Your edamame toast is one of my favourite breakfasts! I replace the avocado with (vegan) greek yogurt when I don't have avocado and leave out the cilantro when I don't have that, and it's still absolutely amazing. I could eat the spread right off a spoon. Thank you!
This breakfast cookie recipe has made my life better. I Make a quadruple batch each month. All 5 kids love them, and they freeze well. You can exchange the almond butter with another nut butter if you are out, or need a more economical option.
I love savoury breakfasts and some of these, I will definitely try on the weekend. On weekdays, I can't invest this much time into breakfast and I would lack the coordination as I am very much not a morning person. Also, washing up a blender and bowls? Could not imagine doing this on a weekday morning. But thanks all the same for all the great ideas. I especially love using the veggie slicer to get thin strips. This should work especially well on smoked tofu.
I made the breakfast cookies today and they were the best cookies I have ever made. I added unsweetened dried cherries, pumpkin seeds and hemp seeds. I didn't have almond butter, so I used tahini. Big Chef's Kiss on these! Thank you so much. These will be on repeat forever!!

I made the cookies and the pickled onions according to the instructions, and both turned out great! The cookies are soft and not very sweet. The onion is a wonderful addition and upgrades any salad😋

Just made the chickpea scramble - absolutely amazing!! Even before I was vegan, I could never eat scrambled eggs, couldn't take the texture, and I've had the same issues with tofu scrambles. The chickpea was perfect! Loved the spices (I did skip the kala namak, my brain associates eggy smells with the texture), loved the yogurt sauce, loved it all! Will definitely make again and looking forward to putting your next cookbook next to the first in my kitchen

I just want to say, last night I made your lemony dilly chickpea soup - and I did follow your recipe! Except I used 2 cans of lentils instead of whole chickpeas cos neither my partner or myself are the biggest fan of chickpeas, we like them, but not in large quantities, like a soup (I did blend chickpeas though, for the purée)… It was the most delicious thing I have eaten in soooo long, and today, I am having it on rye sourdough toast, with avo for breakfast. Thank you! def gonna be going on the roster! My partner loved it so much too.
I use a Y wrap with the Lavash bread that way stuff doesn't fall out of the bottom. I cut them in 1/2 with the wide side east to west. They end up more square. Place the wrap point side up, put the filling in the middle, fold left, right then the bottom up. If you are making them for later, wrap them in parchment paper or foil.
Love your diversity on the breakfast option. I'll like to see more egg substitute for breakfast because I don't eat tofu or soy . Do love the chickpea option.
I love these recipes. I'm looking for recipes to make at night that I can take in to the office in the morning for breakfast and lunch. Not sure these would do well sitting in the frigde overnight, then not eating them until 8:30 the next morning. I'll have to experiment. The edamame toast seems like it'd work. I could take the premade ingredients in to work and assemble it at my desk. Any suggestions would be appreciated! Thanks.

Each recipe is a cracker! I have leftover lentils which will go perfectly on the wrap. They are from your cookbook, Mediterranean lentil salad . I love that recipe and have made it so many times. Always double the batch because they go so well on sandwiches and wraps!
I just cooked your spiced chickpea with yogurt sauce and it was amazing!!! Some pickled onion would have made it even better. The single downside was that i made two portions, I did not have a large enough pan and it took roughly 15-20 minutes to properly cook down. In total, it took me 30 minutes, so I'd say that this wouldn't fit into busy morning as a breakfast, but more of a brunch or even lunch. But I loved it and its pretty easy and low skill. ❤

My other half used to make something very similar to your breakfast cookies only smaller in size and not so sweet as it used banana as the sweetener. To encourage her young nieces and nephews to eat them she called them Monkey Droppings :) The kids loved them

Well, my breakfast takes max 2 min to make, that is as much time as I have. The effort and time you are putting in to make breakfast, is the same I put in for the main meal of the day...dinner :D
