It's just one of those fundamentals that you have to learn if you want to whip up some good comfort food. I always love making a fresh batch of dough and there is never a shortage of uses for it whether its breakfast, lunch, dinner, and especially dessert. Buttermilk Biscuits
2 1/2 cups ap flour
2 tbsp baking powder
1 tsp salt
8oz diced cold butter
1 1/4 cup buttermilk
Hollandaise:
2 egg yolks
8 oz cold diced butter
1 tsp cayenne pepper
1 tsp chili powder
1 tbsp paprika
lemon zest and juice
salt to taste

Hi Byron, I noticed you had some flour sprinkled on your baking sheet. Is that to make the dish non-stick? Just curious as sometimes I'm out of baking paper.
YUM! But, 2 things. I noticed you said to push straight down into the biscuit dough and not to turn as you're doing so with the biscuit cutter. I grew up doing it that way and my family ALWAYS made our biscuits in a WELL SEASONED SOUTHERN BLACK CAST-IRON SKILLET. I also flour my cutter, too. Maybe it's just a Southern thing. And I've never heard of HOT Hollandaise. South Louisiana girl here, and while it looks so good, the spicy aspect is a new one for me.
Glad you enjoyed the recipe and appreciate the insights! I’ve always been taught to push staring down otherwise you risk blending the outside layers together which will affect the rise. I totally forgot to flour the cutter, but I think I was saved a bit by the dusting on top. Spicy hollandaise was a last minute decision and boy was it a fun one. Adds a nice little spice that sets off the whole dish.
