    I slide mine put them in pint jars. fill with water add tsp canning salt. Put on flats and rings put ina water bath canner. When it comes to a rolling boil . Start timing 10 minutes exactly . At end of ten minutes pull out immediately. This workds perfect everytime. Been doing it for 10 years this way. If you over process your green tomatoes you will ruin them . Never had any bad ones . Fries up perfect.

    Thank you Carol for your great canning videos! I always learn so much. I canned the green tomatoes today, I think they will be great when I use them! I had a hard time trying to get the air bubbles out and ended up using my Vitamix scraper which worked great. It it thin plastic, but strong. A few of my tomatoes had a very slight yellow color in spots but were still completely firm. Hopefully they will be fine! Thanks Carol!

    Thank your than I can say for starting off with the importance of safe practices. There are so many people online now that are desperate for putting by food and they know nothing at the start. There, as you know, are people who are teaching how to can and they do not practice safe processing. I do refer to your channel as one who will tell them the safe way to can.     Thank you so much! We had quite a freeze hit us here in Middle Tennessee and I had to pick all the tomatoes left on the vines. This is going to save dozens of green tomatoes. We're already stocked up on salsa, homemade Rotel, and diced tomatoes. I see you have a video on pickled green tomatoes, have to give that a try too.

    I'm so ready to can me some green tomatoes! It's now the 27th of June 2019! I love your channel! I don't have a garden this year but hopefully next year for sure! Will be getting some more red and now green ones for sure this weekend! And be canning again this next week! I'm hooked! Lol!

      Georgette Hilliard have you seen my video on pickled green tomatoes? I actually prefer that method for fried green tomatoes. Since you’re pickling it’s less time in the canner which means better texture 😊

    You were so helpful ill telling what PSI I am suppose to use. Watching this video made me think of something I use for packing my dehydrated orange slices in jars. Its called a pickle packer and if you look one up on Amazon you might find it useful. By the way my first time pressure canning came out wonderful. Thank you for your help.

    My Grandmother use to can her green tomatoes so everyone had fried green tomatoes all year. So they use to do this, you might have better luck talking to an older farmer who has a garden all their life. They might know some tricks of canning too. Just a thought cause they canned everything in the old days cause they had no Refrigeration. Thank you so much for the lesson.

    I too have taught myself how to can. I have made lots of jellies, jams and apple butter!! But now that I have done those and gotten comfortable with water bath canning I would like to branch out and start pressure canning. I have been scared to death of pressure canners since a young child when mom was cooking up some pinto beans and that darn thing blew up! It blew the lid straight up into the vent hood made big dent in it. Broke some older tiles on back and there were beans everywhere!!! The ceiling was covered in beans!!!
    Carol I love you videos!! How cool you are about using it. That makes me want to. Try it so I have been looking on line at them and then also at estate sales. We have a big garden and I really want to put some foods up while they are plentiful. Until I am able to find a pressure canner I’ll just keep watching and learning from you! LORD BLESS YOU AND KEEP YOU!!

      Cindy Nicholson you’re sweet. Thank you for your kind words. I remember when I first got my pressure canner. I was scared to use it for the very reason you described lol 😂. But I did some trial runs without anything in the canner except water, worked up the courage to actually can real food and now I have a love affair with the thing 😉. There’s really nothing to fear. There are several safety features and as long as you follow the instructions that come with your canner there’s nothing to be afraid of. A pressure canner is an investment that will last a lifetime as long as you take care of it. I love my All American canner but there are less expensive options. And since you have a garden you will get a great return on your investment 😊. Love and blessings to you and thanks for watching and supporting my channel!     Hi Carol just tried the 'mince n tatties' and it turned out just like fresh made, beef is ground quite coarser here in Scotland so maybe that made a difference, thanks for telling me about the botulism in potatoes I just canned some baby ones so I guess I'd better put them in the trash lol, your advice again has been so helpful, thank you 😊 all the best Carol x

    As a new subbie, it is great fun going through your videos. I wonder if you have been to the National Center for Home Food Preservation website? They are THEE clearinghouse of information that entities like Ball and others quote. Lots of university and extension agency info linked through their website too. Your tip for taking the canning jar out to the garden is brilliant, thank you. Yay you follow acidification guidelines, too many canners think just because a tomato product is pressure canned it doesn't have to be acidified...wrong! I will make a batch of these for Mom this summer but in wide-mouth half pint jars since she cooks for one these days. :( Thank you for all the great tips you pass along as you go through your process. The internet needs more safe canners just like you!

