  • For Belgians, fries are holy, something you shouldn't mess with. You might think: what can go wrong when deep frying potato sticks? Quite a few things. First of all: don't call it French Fries, at least not when in Belgium. Then, there's the right potato variety and special dripping you need to fry the potatoes in. Not to forget the special method of cooking the fries twice and the different sauces to choose from. So, even if French fries seem to be a simple dish at first sight, there are still some secrets to discover.

      @@deantan4080 it actually does. Mostly when it Comes to Quality of the Fries. It is one of these things which you understand have a food which is supercommon in your country. I guess every country has something like that

    I went to Brussels once and the lady at this shop saw my friend dropped his fries so shouted us over and she filled it again! Never forgotten friendly service great people and even better fries. Buy some if you're in Belgium!

      Fries are the gold of Belgium... But we have to remeber, they're cheap potatoes. So this happens a lot, also if you order a medium pack of fries to go, just know you'll get enough to feed a family of four (in most frituren).

      I figured if I wore loose fitting clothes and proper shoes, the rest would be kinda straightforward.
      Recently I am becoming a believer that perhaps Belgians make the best fries commercially. But that applies to 11 mm (0.433 inch) fries that are eaten on the street.
      As an American I’m trying to make a 1/4 inch (6.35 mm) fry to be consumed at home. Heat retention is a big deal but not as important as it is in this video.
      I have a 3/8 inch (9.5 mm) cutter and 1/2 inch (12.7 mm) coming so testing continues.
      It was an excellent video that exposed many secrets. Just like Bruce Lee.

      Belgium waffles are No secret but people will still travel the World to get them in the hearth of Belgium
      you can know the ingredients but the experience of making them just right is an art of its own
      never had Belgium waffles taste better outside of their Country

      Actually, the correct Belgian way is to eat the fries before you go drinking (kroegentocht). This is called “een fond (dialect: foonke) leggen. When finished at night and just before going home, you have to pass a pita to make sure the alcohol stays in when sleeping ;-)

      I agree! I'm from Switzerland, so its always a big joy for me to drink your delicious beer, what we clearly don't have here. And the fries. Omg. The first time i tried fries in Belgium i felt like i was being lied to my whole life... Can't understand why we don't them the same way here...

      Belgium is too often overlooked. Sure, Paris has some great museums and the Eiffel Tower, but if you want to meet some of the kindest and most generous people in the world, go to Belgium! They are so willing to share their culture and will make you feel at home straight away. They have quirky museums like ones dedicated to the costumes of the Mannekin Pis, or comic books/cartoons, or even the ones for fries. They are the equivilant of the fun cousin from the Midwest in the US.

    McDonald's fries were also fried in beef tallow. They eventually changed to a vegetable oil in the early 90s, but I think the beef tallow is what skyrocketed McDonald's fries to their current global reign. However, I had fries in the square in Brugge once, and there is no comparison. Belgium makes amazing fries.

      Agreed 100%. Ever since they changed to vegetable oil the fries never tasted the same. I stopped buying fries and just stuck to the burgers. The reason why McDonalds stopped using beef tallow was because cows are sacred in India, in order to expand into India McDonalds has to use vegetable oil.

      @@sirxavior1583 I don’t believe that’s why… it came about at a time when consumers were getting concerned about their health and it was the anti-fat movement, especially saturated fats were deemed bad, like butter as well… I’m pretty sure I read that’s why they removed it, because consumers would turn away. Same goes for the transition away from using lard at places… deemed bad.

    I was there over forty years ago and it's comforting to know that in an ever changing world some things remain constant.
    I don't remember much about Belgium as we rushed through but I do remember the fries.
    Dad warned us not to call them French fries. They were great and did stay hot.
    We were not prepared for mayo.

      It comes through when you eat them too. I was eating fries in Belgium outside in the winter, they got cold after a bit, but tasted better than fresh american fries. They really do stay crispy instead of going limp and nasty.

