  • What to do with all your green tomatoes at the end of the season? in the past I've made salsa verde, mock jam. this year we are Ripening the majority inside for more salsa and sauces and trying our hand at pickling some for the first time.

    Pickled green tomatoes, dry them really well, bread them and fry them. The best fried green tomatoes ever, plus you can top your hamburger with the fried green tomato!

      Agree. I try to do the same. I have fallen in love with tomato powder this year. Dry skins add great flavor.

      (South) Arkansas here, too. That the same thing known as green tomato relish? Or different? I love green tomato relish but its so expensive at the store. I've got some green tomatoes I'm looking to make something with.

      @Anita Murphy yes! I make them like a slightly spicy bread and butter pickle... in chunks, but you can shred or dice them up and mix with onion, bell pepper, garlic or whatever other things you are still pulling out of the garden to make a relish. I also ferment green tomatoes, red onion, garlic, cilantro and peppers to make salsa verde. 😃

    Picked green tomatoes are a staple at kosher Jewish delis, they go great with bagels and lox or a pastrami sandwich. I also use them for fried green tomatoes, just rinse them a little so they aren’t so tart. And they are great to top Bloody Mary’s!

    Here in western ky. I just pulled the last of my green tomatoes. Making green tomato ketchup. Cooked the tomatoes all night in crock, then ran them through my kitchen aid mill. I also did more salsa verde.

    I love fermented green tomatoes especially the small cherry or Roma ones. I ferment them with lots of garlic and Mexican oregano. They are so good almost taste like expensive olives.

    I have always in my 73 years pickled tomatoes in vinegar and pickeling spice....i am one of the ones that recommended the pickled green tomatoes..........Ann From Georgia

    In Romania, my native country, pickled green tomatoes in salt brine are national pickles, along with pickled cornichon cucumbers and pickled red watermelons. We never pickle green tomatoes or watermelon in vinegar brine, but only in salt brine. We mix green tomatoes with apples, grapes, quince slices, horseradish, cayenne peppers, garlic, celery leaves, oak leaves, sour cherry leaves, then adding salt brine. They are wonderfully fermented about Christmas. Traditionally, they are served at Christmas with pork sausages and anything pork, even fries or mashed potatoes. When the green tomatoes are well fermented, the brine becomes great to be served too and it's filled with good bacteria.

    My mom always pickled green tomatoes. Her and my dad would eat them as a side, when she made Roast, Meatloaf, etc.

    I ferment green tomatoes and they taste really fresh and crunchy. The best with eggs. I have 5 quart jars fermenting on my counter right now that I'll store in my 2nd fridge for the winter. I also make a fermented hot sauce that I throw a green tomato in and I can a green tomato salsa that is to die for. Love green tomatoes 😍

    Also, we chop up our pickled green tomatoes and put them in tuna salad or just in a fresh salad. Add red pepper flakes for spice :)

    I'm from the south. We can purple hull peas. We use pickled green tomato relish (tomatoes should be chopped) on our peas like pepper sauce. It's also great on ANY field type peas, pinto beans, navy beans etc. I have eaten it right out of the jar. And the way you canned them in this video, we batter and fry them!

    Rachel I too have never tried the green tomatoes but that jar presentation looks beautiful and great for gift-giving to friends who love them!

    Mother used to put up kosher green tomatoes every year. She used small tomatoes and we used them just like any other pickle. Yum!!!

    My favorite way to eat them is on top of a big plate of soup beans with a piece of cornbread. If you are unfamiliar with soup beans it's just dried beans cooked with a piece of bacon or fat-back and water. It gets kind of soupy. It is a real Southern delicacy.

    Green tomato salsa...yum! I usually make dill PICKLE quartered tomato with garlic and even a pepper in it sometimes. It good. For crispy and some alum.

    My grandmother would quarter them and add cauliflower,carrots and hot peppers to make them spicy. I would eat them by there selves and also she would make relish

    I use green tomatoes instead of cucumbers in bread and butter pickles. Slice them thick with my mandolin. They are really good.

    I pickle green tomatoes with a jalapeno and a cow horn pepper and pickle with vinegar and sugar salt. We eat it with beans and greens cornbread whatever you want to eat it with.

    We eat them like a long pepper. With a meal meatloaf, pintos okra cornbread. Very simple brine ,salt water vinegar. We actually can them with the hot pepper

    I do a B&B brine on sliced tomatoes and onions that I salt for 4 hours and rinse. The perfect thing to put on roast beef! Also use it in potato salad.

    We dill our green tomatoes at the end of season. Taste somewhat like artichoke hearts. The wife makes a yummy artichoke noodle salad substituting dill green tomatoes rather than artichokes.

    Here in Eastern Canada we make green tomatoe chow chow .you layer tomatoes than onions till containers is full than use corse salt .Let set over nite and drain brine and rinse.Then you use brown sugar and vinegar and mixin tomatoes.Get a cheese cloth and put pickling spice in and boil all together for about 40mins.It is very good on everything

    Absolutely bread and fry them as already suggested. Serve them alongside pots of dried beans or peas with ham and cornbread. Top an omelette or hash browns or cottage fries or frittata. Yum. Topping for meatloaf. Add them blotted dried and chopped in zucchini or squash fritters. Don’t forget hot dogs or sausages. You have a treasure in those jars. Really enjoy your channel.

    They’ll ripen faster in a bowl or pot. I tried it this year and it worked amazing.

    Those tomatoes look so yummy. I also have some leftover brine from my cowboy candy that I might get try adding to a fresh batch of either pickilli or sliced like you did but with some sweet heat. Thank you for the suggestion of canning the extra brine.

    I'd heard that storing the tomatoes stem side up helps them ripen and that storing them upside down slows the ripening.

    I made some calico pickles a few days ago and the recipe didn’t call for green tomatoes but I put some in with it. Turned out great it really did.

    i loved the look of these in the jar and then I thought what if you did a slice of green, a slice of yellow or orange(partly ripe), and then a slice of red (ripe).....traffice light tomato pickle!!!!! would be really cool looking for gifts?

    Rachel, you could make a dill grill cheese hamburger casserole with potatoes... Use the dill tomatoes.

    I ferment in salt brine and no canning. They are good to have with anything from sandwich or a stew or a lot of stuff like a mini sallad. They help digestion. I eat some as a smack while cooking

    Eat them with fried catfish. You dip your hushpuppies in the brine. Cajun chef is a good brand. They sell pgt in gallon jars around here in Arkansas. Yum.

    They should be fine without the pickle crisp. Southern Living Magazine has the best fried green tomatoes recipe with buttermilk batter. Wrapped in newspaper, they’ll eventually ripen in the garage. Looks awesome as always.

    I want to try bread and butter green tomatoes, to see if Dad will like them better than the green tomato pickle I made last year. (2 things I'll change from the last time - use apple cider vinegar instead of white and more sweetening.)
