    Don’t worry about them getting soggy. If you have done the process correctly they will last a very, very, long time in the glass jars. A couple years ago I got to eat the last jar of pickled green tomatoes my mom had canned in 1974. They were delicious

    That's the way I do my dilly beans, but I use beans that hasn't matured yet, so good with bologna sandwich

      Dial-gauge pressure canner: 15 minutes at 11 PSI or 20 minutes at 6 PSI for pints or quarts
      Weight-gauge pressure canner: 15 minutes at 15 PSI or 20 minutes at 10 PSI for pints or quarts

    At the end of the season, I bring in my green tomatoes and they ripen up in my kitchen. Fried green tomatoes are not near as good as Fried eggplant, but everyone has a different taste which makes the world go round! Thanks for another informative and delightful video on canning!!! GOD BLESS!!!

    Can you give me the spice measurements and water bath time to make the pickled green tomatoes in 1/2 pints? I am very new to canning.

      Brine: 3 1/2 cups of water, 1/4 cup of salt: bring to a boil to dissolve the salt.
      For each pint jar add a few cloves of garlic, 2 sprigs of dill, 1/2 teaspoon peppercorns, 1/2 teaspoon of mustard seed, 1 bay leaf, Pickle crisp according to directions
      Water bath for 15 minutes.

      Pint 40 mins
      Quart 45 mins

    I made this recipe, but I modified it a bit. I used fresh basil from my garden along with dill and garlic. The basil added a excellent flavor to it!!

    @Hoss Tools. Mama Hoss, why do you have to pressure can the tomatoes if you add the citrus acid? Thank you in advance.

      In this recipe, to ensure a pH less than 4.6 (ensured citric acid) . So for this recipe, citric acid is as necessary for pressure canning tomatoes as it is for boiling water canning them.

      10 pounds of pressure for 10 minutes for the sliced. 15 minute water bath for the pickled
