I became vegan aged 16 I'm now 66 years young. Way back made my own bread nut butters and almond milk. Blackstrap molasses and brewers yeast my go to for iron and vitamin B. Lentils and a pressure cooker for all the different beans used. Had 6 children all still vegan and very healthy my eldest is 47. I've a great granddaughter and 3 grandchildren. All healthy and vegan all through the generations breastfed of course. Soya milk was given if needed. Being vegan is easy and cooking vegan is second nature to me❤💛💚

Chickpea scramble tip… (if you like eggs) add a teaspoon of black salt (aka Kala Namak) to them once they’re cooked. It’s a sulphurous salt so naturally has an eggy flavour and smell! It actually makes your chickpea scramble taste like eggs! I also add vegan butter and a bit of unsweetened soya milk to the mashed chickpeas and they go even more scrambled egg like… I.e. a bit more smooth and silky. Add the black salt at the end as the flavour does start to wane with the heat and also bear in mind you won’t need to add normal salt to the eggs too

I'm looking for some filling breakfast ideas for the kiddo and these look awesome, but there's no way I'm getting up at 6 to do all that. :P That being said, I think the bean and herbs mixture could be made in advance. All that would be left in the morning is add the avocados to the mixture and cook the mushrooms, which isn't too bad.

I just made that avocado/bean toast for breakfast using gluten-free bread (since I have medical issues with wheat). It was the best breakfast I've had in a while. So delicious.
Today i tried the first recipe. It was delicious. I used baby spinach, coriander, parsley and added a half a teaspoon of chilie flakes.... Thank you so much Rachel. I enjoyed my breakfast.
Top tip too for with onions, mushrooms and little garnishes.. Meal prep them. You don't have to meal prep every single meal for the week. The amount of difference making a quick red onion pickle, some fried mushrooms you can toss in the microwave or back in the pan and even the avo mix can save much valued tired time on an early work morning. I can't believe how tasty all of these look and can't wait to try them it's really reinvigorated my health kick whilst reminding me that healthy just means getting all the nutrients you need and isn't just small portions.
Tip for avocado mix if you're gonna do it in advance is *GENTLY* pour a thin layer of water over the top once you've got it in your storage container. Water will block out most oxygen from getting to the avocado mash which would oxidize it and turn it brown and yucky looking. Works for guacamole too. Putting the pit in does NOT work from my personal experience, it's just hearsay.

A well-planned, organic, unrefined and untempered with vegan diet (consuming raw plant foods where possible so as not to denature or destroy the life-forces and enzymatic activities beneficial to the human system. If disagreeing on this matter, please take some steamed carrots, plant them and see if they will grow; if not, it is because they are 'dead' plant food that cannot benefit one's 'living' cells) consisting of organic fruits, vegetables, legumes, nuts, seeds and whole grains is the best diet to provide mankind with ultimate health and longevity. As a vegan some of the best ideas are in indian cuisine. The fritata is called chilla. The chickpea mix is similar to a snack we do during religious fasting. The subtle changes in the original recipes is absolutely brilliant. Love it.

It is a staple ingredient in the cuisines of the Indian subcontinent, including Indian, Bangladeshi, Burmese, Nepali, Pakistani, Sri Lankan and Caribbean cuisines. Easy and less expensive to buy at an organic market that specializes in food from one of these regions. I always keep besan flour on hand. #superprotein
These all look amazing. I struggle so much as a single person with produce and using it before it goes bad. Biggest frustration when looking meals like these. Want them all!
It may not be doable for everyone…but the one way I’ve kept from wasting so much food is instead of meal planning for a whole week I meal plan for about 3 days at a time. The reason I do this is sometimes you have unexpected left overs (like when you didn’t expect to get so much food out of a new dish) so if i planned meals for a whole week I would have a lot of food waste at the end. This means I usually go grocery shopping about 2 times a week instead of the standard 1 a week big grocery hall most ppl I know do. Without writing down what I will make for breakfast, lunch, and dinner tho…I find I buy a lot of random ingredients which when I get home I’m like “how am I going to make a meal out of this?” And so produce will go to waste more easily then. Also! If you can…start a compost pile, if produce spoils quicker then you expected at least it won’t be all bad because you can use it in your compost :)
The crazy thing is that if I cook; I'll eat everything until it's finished. It's such a bad habit....but it's just staring at me. I'm a binge/starve kinda person. As I grow older, it's 'easier' to gain weight but still easy to drop it by eating like a rabbit.

