      I find it very cute that all the workers dressed like they work in a yoshoku restaurant. Most of the time when going to an okonomiyaki restaurant, the chefs go for the a lighter dress (t-shirt, happi coat, apron and hairband). It can get quite warm near the plates! Okonomiyaki is usually considered 'junk food' so this is different.

    Everyone is so good looking! Even the dad is so fashionable! Since Yousuke used to be a drummer, he can multitask very well by cooking several okonomiyaki at the same time. Keep this series going!

    I just love how you weave the story behind the owner and the staff into these shows in addition to showcase the food and the place itself. Most other Japan food channels almost exclusively showcase the food, but the best part of your video is how you humanize the place and makes it super interesting.

      That's almost why I prefer small mom and pop type of places. They are usually smaller so you get to chat with people's a little bit more. I get my morning latte from a lady who runs a coffee stand at a gas station. It's half the price of the same thing at Starbucks and just as good to me. It's nice chatting, and sharing pictures of our animals and stuff like that. Plus getting it from a place like that has other benefits. For example if I forgot to take cash out, since she doesn't do debit, she will still make me a coffee and I will just pay her double the next day.

      For real. I'm not a culinary student, but I've worked cooking in multiple different restaurants. I've also done a couple of other types of labor, but nothing has made me as tired as working in the restaurant industry. I fully believe it takes a special type of person that can work in one for a month and then decide "Yeah this is awesome I wanna keep doing it!"

      Culinary is hard, the hardest though is for sure landscaping. They are pretty similar in terms of having to work on your feet, just a lot more lifting in yard work.@@ViperOfMino

    I love how the japanese culture where the owner aware their staffs are going to setup their own business while they still willingly to guide them for each step despite knowing very well their staffs might be their rival in the same industry. Kudos to them!

      @@LastBastion in the US it's frowned upon and might even get you fired if you mention it. i was working for a locksmith company once and before being hired i had to sign a contract saying i wouldn't open my own locksmithing company within a certain radius of the one i was working for if i ever left the business.

    Its interesting how the son's owner casually mentions about their previous staff/s starting their own businesses after they learned from the restaurant. No sign of competitions or anything which i think attracts more positive vibes for the restaurant. Good job! I'd like to visit your shop in the future 😊

      In Japan its quite common for shop owners to take in apprentices to learn their craft and then open up their own business... I find it really beautiful. It shows that they treat their employees like a real human being and not simply a worker to bring only profit to them.

      i heard its a pretty common thing in Japan. Like it's more of a reputable thing, if your employees leave to open up a successful business. I guess it means the owner and restaurant, were doing a really good job, and the worker picked up a lot of good skills.

      @@Aeybiseediy You believe in a business only one side benefits? The business is offering a job, they pay you, and in exchange you provide your labor. A business owner has liability and responsibilities that an employee does not have. Nothing one sided about that. Also, while a business can exist without employees, for example, a small business owner doing landscaping, you can't have jobs without a business creating one in its expansion.

    Love this. The owner father walks out for 1 second and immediately screams strong artistic vibe. Must be a great business owner as well. The son should have no problem getting a girlfriend with his face and smile. The lunch looks great also. Makes me really want to try the VIP dinner.

    They all seem to be so nice, energetic and friendly people. You can see they like their job and they love other people, too. It must be an amazing place to work at. I hope the owner will meet the perfect girl soon! He deserves to be happy 😊

    I don’t know if it’s a requirement, but Paolo seems to always find the most charming/interesting people to interview. Do you have a casting call? Having a boss that looks so suave, the pressure to look as suave and expensive must be high. These family owned shops are something I marvel at, several generations having the same passion and deciding to continue their family legacy.

    Okonomiyaki was something I always looked forward to when I was a kid. There was a ma and pa shop that my auntie would take me to and they always made my own "special" okonomiyaki, which was just a smaller one for my size. I always loved watching the bonito dance on top. This video brought back a lot of warm happy memories for me, thank you Paolo! I can't be in Japan now with my family due to COVID and work, but I am thankful to have a look back at my childhood and seeing how things have changed (or remained the same) thanks to you and your videos!

    As someone who had worked in the service industry for 17 years. I really enjoy these mini documentary. Most people only show the food. I think the people behind are just as important.

