I made these after frantically searching for recipes that use up ripe bananas after seeing four almost completely brown ones in my fridge (i have no idea how they ripened so quickly i bought them three days ago)! It came together relatively quickly, but it definitely took more time than what's on the sheet, what with melting the butter warming up the bananas and the egg and chopping the chocolate that i had to do. Also, the recipe calls for three and i had four bananas so my batter was a bit looser. I hope they come out okay, just put them in the oven. Cheers John, and thanks for the recipe!
I always begin with 2 cups of flour for all of my muffin recipes for exactly 12 muffins. I live a mile above sea level so the extra flour works out great for some scientific reason. I tweak the other ingredients just a tad and the muffins rise to high heaven and are absolutely beautiful and delicious. I also use coconut sugar which is a lot better then white sugar, Other than this I follow your recipe and have never been disappointed. Thank you for sharing.

I made these yesterday and I'm very happy with the result! They have been a bit too sweet for me (even if I already skipped some "sugar" from the recipee) Because I'm on a keto diet I substituted sugar with erythritol and the wheat flour for almond, coconut and hazelnut flour and some oat bran! Then I "needed" to decorate them and I felt peanut butter was missing in this recipee. so I mede my own first improvised frosing using peanut butter, cocoa butter, coconut cream, crem cheese and confeccionated erythritol and It worked very well! Amazing! Thaaank yooou! I know banana is not very Keto-friendly, but I got 6 muffins and I used 2 bananas, so there is 1/3 banana in each one, that's not too bad!
These banana chocolate chip muffins came out AHMAZINGGG! Super light and fluffy. I substituted the white sugar for brown sugar + cane sugar and reduced the quantity to approx 1/3cups. Just the right amount of sweetness for me. I also used 1/3 cups of dark chocolate chips too. Lots of love and appreciation from Malaysia 🇲🇾
I just made them! They are so amazing! I put ALMOST the whole bag of chocolate chips, and I don’t recommend it. If you LOOOOVE chocolate and won’t get sick of it, then I think you should put the whole bag. But there was just so much chocolate and I wish that I put like half of the bag instead, so that the banana and cake would stand out more.

Hi Chef John 😊 I made both your muffin recipes yesterday. This one (Banana Chocolate Chip muffins) and the ( Oatmeal ) version. The Banana chocolate chip was super delicious and my sister loved it too, got 9 muffins. This is the recipe I will follow from now on. As for the Oatmeal version, I found it a little much oats for my liking but it was a nice recipe too, got 12 muffins. Next time, I'll reduce the oats and add some raisins. I divided this recipe in half and weighed most ingredients. I did use more chips. It made 5 muffins if you fill to top. Question. I whisked the one lg egg and divided the egg in half by weight. Would it have hurt the muffins to put the whole egg into the recipe?
I just made this! Made one slight change, i browned the butter and my god they’re good. I weirdly got 11 too. I even added an extra egg yolk and a 4th banana as they were small lol

The reason for over ripe bananas isn't just for softness, it's also for sweetness. Also I've noticed regular bananas should be almost solid brown but organic bananas would too far gone at that point, not sure why the difference but organic also taste better (one of the few things organic actually matters taste-wise)
My sweet grandma only ate overripe bananas. I remember her squeezing almost completely black bananas and saying, “almost ripe.” I miss her so much!

I doubled the recipe and added a cup of chocolate chips and a cup of butterscotch chips.
I have four boys, and let’s just say the 24 muffins did not last longer than three days.

I always imagine the scale flying out of the window when he pushes it. I love his channel, but it makes me anxious seeing that everytime 🤣

The reason for over ripe bananas isn't just for softness, it's also for sweetness. Also I've noticed regular bananas should be almost solid brown but organic bananas would too far gone at that point, not sure why the difference but organic also taste better (one of the few things organic actually matters taste-wise)
I added Cardamom and Nutmeg...it was delicious. I also tried it with chopped pineapple