      Molly Smith hi! Yes I go to the NCHFP website frequently. Especially since I do these videos I want to make sure I’m thorough and correct in every step.     Just subscribed and love the green tomato segment. Can the same technique be used for quartered green tomatoes? My wife likes adding them to vegetable soup and also for stir frying. Look forward to seeing more videos. I am also a Buckeye.

    I did this last year and mane did we love them all winter long. Fixing to do some more soon. I’m also going to do okra this way for winter frying 🙌🙌. I wonder though if I could do pint and a half wide mouth jars for the tomatoes and process to whatever time quarts would be done at? 🤔

      My Faith Haven Farm yes, you can do pint and a half jars processing for quarts 😊. Have you tried my pickled green tomatoes recipe? I think it’s even better. Great texture since less time in the canner from pickling. And you can add whatever spices you’d like to your pickling brine 😋💕

      Chandra Woodward I asked Ball this very question. Their response was it hasn’t been tested for that purpose. So I haven’t tried it but I don’t see why it would be a problem to use it. I’m still thinking it would be worth trying. 😊. Great minds think alike 😉

    this is a great idea! I never thought of canning green tomatoes - but we love them - and they are hard to find if you don't have a garden!
    just a friendly tip - it would be SO much easier to cut these if you used a larger knife - such as chef or santoku - =]

      xxoo28xxoo thank you for the tip but I chose this knife purposely. It’s the perfect size for coring as well as slicing. I have several chef’s knives but if I used it for slicing I would also need a paring knife for coring. 😊

    Just came across your video but have a question are the slices not kinda mushy after canning? How thick can the slices be to safely can? I don't like so thin. If so could crisp for pickles not be used to help counteract that? Thank you for answering.

      The tomatoes are soft and you can certainly slices them thicker. The thicker the slice the better the texture. This method produces a better product for green tomatoes for frying ua-cam.com/video/LsnS9up6Y-0/v-deo.html

    Do you have a special jar lifter for your wide mouth jars. The one I have puts pressure on the lids when I lift them out

    When you eat go to eat them later, are they soft and mushy before you fry them?

      tdjohnsky no they are not mushy. The texture is a bit softer than fresh but not mushy at all and if you fry them correctly they are crispy. Just be sure not to slice them too thin, 1/4" or more. Thank you for your question and thanks for watching:)

    Have never done rhis but I do have a friend that has just done it. We were wondering if summer squash could be canned the same way for frying. Any ideas or suggestions? Neither of us like a pressure canner!

      Carline Gilbert summer squash and zucchini are not recommended for pressure canning. However, They can be pickled and water bath or steam canned.

    question - what happens to the ones you are forcibly putting in there? are they broken when you remove them or do they soften up because of the canning process?

      Are they softened because they are boiled for 10min or can the canning time be reduced to keep them more firm?
      Also have never seen the flour you used to bread them here in Las Vegas or my other home - South Florida - will have to try to find!

      xxoo28xxoo they are on the soft side but to be safe we cannot reduce the canning time. I did a video this summer on canning pickled green tomatoes which I think is a better option for frying. Because they’re pickled it’s less time in the canner and the pickling adds great flavor. I love this method if you’d like to give it a try.       Katie Honeman hi! The processing times are the same for quarts or pints for pressure canning, 10 minutes if packed in water. 😊

