Cavatelli Pasta, Marinated Tomatoes, & Broccolini

- Making pasta from scratch is always a good refresher for me and really starts the creative flavor machine going. This recipe can be adjusted in a multitude of ways and can be over the top or very basic in terms of ingredient complexity. I tend to go with simple lately so this is what I came up with. Drop a comment and let me know what direction you would go with and if you want to see something more complex or more simple recipes!
Ingredients:
Pasta:
1 1/2 cup 00 flour (adjust for consistency)
1/4 cup cold water
5 egg yolks
3 tbsp olive oil
1 tsp salt
Marinated Tomatoes:
1 cup sliced cherry tomatoes
1 garlic clove, grated
1 tsp rosemary, chopped
1 tsp thyme, chopped
3 tbsp olive oil
3 tbsp balsamic vinegar
salt and pepper to toste
Blanched broccolini (optional)
Sliced chives
Parmesan Cheese

Bowls indeed!! Thanks on the lighting comment. It was actually a real beam of sun! 😂 I don’t use any artificial lighting in my videos…tried a few times and just couldn’t get into it. I really like cooking and presenting food in a very natural environment.
After several years I can spot your thumbnails instantly; You have created a style/name/brand---very recognizable, memorable. Focused. Food I'd eat and dishes I'd attempt. Congrats on constructing kitchen to catch the sun. You think a lot, and it shows.

Nice, although I'm left wondering about stock, anchovy, capers, wine, if one or more of those might create tasty variations (thinking this before opening the Flavor Bible). The marinated tomatoes may very well carry it all the way, I suppose.

Those flavors would make this a very deep and complex pasta which would be beautiful. This on the other hand is just enough to be delicious and satisfying.

Pretty much any pasta, but works well with cut varieties. Rigatoni, penne, farfale, etc…

I buy the boxed pasta because I simply don't have the time or desire to make my own. I always use the jarred minced garlic that I keep in the fridge. Bring the pasta water to a boil first, then add the salt, stir, and drop my pasta. I never add broccoli or any vegetables to my pasta water while my pasta is cooking. It turns the water green (blanched beforehand or not)! And you look like it's WINTER in Tennessee... But Spring is here!
