  • Roasted chicken and potatoes can get awfully boring when it comes down to it.... every once in a while it's nice to switch it up to remind yourself that other options can and do exist. This is one of them and boy is it a fun recipe to impress. I hope you enjoy the recipe and make sure to drop a comment if you end up trying it out!
    Ingredients:
1 whole chicken leg (thigh and drumstick)
    Fresh thyme sprigs
    Fresh rosemary sprigs
    3-4 garlic cloves
    2 tbsp sour cream
    4 tbsp greek yogurt
    1 tbsp chopped fennel tops
    1 tsp minced garlic
    1 tsp minced lemon zest
    1 tbsp lemon juice
    2 Yukon gold potatoes
1/2 cup flavorless oil for cooking
    salt and pepper to taste

Bravo! Well done and really not at all that complicated for such an elegant-looking dish.

Those crispy potatoes looked so good!!! For the yogurt sour cream, I can see it being similarly tasty with dill pickle juice instead of lemon and dill instead of fennel 🤤

Byron I’ve been following you since the how to cut fruit videos a long time ago and I’m pretty sure I’ve watched them all 😅 love them!!
Question - have you ever thought about participating in any cooking show? (Ex. Master chef, next level chef etc.) I know you’ve worked at a Ramsays restaurant before but I’m genuinely curious if you ever thought about it or give it a try.

I have thought about it and believe it or not I turned down just about every cooking show you could imagine for one reason or another. It is something that I consider though…

I've got dried fennel, but can't remember what fresh tastes like. Now I got the cravings. How's your garden?

That'd be awesome with a nice steak, horseradish chive sauce at the bottom with some sauteed green beans. May have to play with this recipe. Thanks for the inspiration

Hey Byron, nice one. Do you think it would be a good idea to rinse the potatoes in water after you shred them?

You could, but I actually like using the starch to my advantage. Helps the darn thing stay intact. Lol.

Hey man, love your vids. The video quality itself has gone down though - the videos now are kinda pixelated and look lower resolution.
The last video that didn't look this way was your Frico video. Every video after that one has the slightly pixelated look.
If you just full-screen this video (above) and look at the title card at 0:16, you can see how the text just isn't sharp and looks funny.
Hope this gets tweaked to get back to normal!

Looks delicious! I'm curious, after roasting the lemon in the oven, does it still have the bitter taste of the rind
