though. Keto is supposed to be low carb, high fat.

Looks good, maestro. Would it be possible to make a preferment such as a biga or poolish with the keto flour?
So I tried this last night and the results were pretty solid for what it is. The biggest problem I had was rolling out the dough, mine was crazy sticky and I had to use a ton of flour to get it thin enough. Maybe my board and pin are sticky... I baked mine in a Gozney dome at 800-850°F and they baked just like regular dough, looked great... texture right out of the oven had a tiny bit of crunch to it and wasn't bad. Taste is... fine with toppings but by itself it's a bit odd and I left the edges out for the raccoons. On the whole a success and if I had to be keto 24/7/365 it's more like pizza than the fathead or cauliflower crusts, but between the PITA rolling it out and the not-quite-there taste I might save pizza for cheat days.

Great job, as someone who has been keto/low carb for years I've tried many different keto pizzas and these look better than even the pizzeria keto pizzas I've tried. I wonder if you would be willing to try to make a fathead dough? It's much less carbs than this keto flour which to me is ketoish not really keto because it's still wheat.