    I am a Canadian Born and raised, but when I was 13 my Grandmother flew us over to Belgium, as that is my heritage, and the fries place I visited I asked for ketchup and they said no. I am one year from retirement and since then I have always ate french fry's with some salt and Mayo

    No trip to Belgium is complete without:
    -Fries
    -Moule Frittes,
    -Filet Americain
    -Pralines
    -Rabbit with mashed Apple
    -Boudin Blanc & noir
    -Gauffres, Couque au chocolat & Merveilleux (but the eclairs are great too)
    I grew up in the Peripherie of Brussels in the 80's and I miss it so much. Awesome country

      @@DWFood Lets get this straight. If you want the best Fries you need the best potato. Then south america is the place to go. In my honest opinion the yellow potato has one of the best textures. I like mine best with their skin on, about 2 cm thick cut and double fried. It turns kind of creamy and fried at the same time. For me thats perfection.

    As a young child we lived in Brussels for a few years. When we eventually returned to the UK after our travels my mum used to make fries for me and my brothers in a paper cone. She always put salad cream on them as a treat for us. She said she got the idea from Brussels! Back in the 60’s that was a new thing for people in the UK serving fries with Mayo or salad cream!! 😊

      @@DWFood Curryworst special (not the same as currywurst in Deutschland). Special stands for mayonaise and curry ketchup with onions (I don't eat onions so I always ask without). Before banking the curryworst, or also called frikadel in some areas of our country, you need to cut the curryworst in the middle (in the lenght. Just an insicion, not cut it in 2.). After baking the mayo is added inside. Then the ketchup (tomato or curry) and than onions.

    I'm a Carni, my family have been Carnis for the past 5 generations, an our "shop" is a Fries shed "Friterie", we do fries, waffles and Doughnuts/Beignets.
    And they are absolutly right, Fries in Belgium is part of the traditions and the culture, EVERYONE as eaten fries in his life.
    And we proud ourselfs on this.

    The featured frites-shop Pitta de la Chapelle seriously has one of the BEST fries in Belgium!!! Each time I visit Brussels I can't leave the city without having some fries from there! So glad they are in this video!

    I visited Ostend in the 1970`s, and I can honestly say that Belgium fries are the best in the world when you buy them from street food cabins/outlets - in some places they even had coin operated vending machines cooking fries + Belgium has some of the largest and best selection of beers in the world.

      That's not how it works. Can you compare them to let's say fries in dhakka or delhi or Lahore or Kabul? No you can't and as they are part of the "world" you can't say Belgian fries are the best in the world. All you can say is they are the best you have had.

I remember the first time I went for fries in Belgium, expecting some culinary heaven. My take away joint back home made fries about a million times better. I’ve had fries in Belgium many times since: some are better than others, none are really special. I think I even had fries from the one in the video. Again, absolutely nothing special. Just fries.

      As a kid I remember all the fish and chip shops around me (no lie,4 )within a 10 minute walk would fry with beef dripping.
      When I get back to the UK these days good fish and chips are hard to find and finding ones that use dripping are like hens teeth.

    I'm from the Netherlands, and even though we got some good fries here I gotta say their fries and beers are the best in the world, if y'all never had Belgian monk beer, you have to try some.
    Their fries and the Belgian mayo are something you gotta have at least once in your life, the mayonaise is slightly tangy/lemony...not your ordinary mayonaise.

      Dutch mayonaise (officially fritessaus) is too sweet. Belgian and French mayonaise is how it should be. After all it comes from France anyway and the potatoes (Bintje) are from The Netherlands.

    A simple 'national' dish but the man from the friterie "Pitta de la Chapelle" summed up the basics:
    1) use good quality potatoes and cut to the right size (not the "allumettes" thin McDonnalds size)
    2) fry them using cow fat
    3) pre-fry them on a lower temp, let them dry off and fry again for extra crispiness.
    From what I understood from foreign friends the big difference - apart from the fries' quality - is the available sauces compared to the classic Mayo or Ketchup. This video does not at all show the diverse sauce selection most friteries have on offer!
    And yes, us Belgians indeed get a pack of fries when we return from vacation abroad :D it's tradition.
    Found good ones in Holland, Germany and France too but often in other countries the fries are decent or downright bad... Just my personal experience 🙂