    What I have noticed in these videos is that every manager of every smaller family like business does not hesitate to get whatever needs done done. There is no job beneath anyone. Oh and he sounded like he was proud that many people learned a craft there and went on to their own business. Not to say in the USA that never happens but the person often acts like a crime has been committed in their former staff leaving to pursue a similar business

    I think I know why I feel so good watching these videos. It's because of small things hidden between the lines such as: a business passed down from father to son, boss arriving first and working harder than the staff, everyone nice with each other, a lot of discipline and care with the work, the treatment of the customers. This is what a society that hasn't fallen apart culturally looks like. I feel like I've been robbed for not having that around me, I want to sue the boomers and the gen x for ruining things before I arrived

    This must be one of my favorite videos, a family business just hits differently, you can feel the care in every detail. My mom runs a traditional restaurant where i helped since i was 5, it was my grandma's and it will probably be passed down to my big brother, kinda frustating :( blessings to Yusuke and if he wants a girlfriend that he can run the restaurant with, I volunteer

    I love the food culture in Japan. One of my biggest regrets of returning to the States after living there for a long time is that the food culture in the US is no contest - there's just not much pride if any at all - there are some exceptions of course.

    I love your videos, Paolo, so I watched this one as I usually do. But then, I felt strange because I was looking at the dad and son, and their employees and I was like: « Did I just enter a manga fantasy or something?! Everyone of them is so handsome, seem nice, are dressed impeccably and genuinely seem to love and be good at their job. » This was a surprisingly hot episode. Lol.
    Yet, still super interesting. I love how you focus on both human and work, not just work, making your videos entertaining. Nobody can deny the amount of hard work involved in every single episode. Thank you so much for sharing!

    My daughter, who just turned 32, (and single) ☺️ said she would have to do takeout at this restaurant because she would be too nervous to eat there because the chef is so good looking. 😉 💕💕

    I remember when I tried my first okonomiyaki. Such an amazing experience! Behind the counter is a great series specially for the background stories and experiences and the families.     I'm really impressed by this cabbage cutting without a machine and I like this punchy decision to replace udon pasta with a very calculated cooking time, these people are really artists

    It’s another interesting and engaging video. Paolo has a talent for finding interesting and charismatic people for his videos, along with choosing subjects that have broad appeal.
    I wish the US would be more supportive of family owned restaurants and businesses in general. We have far too many mega chain restaurants that serve generic food, and the family-owned places just can’t compete. Regional cooking is getting lost under the weight of all those chains as well. It’s sad, and I wish we cared more about the independent owners and our food culture.

      America has serious problems with laziness, greed, a lack of honor, radical individualism, religious extremism, disregard for quality, etc... Japan values the opposite of all that. While Japan isn't perfect it's far better than the US

    Teppanyaki chef def. is one of the most rewarding restaurant jobs. Customers don't expect to get food as fast as possible, the entire process is part of the experience

    Yousuke is pretty good looking. I was surprised when he said he was single. I thought for sure someone would have picked that handsome man up. I would love to visit their shop one day. The food looked amazing. I have never gone to a place like this, but I would for sure stop in and have a bite there. Loved the video Paolo. Both shops looked amazing. Hopefully one day I'll drop by and try it.

    Okonomiyaki has always been my favorite Japanese ‘shomin-ryori’ (庶民料理, or ‘common people’s food’.) Fast, cheap, and actually decently well-balanced food since there’s a ton of cabbage it. It’s also customizable, since you can fairly easily swap out one ingredient for another, so it’s good for vegetarians…as long as you’re not too picky about fish-based ‘dashi’ in the mix. Oh, and it’s good with beer. 🍻

      I see no reason that the Osaka style takes 30 minutes to cook as it is mostly two layers, the Hiroshima style takes longer as it is layered separate. As for vegan that could be tough as both use egg as a batter, and Hiroshima has the additional fried egg layer.
      As much as I enjoyed Osaka okonomiyaki, the Hiroshima with clams was amazing and the eateries were much livelier with Toyo Carp paraphernalia and team member pictures all over the small places, along with games on TVs .

      @@AcridWhistle Yeah that doesn’t really make sense to me either. I think it only takes about 10 or 15 minutes at my local place. As for customizing to make it vegan, that could be tricky. (I have a feeling that a web search might turn up a solution, but not something we could request at a typical restaurant.)

      @TravelerPat I know what you mean, I think the ‘restaurant service’ approach is relatively new. (My local places give you the option to have it prepared for you, or cook it yourself at your table.)
