Ingredients:
Musui Braised Chicken
4 chicken thighs - skin on
1 whole white onion - quartered
2 tbsp lemon zest
4 tbsp lemon juice
2 tbsp garlic- grated
2 tbsp torn fresh rosemary
1 tbsp salt
2 cups pumpkin -large dice
2 cups new potatoes - small
1/2 cup green chili - roasted and peeled
5-6 dried Anaheim/Hatch peppers
2 cups water
Buttermilk Biscuits
2 1/2 cups ap flour
2 tbsp baking powder
1 tsp salt
8oz diced cold butter
1 1/4 cup buttermilk
Whipped Ricotta Cream
1 cup heavy cream
1/2 cup brown sugar
1/2 cup ricotta
Blackberry Compote:
3 cups blackberries
1 cup sugar

Everything looks delicious. I love how it really seals in the flavor.
I'd like to try making some sausage rolls and also chicharrones in the vermicular. Also, maybe a meatloaf or some large meatballs. So many possibilities!
I believe I would try Peposo - I can just imagine the smell of that cooking all day!
I would want to make my mom's chicken cacciatore recipe in that ! Yum

I only use boneless skinless chicken breasts. All of the chicken, and no bones to worry about.
I would love to try to cook anything specially some mexican dishes! Now imagine some homemade bread!!
I would love to cook Jollof rice in this. It is a West African dish that tastes amazing when all the flavours are allowed to infuse the rice!

You just took buttermilk biscuits to the new level. The Musui-Kamado recipes are intriguing. I cooked 2 pieces of lamb I got from friends for lunch today. First time ever for lamb. Didn't know the cut, but it was like a small thick T-bone, not a leg. Was considering using cast iron, but wanted something with taller sides. The Musui-Kamado would have been great for that.

I would make braised duck with celeriac. I really think celeriac is one of the most underrated vegetables! I love cooking with cast iron, but have never seen something like this before. Very cool!

How can a closed pot be convection without air circulation? A convection oven is just a conventional one until you turn the fan on.

You definitely can!! There’s always a converter if need be.
If you’re standing in the kitten to cook then you don’t need to spend $700 for this. A good enameled cast iron on stove top will do the same. IMO. These are great recipes though. Thanks for the recipes.

I would make a delicious braise of chicken thighs with caramelized fennel, blood orange, and olives to try out this beautiful musui-kamado, but I have a feeling it would be used all the time. Lovely work, @ByronTalbott and @vermicular_global!
If I have a Musui-Kamado, I would braised beef brisket with potato and carrot but with a smoky smoky tare sauce with port reduction. Yukon mashed potato with shaved parmesan and grilled garlic broccolini. @vermicular_global
