This is a very different version than I have ever seen or heard of with the pancake on the bottom. Normally it's the noodle w/cabbage or cabbage version (depending on what part of Japan you go to) with the white watery batter to encase everything with the black sauce and bonito flakes.
I believe the one where all the ingredients are mixed into the batter and then have mayo and sauce over it is know as the Kansai style also known as Osaka style Okonomiyaki. The one were the batter is made into a thin crepe like and then ingredients cooked separately is the Hiroshima style Okonomiyaki. I’m guessing this one takes more inspiration from the Hiroshima style.
This guy puts way more effort into the bottom pancake than any other I have watched. Some just cover the whole griddle at once. I wish I knew all the ingredients. I want one sans noodles!

I've never seen it prepared this way, but I guess when you're selling large quantities, you need to adapt the recipe for many portions.
well are you flying in to tokyo? bc when i went i was told "thats in osaka" it seemed very hard to find in tokyo i was not able to find it the 7 days i was there.

I didn't see where the bottom tortillas come. When you flipped it, I saw the lettuce and egg yoke on top when you flipped it. Where did the other tortilla shell come from? Hope I'm making sense.

It is usually pancake batter made with flour, egg, water and dashi powder, then shredded white/green cabbage, tempura scraps and an egg. After that, they are brushing an okonomiyaki sauce on top of it. It is a very simple recipe, but you can find more advanced Okonomiyaki recipes online or on youtube. I personally prefer them with pickled ginger and kewpie mayo added as well, oh and bonito flakes. It is super tasty.
That looks like I could eat it everyday for the rest of my life and never get bored of it.
I've been craving okonomoyaki since I started watching Ranma 1/2 as a child in the 90's. Still never tried it! I should finally make it myself.😭
