  • I'm canning green tomatoes to fry this winter! If you love fried green tomatoes this is a great way to have them whenever you want them! Stay tuned till the end, I had a little accident! 😢
    We Homestead on a small lot in a subdivision in South Central Kentucky. We do a lot of cooking, camping and canning! We have started a 12x12 U shaped garden bed on our old garden plot and are excited to get it going.

    Love the bust at the end.
    I think adding a small amount of water before placing the tomatoes could remove more air.

    Ouch! I felt that! Like you, I am glad you were in the garage when that jar slipped. I have never canned green tomatoes...something new to try at harvest time.

      Cat Melton I’ve canned them several times it’s nice to have fried green tomatoes in the middle of winter! Yes it was a lot easier to clean up in the garage. I’ve been thinking of getting a camp chef stove and do all my canning outside. Sure would save on kitchen cleaning afterwards.

    Howdies Heart. Aw man! When you dropped the jar that rocked me back in my seat! Dadgummit! And guess what? I have the same setup...only next to my car shed thingie in the back yard. If I had have known about the glass top prohibition we never would have got the thing. But we did. (We got away with waterbathing on our old one several times. Ignorance is bliss, etc.) We only figgered that out after stepping up to our new American Canner.
    I went searching for a howto on green maters and here you are. We're going to have a go at it. I watched your chewing video, which sealed the deal. One year for unknown reasons my tomatoes came in real late and I had a whole mess of green ones at the end so I wrapped them in newspaper and we had ripe tomatoes past Christmas. But that was just the one time. I like your method much better. Until recently it never occurred to me to can tomatoes and squash for frying. No wastage this year and you know why. So super thanks! Got your vid stashed in multiple places and the recipe written down as well. Let you know how it turns out.

    Instead of lemon juice can I use citric acid

    Heyyy from Southeast Alabama, I was wondering if you boil the tomatoes for one minute & then remove from WB canner, will the tomatoes & jars be hot enough for the lids to seal ???

      yes i remove them after the 1 minute. Ive had no problems with the jars sealing,

    Would you use the same measurements for a quart jar on the lemon juice and the salt?

    How is the texture after canning? QT would be perfect size for Hubs and me. I am thinking I need to try this.

      I've never done them in quarts so I don't know how long you would water bath them. Thank you for watching!

    The finished product is success in crisp frying 'open one of the jars after a month or so & showing' how crisp they fry up! Like you several show the canning process but don't follow through by showing crisp frying success. PLEASE??

      @@MadeByHeartHomestead I'd liked to seen firmer canned green tomato (maybe I'll cut a bit thicker?) but I'm convinced after watching many how to video's that ur way is as good as anybody could expect to achieve maximum intact firmness? TY so kindly... you're the first person to get back to me. :)

      Cutting thicker is probably better, but I really couldn't tell a whole lot of difference in my canned and fresh. Maybe I don't cut my fresh ones as thick as most either. I try to answer all my comments but sometimes they get past me. Have a blessed night!
