@@Jazmines_12 Doesn't have to be new. I knew a lady who ran a kitchen/restaurant and she paid her staff to stay on half an hour every day to clean the whole kitchen down. Never an issue if anyone came round to inspect and the deep cleaners who came once a year said it was the cleanest kitchen ever.
Belgian fries, you can see it at the end. backed first time at 140 celsius in beef tallow, second bake after a resting period in oil until the fries sing. The Belgian "bintje" potato is the best in the world to get this kind of golden fries.

Its like an orange, oranges from Spain are much better than oranges from France for example. Its all about soil and nutrition in case of oranges, sun.

Elles ont l'air parfaites ! Et tout a l'air de qualité, les steack frais façon boucher, légumes frais, vrais fromages (munster, reblochon, raclette 🤤) même le cheddar à l'air quali, les pains burger n'ont pas l'air industriel non plus, surement commandé chez un boulanger Juste les oignons frit en sachet là, c'est de la merde, et barquette de lardons aussi pas sur.. (un morceau de lard fumé du boucher, pour découper soi-même lardons ou tranche de bacon à la maison, c'est le top, au même prix que le sous-vide du supermarché) Et organisation au top ! 9/10 (-1 pour les oignons frits)

If you don't cut corners and make everything from cooking dough into a bun, grind the meat etc. it's a bunch of work, here the guy in this video doesn't make anything from scratch
All that freshness for a frozen patty to be thrown on the grill..... Edit: and freshly sliced jalapenos on a burger tastes so much better to me than pickled peppers. The fries look spot on though.

Bah ça a pas l’air d’être de la grosse qualité pourtant, tout est industrielle à mort, les lardons sont tout blancs, ok le maroilles a l’air bon. Les steaks je sais pas mais c’est dommage qu’ils soient pas grillés à la flamme. Les sauces industrielles etc…rien est fait maison et vous trouvez ça extraordinaire ? Soyez réaliste, c’est peut être bon en goût mais ça reste du fast foot indus. Les tomates ont l’air aussi fades que celle de mc do.
C est le problème des Français qui critiquent tout. C’est pour cela qu’on est si mal vu dans le monde! Je suis dans la cuisine depuis 45 ans en Californie.Quand je suis parti les gens me disaient “tu vas leur faire de la bonne cuisine car ils ne mangent que des hamburgers. 40 ans plus tard le hamburger est un des plats numero 1 en France. La France est le premier marché european du fast food Je hais les food snobs. Griller la viande est une question de goût. McDo les cuit comme cela et burger king au grill. Les lardons sont blanc parce qu’il n’ont pas de nitrate ou salpetre. En France la charcuterie est plein de nitrate pour la couleur rose. Je sais que les Français ne sont pas tres propres . Cette façon de travailler est beaucoup plus hygienique, preparation en labo, finition sur place. Vous n avez vraiment aucune idée comment un restaurant a haut debit fonctionne. It's a Belgian invention, it's not a restaurant but a "Frietkot" (Fritehouse or in Northern France they call it Baraque à Frites) and serves around 30 different meats, burgers being one of them, I didn't know they had one in Paris, I thought they hated it in France, except in Nord-pas-de-Calais(?) and Lille I have found some, but further up south it seemed distinct, this is good to know thank you!

Perhaps Belgian fries. It’s the allied forces in WW2 who “discovered” its deliciousness, and since they spoke French in the eastern parts of Belgium, they figured it must be French.

@@Apollo440 I come 3-4-5 times a year in Paris. This is the first Friture I have seen in the center of Paris. In Belgium you find them everywhere, and I mean everywhere. French restaurants have no time for the correct technique of frying. Belgian fries: The fries are fried twice. First, the fries go into the frying fat or frying oil (at about 145 °C) to be pre-fried. During the pre-frying (5 to 6 minutes), the raw potato is slowly fried almost until tender, losing much of its moisture. After pre-frying, the fries are left to rest for at least half an hour, after which they are fried in deep-frying fat (or oil) at 180°C until they are a nice golden yellow colour.
@@damiaanspatrick2050 thanks for the explanation. I was joking, of course - funny how they call them French, when they're Belgian, right? I know this technique, having seen it in another video about a place in Germany, which double fries their fries as well. I've tried the "double cook" technique at home as well, with good, crispy results. Even just boiling potato wedges or thick slices and then baking them in an oven, covered in a little bit of oil or, better - mayo, gets you great results. I wonder how the French usually serve potatoes? Probably buy the frozen ones and fry them once.
Thomas Jefferson is the person to thank for that misnomer. While President, Jefferson was on a state visit to France, and was served Belgian Fries. He was so taken by them, that he instructed his chef (who was traveling with him) to learn how to prepare the fries. Since he ate them in France, he began referring to them as "French Fried Potatoes" and the name stuck! 🧑🍳

