Authentic Kerala Dishes with my personal Touch 😍
Ingredients
Vegetables (ashgourd ,pumpkin )-2cup
Tamarind -lemon Size
Turmeric Powder -1/4tsp
Water -2cup
Salt -
Grated coconut -7tbsp
Dry Red Chilli -4
Green Chilli -2
Fenugreek -1/2 tsp
Pepper -3
Rice -1tsp
Curd-7tbsp
Jaggery -
coconut Oil -2tbsp
Mustard seeds -1tsp
Fenugreek Seeds -2pinch
Dry red chilli -3
Curryleaves -
Fenugreek Powder -1pinch
Method
Take a small piece of Ash gourd and Pumpkin (you can take the vegetables of your choice) and make it into small pieces.
Take a pan and add the vegetables to it. Add ¼ tsp of turemeric , salt , tamarind water and add water . mix well. Close the lid and cook the vegetables on medium to low heat. Heat 2 tbsp of coconut oil add 1tsp of ponni rice. Saute it till golden . Add red whole chilli. When the rice pops out remove from the het and keep aside. Then to the same pan add fenugreek seeds and saute it.
Grind finely Grated Coconut , 3 green chillies,2 -3 pepper cons, cumin seeds(optional) the fried - rice ,red chillies and fenugreek seeds.
When the vegetables are cooked evenly add some grated jaggery. Add the ground masala. Mix well. Whip 9 tbsp of curd. Add it to the vegetables. Don’t cook further. Remove from fire.
Heat some coconut oil and add mustard seeds. When it pops add Fenugreek seeds and whole red chilli. Add curry leaves. And a pinch of fenugreek powder. Season it on the vegetables. Close it for 5 mins. And then serve it with rice.
