Truffle Risotto & Parm Crisp

- A solid risotto recipe should be in every cooks back pocket and especially when you have some good truffled up ingredients lying around in need of some attention. Add a little whimsical parm crisp and you really have something worth remembering. I hope you enjoy the recipe and leave a recipe request in the comments!

Ingredients:
1 cup arborio rice
1 tbsp olive oil
2 tbsp minced onion
1 cup white wine
2-3 cups chicken stock, warm
2-3 tbsp truffle butter
truffle salt to taste
1 tsp truffle oil
3-4 tbsp shredded parmesan + 3-4 tbsp more for crisp
basil to finish (florets if on hand)
1 tbsp creme fraiche (optional, extra creamy)

Do you use a separate cutting board for onion, garlic, fragrant things like that? It seems like you don't... with my Boos block, even cleaning it with soap after each use, I've got to do a super deep clean with lemon, salt, baking soda, etc. otherwise things like potatoes, apples, bread, etc. starts smelling/tasting like leftover onion.. And I mean a deep clean that I have to do in steps over a day or two.
