I made these the other day. I highly recommend you bake these at a lower temp than 400 and for a shorter time. Mine were over baked and my oven is accurate! Seems like lots of other muffin recipes bake at 350 or 375 and for a shorter length of time. JMHO.
I learned a very, very long time ago to measure my sugar into my food processor (I have a mini) and process my orange jest with the sugar. It makes fabulously orange sugar instantly.

I'm sure you could! Dried cranberries work great in muffins. If you wanted to plump them up a bit you could also soak them in orange juice first and then strain them.

Since I can only find fresh cranberries in the produce section in Nov and Dec, I buy a few bags and just freeze them in freezer bags for scones or muffins any time of year. My best favorite muffin ever. . . I like to put in 1 cup of crushed walnuts in the batter, for a nice added flavor and crunch.

You can use all butter instead of half oil or all oil. It makes a world of difference. They are still moist but not greasy! Amazing muffins. 7:47