      They are regulated by the AFSCA / FAVV which is a government body in charge of food regulation, as one of my relative who used to be a friterie owner told me you are only allow a certain amount of cooking before you have to replace the beef drip / oil in the fryer. Old cooking drip/oil carry carcinogens that is why it needs to be replaced on a regular basis

    Also there's the focus. This stall sells fries, that's it - it's 100% focus on one product and ensuring it's perfect, that's the biggest difference. A lot of chippies in the UK for example have bad chips because they're not the focus, not all since some do get it and cook them just as the Belgians do but many do not.

      i've been in belgium for a while, most frie stalls usually have a variety of industrial meats (look up "fricadelle" or "mexicano", if you found a dutch or belgian website it's probably it), some shawarma they call "pitta" and they give you the option to put il all together in a sandwich sometimes (but rarely) called the "mitraillette".
      Most places selling fries lately also just call themselves "Snack (something)", probably relieving them of the fry stall legal status (is my guess), but even in a "Frituur" or "Friterie" they will have those meats and sandwiches.
      Anyhow, all that to say that the "focus" on fries isn't that different from other types of cultural fast-foods like greek souvlaki or middle-eastern shawarma, the difference being there at least the meat is good, and the fries are ok, while in Belgium the fries are great, and the meat is terrible.
      (and it isn't 100% fries sorry for rambling ;) )

      Sadly many British fish and chip shops turn out horrid slimy, yellow undercooked chips, that do enormous damage to our tourist trade. You need to find a family run shop that has a reputation to maintain. The best chips are triple cooked, boiled until soft, dried then fried at a medium hot temperature until nearly done, then a final short fry at a very hot temperature to turn them crisp and golden brown.

    Brilliant! Year's ago I cycled from Amsterdam to the mediterranean and down the border with Belgium I talked with a Dutch potato farmer. He told me all the best of the Dutch Bintje potato's go to Belgium (esp. Farm Frites) because they select and pay better. The best is very important to the Belgium's. To fry in beef grease saturated fat is new to me. That is so much more healty than vegitable oil which are unstable oxidating oils, truly unhealthy. The tempratures preventing burning, they do make a art of it and so much more healthy! They say nowadays in USA restaurants they even add fructose sugar to the chips while friying in raffined corn or seed oils which makes them really unhealthy. Bravo Belgium!

    I am Belgian and let me tell you a little secret, the best fries come from old potatoes, people were not stupid, they know that you can't eat fries dayly, (i think even weekly it is best not to) so on a dayly basis potatoes were usually cooked or mashed instead, when they did make fries they usually used the older potatoes,
    though it depends on what you want, mostly in terms of texture, the older ones are a texture i can't describe acurately, but they are less rigid than the usual fresh potatoe fries but they taste amazing
    ofcourse double fried
    fryeries don't do this though, but in many ways that is normal, most don't peel them themselves either, we don't peel them at all, just clean them and cut them into fries; the skin is no objection

    I was cooking potato waffles in the pan next to beef burgers. The fat from the burgers really improved the waffles.
    They came out so crispy and flavorful. I've switched to lard and dripping for cooking now.

      I kinda have a similar story, I cooked some beef patties and had some leftover fat in the pan. I had some roast potatoes left over, so I cooked them in the pan with the beef fat.
      Nothing tastes as good as animal fat when frying stuff, it's awesome 👍

    Belgian food in general is beautiful! I used to go to a burger van in overijse that made really nice bicky burgers, they put them in a cone of paper, fill the burger and the rest of the cone with fries and then cover it in andalouse sauce. the burger meat was the best I've ever had and I also used to get a pot of snails. :)

      Haha At first I thought that was a big block of tofu he was putting in there didn't look beef at all, for a sec thought the secret was that they were cooked in tofu. But in the Netherlands and most of Europe they have a "Maoz Vegetarian/Vegan" chain that sells those style of fries and they tasted as good as the fries from anywhere else there. That was favorite place to eat actually by the time the trip was over.