@@ecmeify I think it depends. Where I stay, it can totally be inexpensive. In season, avo is super cheap here and everyone knows someone who has a tree in their back yard anyway. Fresh herbs are fairly cheap as well, and more so if you grow them. Olive oil, I agree, is a bit more, but I'm not going out getting the high quality stuff and for cooking it can totally be replaced with sunflower oil. Again, it really depends on where you stay and all that. My comment was just based on my experience where I stay

Just wanted to let you know. I have IBS and I am gluten intolerant. I have started eating sourdough bread and it is wonderful. Not only does it not irritate my gut it seems to help my IBS symptoms. You might try A small slice and see what you think.
I am gujarati. We are basically from the state Gujarat in India and we are mostly vegetarian. We make the exact second dish you made but we call it pudla and make it like pancakes. Pretty tasty, healthy and filling. Loved your toast recipe as well.. ❤️

I thought they were high protein because of a) white beans in the first recipe b) garam flour (chickpea flour) in the fritatta c) the chickpeas in the third recipe. There's lots of protein naturally in beans

Love this, needed some savoury healthy breakfast inspo! For anyone like me who doesn't like the taste of Garam Flour, I think the second recipe will work great with the batter from Gaz Oakley's tofu omelette.
Just a quick note...someone made me a faux omelet once with chickpea flour and i did NOT like it. Ate it anyway pretending it was nice because manners. But i reallllly disliked the taste. However, a baking basket of "modern" ingreds/flours was given to me as a gift...so i used the chickpea flour to make little savoury muffins. (added lots of strong flavours like...onions capsicums mushrooms garlic ginger grated turmeric root & used curry powder, s&p, maple syrup & nooch with the chickpea flour)...& i LOVED them! SO i tried a faux omelet (similar to Rachels) with lotsa veges & added nooch & curry powder etc..& hey presto! i loved the chickpea flour omelet somehow!? So if u dislike the taste of chickpea flour...maybe try again with some strong flavoured ingredients to drown out the taste? The End.

I have made the first 2 recipes over and over again. They are fantastic! The super avocado toast is THE BEST avocado toast and lasts for several days in the fridge (the avocados don't turn black). My vegan omlette's texture has only come out right once (like a fat pancake), but it is always delicious, and I just discovered that it can be used as a vegan egg salad sandwich/breakfast burrito! On another site I saw a double-sided frying pan. The two sides are identical & clip & hinge together, so rather than the faff of trying to flip on to a plate, you literally just turn the frypan over. Brilliant idea. There are some around, but they aren’t all very good quality so it pays to look around. I bought one online & had to send it back because it was flimsy & wouldn’t work on my induction hob.

For example, the frittata is a good one to make ahead of time. Even hummus on toast is good
These meals can be prepped before hand. When I cook meals like this I cook for 4 to 5 days so I am not cooking like this every day.

Fun fact..if you cook them in balsamic vin you get the opposite effect and they become thick , juicy and delicious!
A mushroom will not dissolve during cooking. It may shrink. If you drop certain tablets in water, they dissolve.

GARAM Flour: Gram/garam flour or besan is a pulse flour made from chana dal or chickpea flour (split Bengal gram) or brown/kaala chana, a chickpea. It is a staple ingredient in the cuisines of the Indian subcontinent, including Indian, Bangladeshi, Burmese, Nepali, Pakistani, Sri Lankan and Caribbean cuisines. Easy and less expensive to buy at an organic market that specializes in food from one of these regions. I always keep besan flour on hand. #superprotein
These all look amazing. I struggle so much as a single person with produce and using it before it goes bad. Biggest frustration when looking meals like these. Want them all!

