      Totally Agree ... He was so patient while cooking the pancake ... was never even curious as to is it done .. not done ... just waits calmly ... and when he flips over ... WhoA .. perfectly cooked

      Short of putting it under a broiler, it's the most effective way to melt the cheese without overcooking the Okonomiyaki in the process, I'd imagine.

    This is how I cook at home. Almost meditatively. Enjoying the steps and the preparation and the _cooking._ I'd hate to cook professionally, where time is money, and it's not your time, either, but the customer's.

      +Alonso Agreed. Cheese should be slowly baked. The fastest it should be cooked is 500 broiled, for pizza, just to get it browned. HUGZ

    Well in indonesia, sundanese actually we have the same food like okonomiyaki but its smaller and deep fried, we called it bala bala..

      I think those are the okonomiyaki sauce and mentaiko sauce (spicy cod roe and mayo)

      Okonomiyaki sauce is made with ketchup, Worcestershire sauce, oyster sauce and either sugar, soy sauce or honey.

    That looked so good! I'd love to visit Japan...three things keep me from doing it though. 1) It's expensive to fly out there, 2) The Canadian Peso is valueless at the moment and 3) I speak no Japanese (except the simple stuff).
