4 Levels of Banana Bread: Amateur to Food Scientist | Epicurious
Вставка
- Опубліковано 2 чер 2020
- We challenged chefs of three different skill levels - amateur John, home cook Gabi, and professional chef Sim Cass from the Institute of Culinary Education - to bake a fresh loaf of banana bread. Once each of them had presented their creation, we asked food scientist Rose to weigh-in on their choices. Which one of these beauties would you take a slice of first?
Check out the level 3 recipe on the ICE blog: www.ice.edu/blog/pan-de-plata...

😂❤
the Dean of baking bread. I mean.......that's a title some people would die for
Im impressed they have a dean of baking bread. Like thats pretty specific
@@MrIrishpunk baking is a pretty big thing
AsItIsRequired AsItIsRequired it is and i have respect for all aspects of culinary. I was just shocked it is specifically Dean of Baking Bread not Dean of Baking
Sim talks exactly how The Dean of Bread Baking would talk
I've never heard of it before hut i SWEAR that's the official sound.
bruh i just saw you on several AntCanada videos
found you again lol.
he has to be british!
I see you everywhere dude WHO ARE YOU ? My fbi agent..?
If quarantine baking has taught me anything, it’s that Gabrielle’s loaf fell because there’s no gluten to trap that co2 and get rise. I’m sure it was delicious, but the crumb immediately gives it away as gluten free. I’m disappointed our food scientist did not mention that, it’s kind of important.
Xanthan Gum is the way to go.
I don't know you'd make gluten free banana bread unless someone you know has Celiac
I also think the banana she put as a topping was a bit heavy and that's why it collapsed around the middle part
@@MalleusSemperVictor people believe it's more healthy. It's not and it's a pain to work with.. (my partner has celiac) however there's also people who are allergic to wheat.. It's not the same as celiac, but they tend to use a lot of the same flours.
I was diagnosed with celiac a couple months before Covid locked my state down. I’ve baked and cooked tons of things gluten free (cupcakes, double chocolate muffins, banana muffins, blondies, brownies, pizza dough, nuggets, pancakes, and of course, banana bread amongst other things), and all came out perfect! My bread didn’t cave in either! I’ve used Cup 4 Cup, Bob’s Red Mill 1 to 1, King Arthur, and Krusteaz! All of them worked just fine and the King Arthur didn’t even have xantham gum like the others (so I have no idea how it worked- but it did thankfully!). Good gluten free baking is 100 percent possible 😁

This is the first time I didn't feel like the Level 3 chef didn't go overboard with their ingredients. Like every ingredient was meticulously placed at each interval and had value in the recipe. Instead of just adding flashy and fancy ingredients for the hell of it. You sir are a master of baking and have earned my respect.

Frank would have harvested the bananas from his own personal tree.

Sim is the most underrated level 3 imo
Sim seems true to himself for some reason. He doesn't act for the camera, just ..... Deans. Just a really likeable grandfatherly character.

I'm in love with that guy!!! wish my grandfather was like him!
@@adroitdroid5989 Can confirm he's like this in real life. Super laid back and kind and a baking genius. A real Brit lol
For my banana bread, I usually use 4 bananas in 3 banana recipes, and add an extra egg. If you coat the top with brown sugar before putting it in the oven you get a nice sweet crumble on the top
You know you're witnessing a legend creating a miracle-tier banana bread when he doesn't say how many years he's been cooking and just that he's a dean
the LOOK after "a little bit of rum, don't go crazy" was 100% directed at penny

Penny drank the remainder of all rum
Love Sim. He’s a very chilled, down-to-earth Brit who admits he came from a poor & pretty rough background, did a cooking diploma in London as a very young teen, then travelled the world learning his craft. He’s achieved the highest status in his field and taught so many people along the way. Like Frank, Saul and many other Level 3 chefs, he has high standards but no pretensions. Just a top bloke.

@@yusfishdotcom7830 I think it’s just that you expect banana bread to be wet, I think his won’t taste dry, there is probably enough moisture for it not to.
Actually in the Philippines we use plantains more in banana breads because usually they ferment fast and the usual banana is more expensive than a plantain. It's actually more sweet. We use it in bananaque and turon and it hits close to home that he used plantains. We use it in banana breads too and u'll see it in bakeries here. It is more dry than the usual banana bread. But the flavor is more distinct and it kinda makes you nostalgic.

Tesla H yes
"We used bananas as a fruit but botanically they are a type of berry" Wait...berries arent fruit?
Ikr
By the botanical definition, a berry is a fruit that develops from a specific part of a single flower, is fleshy throughout, and does not have a line of weakness it splits along to release the seeds when ripe.
So to be strictly accurate about it, a berry is a type of fruit, that includes things like pumpkins and peppers that few people think of as berries - yes, a pumpkin is, technically, a berry. Strawberries, blackberries, and raspberries are not, they are aggregate fruit.
Daniel Spencer wow my whole life is a lie ;-; so technically if someone wants a berry smoothie I can just give them some pumpkins and peppers with water?
Wait this is so weird i read this exactly when she said that 🤯🤯🤯
Daniel Spencer hehe I can just imagine myself saying “Hi could I get an aggregate smoothie please?”
