At our location we cycle the potatoes through the veggie wash usually 3-4 times until all starch is gone than we transfer into another sink where they will be constantly agitated through out the day! Great video!

Yes fries are washed until the starch is gone and the water is clear. He should have filled the first wash sink up first so the fries were washing while he cut them to get rid of the starch. The way he did them he would have to fill up that second sink and drain the water until it's clear. If they are stored in water for too long they will start to become slimy and will be thrown away. On the other hand if they are left out of water for too long they will start to turn brown and then black after long enough.
Do all 5 guys rinse their fries like that? I swore I've been to a couple where they launch the fries from the cutter directly into the fryer… and it's awful. Always soggy and oily and burned tasting.

Gloves are only required in restaurants for prepping RTE or ready to eat foods like lettuce that don't get cooked before serving. The fries are cooked in 345 degree peanut oil before serving and gloves are required while doing the cooking.

Well ya'll were doing it all wrong....you need to wash every potato by hand....that means scrubbing each potato by hand.

A 50lb bag might only last an hour or less depending on how busy the store is.
We cut 6-12 bags for the day depending on how busy it's going to be

no need for gloves, the fries will be cooked in a deep fryer at 325 to 375 degrees afterwards, so there's no risk of a customer getting sick
