Pan-Roasted Tilapia (Walmart Edition)

- I have been on a culinary tear lately with creating meals that are budget realistic, loaded with flavors we all can relate to and are easily accessible, and don't require a ton of kitchen know-how to get right. We all want good food....no one needs to become rich or a chef to enjoy their 3 meals a day...we all deserve it... here's a $15 meal that can easily feed a family of 4 and will beat most local bistro's "fish of the day" by a mile or at least match it. I hope you enjoy the recipe and please drop a comment if you're enjoying this type of content in particular.
95% of the ingredients are from Walmart with a few odds and ends from other stores.
Ingredients:
3 whole fish filets, Tilapia
3-4 large Yukon gold potatoes
1/2 cup whole Kalamata olives
1 lemon, sliced
1/2 cup fennel or parsley tops
2-3 garlic cloves
1 tbsp herbs de Provence (dried thyme, oregano, rosemary, marjoram)
salt and pepper to taste
1 tbsp butter
3-4 tbsp olive oil

Looks delicious! I'm curious, after roasting the lemon in the oven, does it still have the bitter taste of the rind?
The lemon tones down quite a bit, but there a little residual bitterness if the pith is super thick. It’s gets sweet because of the reduction of sugars, but still maintains the citric acid for that wonderful pop of citrus.
Nice, but what kind of olive oil? I'm guessing EVOO would burn, so maybe refined, assuming you've got the heat up high?
Secondly, it looks like you've got a 2-burner portable induction stovetop that lies flat on your counter (unless it's built-in; guessing it is). If it's not a built-in, do you have a link for it?

I used avocado oil to pan-roast the fish and a very average evoo at Walmart. Not overly picky with olive oil unless it’s really bitter. I did roast the potatoes at 400f+, but the oil doesn’t ever get to smoke point.
I bought my induction stove through a random google search 2 years ago and can’t find it for the life of me anymore. There’s loads of side by side induction options out there though…. Some noisier than others…some not a powerful…you have to try a few to get a good feel for what you need. I had to return two others before I found this one
Looks so fabulous and I love your style. However the connection to Walmart actually surprised me. Their politics are abhorrent and I won’t shop there. Again, truly surprised you would accept their endorsement.
Not sponsored on this post, but I have worked with them in the past. I shop there when we need things. It’s convenient, but I don’t agree with everything they do. Our local Walmart saved our butts when a tornado ripped through our town. Wonderful people, complex company. Not everything is so black and white, but I respect the conviction. I don’t subscribe to every companies ideology when I shop, but it’s worth noting from time to time.

As someone who works in the fish industry I wouldn’t touch tilapia even if I was starving. Spend a bit more money and get a different type of fish. But if you are going to get Tilapia make sure it’s sourced from anywhere but China. Netherlands, US, Canada and Ecuador are safer choices. But seriously, if you can stretch your budget a bit further get something else. There’s a reason Tilapia is cheap. 👍🏻
What other fish do you recommend please
@@sonuk3114 Pricier options are cod and haddock, cheaper options are hake and Pollock. All of them have a mild taste like tilapia. Could also use sea bass fillets. 👍
Hello, can you share why? Tilapia is a staple here in my country and I’m curious why.
Tilapia can be a controversial choice becuase of their diet. They’re waste eaters and tend to eat the waste of other fish and aquatic life…. I would agree with watching where it’s sourced, but wouldn’t cast the fish aside as a whole just because it eats a less than ideal diet for most consumers….even with all that knowledge of tilapia, we somehow still consume the heck out of it.
