I havn't had true yakisoba since the 1990's when I was stationed with the military in Japan. I still miss the taste of it, I would have it every week. I think I was addicted to it. If you are going to have an addiction, this is the one to have.
I just wanted to say thank you for sharing these with the world. I always feel privileged to be able to watch the skills of the chefs and the cooks who prepare these things.
Cracking the egg into a cup first, before putting it on the cabbage, is a valuable technique. Even if it's rare, once in a blue moon you will have a spoiled egg, and if you drop it straight in, you'll have a mess on your hands. It happens barely ever here in finland, but the old grandmothers who taught me in cooking were very insistent, and for good reason. A rotten egg won't look any different on the surface, yet is a terrible mess.
Thank you for the great attention to detail & zooming in on the dishes! I want to taste all of the foods shown here SO BAD! Love how organized the chef and his staff are with the food and everything else. I would be honored to eat at this establishment.
I am always impressed with the with the organization, all the careful prep work, the fresh foods. Also, how the kitchen is set up with the minimal steps needed at the stove. Everything is so well placed there is no wasted movements. It is like a beautiful, flowing dance. Impressive to watch. I wish I could dine there. Thank you for sharing. It made me happy to watch. May your lives be blessed. 💐
I agree. But I always wonder why the kitchen floors are always so rough and dirty, unlike the rest of the restaurant floor, maybe not given much attention because is not seen as much?
@@pauloseibert I saw one video of a Japanese restaurant like this that had a narrow, covered drain running the full length down the work area. So maybe they power wash it after service. It is certainly disconcerting to see them splash water around with great abandon…😆

Such superior prep work and beautiful movement of well co-ordinated product blending simplify the frying and platter assembly! Think I have learned much from this accomplished chef.

its always so satisfying to see food being made from scratch. After spending years around US fast food and other businesses that serve "hot and ready" food, I feel like I need to take a culinary trip. Now to go make my breakfast
The fact that this is considered as streetfood in Japan, speaks for itself. ^^ As a German, if I relate our streetfood to this, it is most of the time unhealty, not very nurishing and often of very low quality. This here is the real stuff you want to eat!
What you ignore is that what you call street food is delivered in a busy city, constant customers, constant flow. This video is of a small time village, only a few customers per hour, so obviously there's more time to prepare and care for the food. Then agian: Das ist wie ne anständige Semmel vom Metzger. Wenn man das mit nem billigen Dönerladen von irgenwelchen Musels vergleicht, ist es klar, das die Japaner gewinnen :D
@@KitsuneHB that isn't how healthy and unhealthy is defined. This is healthy, but it does lack a little balance. That can be made up for with other meals. Not every meal needs to be a perfect balance. In general, the Japanese are some of the healthiest people in the world, so maybe we need to copy how they cook more.

Okonomiyaki is delicious! I was fortunate enough to try some in Hiroshima. This looks like the Osaka version though. I’m sure it’s delicious nonetheless 😋

Looks yummy and delish. Not into Japanese food as most of these I don't have much exposure of the food palette and picky of vegetables and amount of salt content 🧂🤏(gotta watch my salt intake). I would eat the egg steak but prefer my meat well done . I do admire the cooking skills and organization. That food plate looks like Japanese enchiladas 🫔. Great cooking video. 👍

The precision involved in the cooking reminds me of watching a surgeon undertaking a delicate procedure, ( the hygiene isnt to far off either) it is mesmerizing to watch. Not to mention how it wets the appetite, some of the dishes look so tasty and fresh. The calmness and preparation all come into play. Excellent work.
Ummm what? Did you not see the tile backslash at the beginning? Missing tiles and black mold behind it and dirty grout! I would never eat there that's a health code violation in most countries

White/transparent sauce is rice starch i believe. Used to help bind and hold the whole dish together. Gets crispy on the edges
