I told my wife last night that I wished Seth and Scarlet would train the rest of the UA-camrs we watch on videography and storytelling. You both do an incredible job and have become one of our favorites to watch each week!

I think what's so great about you guys is that you're so healthy, and Seth is just so happy to cook for you Scarlet. When you might be the ONLY person on Earth... Such an amazing landscape you have found yourselves in. This was a really good video. I have to admit to not being the biggest pet person in the world but watching the two cats enjoy themselves outside was cool. Your Thanksgiving meal looked absolutely delicious. And I forgot to mention that I also have the Wacaco Picopresso and the Minipresso NS2 - which, I realize, is cheating a little but it's so much faster than the Pico - and they're great! Bought it when I did my van life rental over the summer and they're both coming with me once my build is done. Good call for how you make espresso!

I hadn’t realized such landscapes exist right here in the U.S. until I stumbled across vanlife. The intro reminds me so much of Cappadocia region in Turkey. Though I’ve loved seeing parts of the states from your videos, curious to see where vanlife takes you internationally!

Lula really is the best little bean. Sasha had such a good time off leash. She actually really surprised us with how close she stayed to the van on her own. That van is delightful. I love the woven screens. There are only two things that I would do differently: I would have a better sort of stove, and I would have a bed on a hydraulic so that you could have a decent size table and not have to pack the bed up every night, apart from that, it’s perfect. I’m glad I found you. The photography and editing is flawless. Thanks
Thank you! Unfortunately, the bed lift would shorten the counters by 2.5 feet and kill a ton of overhead storage/natural light from the skylight. We aren’t a big fan of them for living In a van full time but for trips they’d be perfect!

Yeahh truth be told we are still forgetting to take thumbnails as we go so I had to use photoshop and the only Thanksgiving food I could find wasn’t specifically representative of what we cooked of vegan. They really can! We used a lot of the same techniques as training dogs. It helps that Sasha wants to do things so you can entice her easily. 😊
Yikes! I didn’t consider the limited amount of pans you’d have to work with! You did so well with what you had. Have you thought of investing in an instantpot? It would allow you to make so many one-pot dishes. I know you’re limited on space but they’re so nice.

we just got back from Guatemala. It's a long drive, but you should consider driving to Antigua, Guatemala. The fruit and produce there is awesome and really cheap. Gorgeous city, good year-round temps, but they do have a rainy season (I'm not sure how rainy it really is though).
Good to know! We are planning to go to Mexico and Alaska this year but have also considered going further into South America as well!
lots of good youtube vids on Antigua; if you make it there, you'll find it hard to leave! As vegetarians doing van life (not bogged down with kids), Latin/Central America is the place to be. And then it's a matter of finding a good town (safe, good temps, with some modern amenities). I haven't studied it much, but Antigua would definitely be on the list...but I'm sure you two will figure out a good itinerary!

Cooking in the van is honestly one of my favorite things to do! It’s a little 1800w oven from breville we’ve had no issues with it at all! This was probably the longest I’ve run it for almost 2 hours straight and it handled it like a champ! Thanks for watching. 😊