    Hi Carol weathers been so bad this year I've plenty green toms definitely doing these, in Scotland we have a favourite dish, "mince n tatties" ground beef simmered in an onion and beef gravy and served with mashed potatoes and veg, my question is, is it ok to can the cooked mince with raw diced potatoes, and can I can raw chicken breast with raw baby potatoes with skins on? Thank you for your help I really appreciate it, I love your family photos especially that beautiful dress you're wearing and your adorable fur babies, best regards Carol x

      carol29carnegie hi! Mince n Patties sounds delish, perfect comfort food 😊. Ok, on to questions... yes, it is safe to can potatoes with ground meat. White potatoes are best and the only type recommended for home canning. They must be peeled as they are a root vegetable and at a higher risk for botulism that is naturally occurring in soil (peeling is required for any root veg including carrots and beets). As for ground meat, have you ever had it home canned? If not you may want to know, in my opinion, it becomes the texture of wet cat food, lol. I do not care for it. Nonetheless, it is safe to can with the peeled potatoes. If you would like more instruction on doing this let me know. I plan to do a tutorial on canning potatoes in a few weeks. As for the chicken breast, safe for canning but I have found it to have a dry texture. Thighs can better IMO. I know these are not great answers but I hope this info has helped. Let me know if I can help further. And I feel your pain with the weather, our garden has been a great struggle this year 😞. But I’m grateful for what it did produce and will look forward to next season 😍. 💕Carol

    I dice my tomatoes for frying about 1”. Could I can them diced? Frying round tomato slices takes too long. Diced fried green tomatoes stay firm and the cooking time is short.

      There is no processing time for diced tomatoes. The density would be different so the processing time would change

      mlduckman 189 I have. They are much softer (as you would expect) than a fresh tomato but can still be fried. The thicker you cut your tomatoes the better your results. I really wish the nchfp would do more research on this...

    Is there a video where you actually used these tomatoes that you processed. Granny karma just tried to fry some tomatoes that she caned and it didn't go so well. I'd be curious to see how yours go.

      MoJo JoJo they are soft but you can still fry them. I’ve found the larger you cut them the better 😊

    Baker Creek seeds sell a seed that is for just green tomatoes. Also, do you do a no bean chili that is for hot dogs and hamburgers? If so can you do a canning segment on how to?

      Terry Russell hi! Thanks for the heads up on the seeds. As for chili sauce for hot dogs and burgers I just mash up a jar of my chili beans and voila instant sauce (I figure I already have the meat so I like my sauce to be all veggie 😉. Also I’m not a fan (and neither is my family) of canned ground beef. The texture is very different. I made canned spaghetti sauce with ground beef and no one liked it 😢. So I don’t can ground beef anymore in anything. Sorry I can’t help you with that one. ~Carol

      Terry Russell one more thought on the green tomatoes... make sure that even though your variety is green that you use unripe tomatoes. Ripe tomatoes for frying will not be the same. 😊

      Terry Russell if you want your chili sauce to be really saucy use a food processor. If you want it with more texture use a potato masher. And you can always add fresh ground beef browned and drained. If your sauce is too thick add a little water. Any way you do it a can of chili beans is a great starter for amazing chili dog sauce. My family loves it! 😍

      Zucchini is not approved for canning except in tested recipes or pickling

      Carl Bailey btw, the thicker you cut them the better your result. You can water bath can these but it’s for 40 minutes per safe canning guidelines. I’m thinking about doing a comparison but I haven’t done that yet. I would think the results will be similar...

    Why add the citric acid if you're pressure canning them? Citric acid increases acidity so foods can be safely water bath canned, but pressure canning is for low acid foods.

      Donna Southwood I agree with you but after doing a lot of research and contacting my extension office I followed the safety guidelines they stated. Both Ball and my extension office said to add it so I did. There’s also apparently some question of the true acidity of tomatoes grown today. The truth is no one has done any research on the canning safety of green tomatoes. As I stated in my video I will always err on the side of caution especially when I’m sharing a tutorial with other people. Thanks for watching

      Missy Retzlaff hmmmm, I use ball canning lids and I’ve never had one rust. Do you wash your jars and lids after canning and before storing?

      Yes I wash them before I use them in the canner, and after I can with them when I wash my jars before storing them. Then I put them in a bag for the next use. I don't understand why the rust then.

      Missy Retzlaff gotcha! So you’re talking about the rings... yes mine rust too but I have so many of them I just pitch them after awhile. I think the rust with or without using vinegar. Someone else suggested using cream of tartar. I’ve not tried that yet. 😉

    Soaking them in water; doesn’t that cause the nutrients in the tomatoes to dilute into the water. So when u dumb the water u dumb the vitamins down the drain.
