Norma is a truly wonderful person who has helped me become a better pizzaiolo . Her and her friend Frank can be found on numerous UA-cam videos making pizza and telling stories.
It was really weird seeing Frank have to fold his arms, lean against a countertop, and actively stop himself from helping ... he's usually so helpful and engaged with his hosts but this guy was like "My pizza is sacred, keep your filthy peasant hands off of it." It reminds me of that guy in either the Rome episode or the Naples episode ... who said "You're a baker, you're a pizzaiolo, not a heart surgeon." Meaning pizza isn't a religion and shouldn't be so damn serious.

I had college classes with a member of the Katz family, and I grew up a few miles from Roots Market in Lancaster. I remember the first time I went to Italy as a kid and went round to my aunt's neighbours house to eat and she had made a large pan pizza with potato on top, I reeeeeally wasn't sure about it... I ate it and it instantly made sense 🤗 that potato and ricotta slice brought it all back for me, looks so yum
