- In this video I go to Los Algodones, Mexico for a teeth cleaning, stock up on some meds, and eat some TACOs!! Then back at camp I try making bread in a cast iron dutch oven for the first time. Thank you Luis for gifting me the dutch oven!

Brian I’ve done a lot of Dutch oven cooking. Your keeping it out of the wind is great. I have a fool proof formula for heat. If you have a 10” Dutch use 10 coals on top and 5 on bottom to get 350 degrees a couple more on top an one on bottom for 400 but the key is to pre heat the lid on your stove just like you would pre heat a oven. You can’t really get it to hot. 12” 12 on top 6 on bottom etc. Don’t over heat the bottom. Then every 10 minutes or so rotate the lid one direction and the bottom the other without opening the lid. Time it just like a conventional oven and resist the urge to peak until you smell the food and then wait a few minutes. Pretty soon you’ll be stacking 3 dutch ovens for a 2 item meal and a dessert. Good luck we used to cook meals for 20 on the river this way.

If it is not sourdough bread it needs to double in size before baking at a high heat. If sourdough shape the dough, put in your dutch oven, keep in a cool place overnight and bake in the morning at a high heat. It needs to bake quickly, the lower the heat, the longer it takes to bake which makes for a heavy doughy bread.

I was surprised to see that he basically did a "walk in" and got a dentist to clean his teeth ? Are those dentists trained in US or Mexico ?
Here in North Carolina my dentist can't get me in for 4 months for a cleaning!

Most of the dentists went to school in the US.
I lived in Mexico for 6 years and there was never a wait to see a doctor or and dentist. 5 times in the hospital ER with bad migraines given a private ER room with my own baton room. First visit to ER there all day was a total cost of $50 usd. The last one with a Sunday all night and had a doctor with me a year ago was 185 usd.
I just bought a Bayou Classic footless 2qt dutch oven. It is enough for one person to lift and move around. Cast iron dutch oven is really versatile. I can stir fry, fry, braise, make casserole/soup/dessert/bread. Its weight is worth it.
My dentist wanted 3 grand to do a deep cleaning, so I considered Mexico next time I was out that way. Then I discovered the local college (Eastern Florida State College) will do it for $30. Got my first appointment next week. I'm a little nervous, because it's pretty intensive work. But there's always Mexico if I don't like it.
If you have skipped a cleaning for 10 years, no dentist is going to do it for $30. You will go there and they will take a quick look and say you will need to come back a few times at least and you will need full xrays which are going to cost more money. Be realistic.

I literally just got back from my 2nd appointment at Eastern Florida State College a couple hours ago. The $30 I paid today covers x-rays and all 4 (quadrant) deep scaling appointments. If you really want to prove me wrong, call them now and ask them. I believe they're still there.
Also: haven't skipped a cleaning in 10 years. This just happens to be the 1st time they told me I needed a deep cleaning. So, yeah.
Also Also: I was more than an hour late for my appointment today because there was a fatal accident on 95 on my way.

My first cleaning there was $25 and it had been over 20 years since my last cleaning.👍🏼

My brother has a dental practice and from his stories about patients that skip routine cleanings it is not pretty nearly all of the time. Taking many lengthy visits to clean years of buildup away from most people that haven't bought floss in years.

For a 12inch dutch oven ,the ratio for briquettes is 9 on bottom and 15 on top.3under less and 3 more on top then size of pot.

I'm sure we would love to see some new country, the intermountain west is an op. Utah/Wyoming/MT. I spend most summers up there. Uinta Wastach in UT. onto Jackson WY/skirt Yellowstone and into the Flathead valley MT. Plenty of public land. There's just something special about the greater Yellowstone ecosystem.

It was nice to see a bit of Mexico. I definitely want to visit and grab a taco myself. It's going to be a while before we see temps in the 70's here in Michigan. I want to move into a van or a small camper and travel. I got to speed up my downsizing. I got a lot of stuff to get rid of yet!

Bread looked great for 1st time, maybe less coal on top a few more on bottom. To test if it is cooked tap the bottom of the loaf to hear a hollow sound then you are good to go, also cut when cold not hot, hope that helps happy baking ❤

Good start on the bread! A couple of tips from my experience…use pretty warm water..95-130 degrees…don’t be afraid of the heat…use more briquettes under the Dutch oven. Last but not least…don’t slice it for at least half an hr..otherwise it’ll be doughy. If you have an instant read thermometer, I think about 200 internal temp if I remember right. Bread/ dough is very forgiving. I like King Arthur bread flour too. Luis would be proud!
I am in Australia, where your Dutch Oven is our camp oven. Find yourself a recipe for Aussie damper, made in a camp oven. Trick is to almost burn the crust, best part of a damper. Eat hot with butter.

I live in a really cool 1972 international school bus. She is hard to leave at the park. Yet she is not ready for the long journey yet. So its the Vanagon. She be old n slow too. Old faithful. Love the walk over to Mexico. We definitely will be walking over when we go FT. Even with those are good prices. Nice to buy antibiotics if needed. Good price on the cleaning too. Nothing beats some good street 🌮 tacos too 👍🏼. Nice work on that bread 🥖 in the Dutch over.

If you cut the bread before it's cooled completely and you don't eat it all right away it will be kind of doughy when it cools off.
I'm very excited to go tour Mexico probably the Baja area though. thanks for another great video.

That was smart. Next time I go to Algodonas, I’ll be sure to purchase antibiotics. Getting sick in California can be expensive. Especially when all you need is $5 worth of antibiotics but have to pay almost $200 to get a prescription 😜
We’ve been three months in Mexico this winter. You could do a lot worse than drive south for lovely weather great good silly prices and great scenery. Cheers from our van in Oaxaca. Oh and my wife got her tooth work down in Los Algodones before we drove south.

definitely can let the bread get browner .. also when you take it out , let it cool completely ( it's still cooking on the inside ).. you'll hear hollow sound when you thump it on the bottom :-))) it's fun learning , isn't it???? 🥖 🍞
Enjoyed your going into Mexico and the Taco's looked real good. It good to be able to get dental work done at a reasonable cost. Sure was a nice park as well. Now that you have baked the bread you just need to tweak it. Sure looked good and at least you were able to toast it. Happy to see Kelly with you as always. It also helps to have coals under the Dutch oven when cooking the bread!
I go to Algadones myself. Did you know that for a couple dollars more, you can park the night before, stay in you rig, then be into Mexico to get things done and then be out without the long lines!

I don’t know if you’ll see this or if it’s already mentioned, but if you are looking for an off-road way through Oregon, look at the Oregon Outback “bikepacking” route, which starts in Klamath Falls, just across from California, and ends at the Deschutes River across from Washington. I rode it in my bike back in ~2014 and enjoyed it immensely. I imagine doing it on motorbikes would be equally fun.
It’s nothing too crazy, but it crosses right through the middle of the state and takes you through some amazing scenery, with some towns in between. We saw a number of motorcyclists riding of the same roads out there, and I personally know someone who is riding that course this summer.
