EVEN if the eel was not dead (like... even if the brain was still alive), it couldn't feel is, as the connection between the muscles and the brain goes through the spinal cord, which is clearly severed. It also happened like 4 minutes after the eel was cut opened so everybody can sleep tight tonight, the Eel was long dead when that movement happened!

Its just the slime. The colour changed because of the slime that was on the eel, the lighting can be effected by it and the lighting was different when Hiro was preparing the eel, and it is still the same species because they have the same structure