It may not be doable for everyone…but the one way I’ve kept from wasting so much food is instead of meal planning for a whole week I meal plan for about 3 days at a time. The reason I do this is sometimes you have unexpected left overs (like when you didn’t expect to get so much food out of a new dish) so if i planned meals for a whole week I would have a lot of food waste at the end. This means I usually go grocery shopping about 2 times a week instead of the standard 1 a week big grocery hall most ppl I know do. Without writing down what I will make for breakfast, lunch, and dinner tho…I find I buy a lot of random ingredients which when I get home I’m like “how am I going to make a meal out of this?” And so produce will go to waste more easily then. Also! If you can…start a compost pile, if produce spoils quicker then you expected at least it won’t be all bad because you can use it in your compost :)

The crazy thing is that if I cook; I'll eat everything until it's finished. It's such a bad habit....but it's just staring at me. I'm a binge/starve kinda person. As I grow older, it's 'easier' to gain weight but still easy to drop it by eating like a rabbit.

@@ecmeify I think it depends. Where I stay, it can totally be inexpensive. In season, avo is super cheap here and everyone knows someone who has a tree in their back yard anyway. Fresh herbs are fairly cheap as well, and more so if you grow them. Olive oil, I agree, is a bit more, but I'm not going out getting the high quality stuff and for cooking it can totally be replaced with sunflower oil. Again, it really depends on where you stay and all that. My comment was just based on my experience where I stay

Just wanted to let you know. I have IBS and I am gluten intolerant. I have started eating sourdough bread and it is wonderful. Not only does it not irritate my gut it seems to help my IBS symptoms. You might try A small slice and see what you think.

I am gujarati. We are basically from the state Gujarat in India and we are mostly vegetarian. We make the exact second dish you made but we call it pudla and make it like pancakes. Pretty tasty, healthy and filling. Loved your toast recipe as well.. ❤️

@@sofiaxcosmo894 I just kinda wing it. Mushrooms, onions, spinach or asparagus with Italian spices, garlic and veggie broth and/or unsweetened oat milk is a great place to start.

I am 100% a savoury-brekkie person so this video is just awesome for getting some extra inspiration! I love how flavour-packed and warried in texture these recipes were! I kind of don't agree these are high protein BUT it does not take away their deliciousness! They were surely very satisfying for the body and the soul!

I thought they were high protein because of a) white beans in the first recipe b) garam flour (chickpea flour) in the fritatta c) the chickpeas in the third recipe. There's lots of protein naturally in beans

it has a healthy amount of fats and carbs as well as being protein dense. Beans are extremely high protein and good for you.

Love this, needed some savoury healthy breakfast inspo! For anyone like me who doesn't like the taste of Garam Flour, I think the second recipe will work great with the batter from Gaz Oakley's tofu omelette.
Just a quick note...someone made me a faux omelet once with chickpea flour and i did NOT like it.
Ate it anyway pretending it was nice because manners. But i reallllly disliked the taste.
However, a baking basket of "modern" ingreds/flours was given to me as a gift...so i used the chickpea flour to make little savoury muffins. (added lots of strong flavours like...onions capsicums mushrooms garlic ginger grated turmeric root & used curry powder, s&p, maple syrup & nooch with the chickpea flour)...& i LOVED them!
SO i tried a faux omelet (similar to Rachels) with lotsa veges & added nooch & curry powder etc..& hey presto!
i loved the chickpea flour omelet somehow!? So if u dislike the taste of chickpea flour...maybe try again with some strong flavoured ingredients to drown out the taste? The End.
I will use this recipe with Cauliflower crust for my bread as I don't tolerate grains at all.

Appreciate the simplicity of your recipes that are quick and very practical. Mostly, thanks for not using a blender!. I hate blenders.. a pain to clean though sometimes one is needed.
I have made the first 2 recipes over and over again. They are fantastic! The super avocado toast is THE BEST avocado toast and lasts for several days in the fridge (the avocados don't turn black). My vegan omlette's texture has only come out right once (like a fat pancake), but it is always delicious, and I just discovered that it can be used as a vegan egg salad sandwich/breakfast burrito! Thank you so much!

On another site I saw a double-sided frying pan. The two sides are identical & clip & hinge together, so rather than the faff of trying to flip on to a plate, you literally just turn the frypan over. Brilliant idea. There are some around, but they aren’t all very good quality so it pays to look around. I bought one online & had to send it back because it was flimsy & wouldn’t work on my induction hob.
