    I was a general manager at a Five Guys for several years. Cutting and prepping the potatoes is no joke. We would usually cut 4-6 bags in the morning and maybe some more before dinner

      Rinse those potatoes until the water is clear… get rid of all that starch

      Well ya'll were doing it all wrong....you need to wash every potato by hand....that means scrubbing each potato by hand.

    At our location we cycle the potatoes through the veggie wash usually 3-4 times until all starch is gone than we transfer into another sink where they will be constantly agitated through out the day! Great video!

    I work at five guys. Sometimes I have to cut like 6 bags of fries just for the morning shift. I still love the fresh fries and burgers

    Glad to see you use Norkotah potatoes. A great potato for fries. It's a relatively new variety that's been genetically modified for yields and consistency.

    I worked at Five Guys Berlin-Alexanderplatz and I washed the fries at least 2 times to remove all the starch. Probably there is to much in there.....(and not should be)

    I rarely go to five guys which I haven’t been there in so long but I do love it! My question is the why do you guys put so many fries in the bucket? When I got my food, there were so many fries and fries kept spilling out because they were overloaded! I do love your the fries, though! I just wonder why you guys put so many in the carton or whatever it’s called

    We didnt have that green thing and the scoop when i worked there. I could feel it when you put your hand in that cold water filled with fries. Ive cut so many bags of taters.

    I might be wrong but this store has very less sale or he is capturing this video on low sales day; otherwise there is no way someone can work slowly in five guys!! Sometimes it is feel like hell on earth.

    after you prep the fries, how are they stored before being fried? don't fries need to be stored in water to prevent browning?

      Yes fries are washed until the starch is gone and the water is clear. He should have filled the first wash sink up first so the fries were washing while he cut them to get rid of the starch. The way he did them he would have to fill up that second sink and drain the water until it's clear. If they are stored in water for too long they will start to become slimy and will be thrown away. On the other hand if they are left out of water for too long they will start to turn brown and then black after long enough.

    Do all 5 guys rinse their fries like that? I swore I've been to a couple where they launch the fries from the cutter directly into the fryer… and it's awful. Always soggy and oily and burned tasting.

    Seems inefficient to move the potato past the bin to the chopper. Should be oriented in a different direction for faster reloading

      Yep that’s exactly what they do they then get put into 5 gallon buckets and brought front be used for the day !!

      A 50lb bag might only last an hour or less depending on how busy the store is.

      Gloves are only required in restaurants for prepping RTE or ready to eat foods like lettuce that don't get cooked before serving. The fries are cooked in 345 degree peanut oil before serving and gloves are required while doing the cooking.

      no need for gloves, the fries will be cooked in a deep fryer at 325 to 375 degrees afterwards, so there's no risk of a customer getting sick