The cheeses didnt seem half bad. This all difficult Just by looks. The potatoes seems to have been sold fresh After cut and washed. It looks likes good quality for a fast food business. The Sauces are industrial, but in france there are great industrial products with a higher quality than many others countries. Ofc in Paris theres such good restaurants, with seasonal food that aren't even that expensive... To me, the quality Is enough, the problem Is can the Heart stand It?😅

This is what happens when a French restaurant shows us how to put the "French" in the fries! This guy takes great pride with his establishment with the extreme cleanliness as well. Oh, if folks are wondering about the video, this appears to be his prep phase before opening on lunch hour. This appears to be what he does before people come in. Notice how the fries are blanched first and rested overhead before being fried again the moment a customer orders it. It's a good way to fast food in Paris!

Also, another fun fact: The French and Belgians are very close relatives. Look at some of their names. Even the Belgians' culinary methods are French in origin.

It's a Belgian invention, it's not a restaurant but a "Frietkot" (Fritehouse or in Northern France they call it Baraque à Frites) and serves around 30 different meats, burgers being one of them, I didn't know they had one in Paris, I thought they hated it in France, except in Nord-pas-de-Calais(?) and Lille I have found some, but further up south it seemed distinct, this is good to know thank you!

@@Skazi75 It's the traditional way to do them ;) fries should not be cooked on oil but on beaf grease (that the white stuff on the begining of the video) it's give a different flavor that some people dislike.

Perhaps Belgian fries. It’s the allied forces in WW2 who “discovered” its deliciousness, and since they spoke French in the eastern parts of Belgium, they figured it must be French.

@@Apollo440 I come 3-4-5 times a year in Paris. This is the first Friture I have seen in the center of Paris. In Belgium you find them everywhere, and I mean everywhere. French restaurants have no time for the correct technique of frying.
Belgian fries:
The fries are fried twice. First, the fries go into the frying fat or frying oil (at about 145 °C) to be pre-fried. During the pre-frying (5 to 6 minutes), the raw potato is slowly fried almost until tender, losing much of its moisture. After pre-frying, the fries are left to rest for at least half an hour, after which they are fried in deep-frying fat (or oil) at 180°C until they are a nice golden yellow colour.

I know this technique, having seen it in another video about a place in Germany, which double fries their fries as well.
I've tried the "double cook" technique at home as well, with good, crispy results.
Even just boiling potato wedges or thick slices and then baking them in an oven, covered in a little bit of oil or, better - mayo, gets you great results.
I wonder how the French usually serve potatoes? Probably buy the frozen ones and fry them once.
Thomas Jefferson is the person to thank for that misnomer. While President, Jefferson was on a state visit to France, and was served Belgian Fries. He was so taken by them, that he instructed his chef (who was traveling with him) to learn how to prepare the fries. Since he ate them in France, he began referring to them as "French Fried Potatoes" and the name stuck! 🧑🍳

@@mrgdad2746well the meat doesnt look at First glance very lean and the colour seems like It has preservatives but at least its not grounded too finely, nor It has an intense Red strange colour. The cheeses didnt seem half bad. This all difficult Just by looks. The potatoes seems to have been sold fresh After cut and washed. It looks likes good quality for a fast food business. The Sauces are industrial, but in france there are great industrial products with a higher quality than many others countries. Ofc in Paris theres such good restaurants, with seasonal food that aren't even that expensive... To me, the quality Is enough, the problem Is can the Heart stand It?😅

Been a fry cook at over 8 restaurants and this is easily the most cooked fries I've ever seen up at once, at Jungle Jim's in Newfoundland we maxxed out the fryers a lot with fries, but this dude has a really slick set up, I love it!

Oh, if folks are wondering about the video, this appears to be his prep phase before opening on lunch hour. This appears to be what he does before people come in. Notice how the fries are blanched first and rested overhead before being fried again the moment a customer orders it. It's a good way to fast food in Paris!

Also, another fun fact: The French and Belgians are very close relatives. Look at some of their names. Even the Belgians' culinary methods are French in origin.
