- I saw this recipe in a European magazine the other day and I just couldn't forget about it because well...I'm obsessed with potatoes and always in the hunt for something unique so it was an absolute must try for me. Ingredients:
3 Yukon gold potatoes (medium)
1 cup parmesan cheese
1/2 cup asiago or montasio cheese
2 tbsp butter
salt and pepper to taste
2 cups arugula
1/2 cup fennel tops
1/2 cup picked parsley
1/4 cup sliced red onion
2 tbsp sour cream
1 tbsp lemon juice
2 tbsp olive oil

Wow I did not expect this dish to pop up in a Byron Talbott video. Frico is actually the most popular dish in a very small region in the north-east of Italy (Friuli-Venezia Giulia) and it is not so popular in the rest of the country so you could call it niche. It is one of those “poor” dishes that aim at making a rich but cheap meal. Here every family makes it kinda different with the most popular variations including onions or pancetta or even sausage. Parmigiano reggiano is not so typical but it doesn’t matter because as I said, everyone makes with what is available. Maybe the potato-to-cheese ratio is a little too high because Frico is a cheese dish as much as it is a potato dish.

I do a version of this using parmesan and extra sharp cheddar and top it with 2 over easy eggs and hot sauce. My favorite weekend breakfast!!

That looks like the world’s greatest hash brown! Caramelized and crispy and totally filled with Parmigiano…amazing! I’ve never heard of cooking potatoes in this way but now I have to try it.

I used to make a salad almost exactly like this for just my fuck it salad. But my greens were rocket and frisée dunno if you grow or where it grows climate wise but always made a vibrant green and crisp salad.

I had sth similar in Northern China but comes without the toppings, only the potato pancake. They also put sweet potato or pumpkin slices, star anise and cinnamon powder in it