    I was stationed in Mons, Belgium. I miss Fritte stands everywhere. With hot Samurai or curry mayo sauce. Best in the world. One of the few places you can have steak with fries and its not a dumb idea: Steak avec fritte.

      @@victorha9923 so far every chip shop I've tried, fries them in oil and only once, so they're either really dry almost like old chips left out, or really soft and mushy. They also usually have no colour, very pale, almost white.
      Chips need to be fried in tallow, and need to be fried twice. Also when trying to make them myself home, finding decent potatoes for chips is not easy. Maris pipers work ok but they're just not the same. You need really waxy potatoes for chips.

      @@cartouchator Sadly as a Brit I have to agree that many fish and chip shops here are mediocre and add to our poor reputation for food. You need to find a family owned chip shop that still uses beef dripping. There is a fish and chip shop of the year competition which may help you find a good restaurant. I know there is one in Aldeborough, Suffolk that has won several times. If you want to make good British style chips there is a recipe online from the 'Hairy Bikers' for triple cooked chips. You take a suitable potato, such as Maris Piper and cut it into chunky chips, then wash the chips until the water goes clear to remove the starch. Then boil your chips until they are soft. Dry your chips, then fry your chips at a medium hot temperature until nearly done. Remove your chips and heat up the oil until it is very hot. Then you give your chips a short fry until they are crisp and golden brown on the outside. Drain the chips thoroughly and serve. You can find the precise cooking temperatures in the 'Hairy Bikers' online recipe for triple cooked chips (ignore their earlier recipe for double cooked chips, this is better).They have a nice recipe for fried fish to accompany your chips too. Serve with mushy peas for a very tasty meal.

      @Cathal Q I agree you shouldn't trust random people on serious topics. But simply reminding people that passion in life is a good thing and makes one interesting is harmless in general.
      I think people who don't have a strong interest in anything are boring tbh

    I just made some of these. I blanched them for about three minutes and shook the water off of them before I deep-fried them in lard and tossed them in seasoning. That was great. I can eat three fist-sized potatoes in one sitting this way.

    Not sure Americans realize there are really two nationalities in Belgium. Flemish who speak basically Dutch and Walloons who speak French. Probably why mistakenly called “French” fries. Similar to Pennsylvania “Dutch” who are actually German descent.

      A long time ago the french speaking people of Belgium gave the americans fries, and they called it french fries bc they didnt know any better.

      Well German is a dialect of Dutch so it fits ;) (it split off from Dutch in their Zweite Lautverschiebung)

      Correction: officially there’re 3 nationalities. There’s also a eastern part that speaks German. this means 3 official languages, 3 x governments (actually more, since Brussel has also it’s part of typical Belgian logic)

    I would love to try those fries. Fries are so prevalent in my country, but so are many other unhealthy foods. They even brag out which potatoe they use here but ive never tried fries from that potato. Looks delicious!

    The best frittes in the world are from Belgium, with mayonnaise, or in a restaurant with mussels, absolutely delicious

      @@iltellya I’m not gonna lie to you, I visit Belgium all the time (I have family there) fish and chips has nothing on Belgian Fries... you should try it when you go out there, the Mayo is 10x better as well. English chips taste too raw, the fish is nice though

      @@Blaise761 Sadly there are lots of mediocre fish and chip shops in the UK, especially in the tourist areas, that turn out undercooked , slimy yellow chips, that add to our false reputation for bad food. Happily if you search them out there are excellent traditional family run businesses that use beef dripping to produce chips that are on a par with Belgian frites. If you combine properly cooked chips with a nice piece of cod or haddock and some mushy peas you have an outstanding meal.

The origin of French Fries is still disputed with people often favoring France over Belgium, the very name is said to originate from Belgiums (speaking French) while presenting the dish to US soldiers and them giving it the nickname: "French Fries".

    I cant loom at a precut frozen fry and think "that's potentially the best I'll ever taste"
    I've experienced it so often in Belgium.. it's when I visited the Netherlands and everything was handcut that i realised what a true tasty French fry is
