Fun fact, shellfish was once considered food for the extremely poor. There was actually a cookbook with a recipe 'for prisoners only', and it was basically lobster nuggets and dipping sauce
This is because before the trains and refregerating was invented, lobsters and other shellfish would just die and go baf before reaching further inland, thus reserving it basically to the coastal people

Correct, shellfish are cold blooded. But any food has a weird way of processing it. Beef gets a spike through the skull, chickens get a gun, but they are designed for minimal pain for the animal

This is like my 10th time coming back to this video for no good reason. It’s just so interesting even though I rarely prepare shellfish for myself unless I go to a boil without things being pre-peeled/prepared.

In regards to the mustard of the crab, take what he says of "Don't throw it out" with a grain of salt. While it is definitely delicious, depending on where you are and/or what time of year it is, throwing it out and not eating it is actually the better thing to do. The mustard of the crab can contain pollutants which contain toxins which are heat resistant.

I live far away from the ocean, and don't have easy access to most shellfish. Nevertheless, I love watching this. Hands-on education is always interesting to watch.

For as much garbage is on YT it's stuff like this that brings me back. I have so much more confidence in my cooking thanks to videos like this.
About oysters : Here in France, we do not keep the initial "juice" (which is essentially sea water or whatever type of water it has spent the few several days or weeks) but we rather discard it. We then lay the oyster flat and a second juice will appear which is much tastier and will also make the oyster meat more firm.

Its always so insane to me how easy to take apart shellfish are. Like, they have shells specifically for protection, but this man is taking apart crabs like they're a Lego set
To be fair most fish dont have aposable thumbs that can get under the hinges of the shells where it's nice and weak
Also if the roles where reversed the lobster wouldn't need a knife to do that
I mean, fish don't have knives specifically to tear apart armor.
With crabs and related things like lobsters, they can choose to detach legs and such anyway as a defence, similar to lizards and their tails, so it makes sense that they are easy to pull apart. You shouldn't find it insane, it's not exactly a secret that they can do this.
There's actually plenty of examples, even on land, of exoskeletons or shells being impenetrable until you find the weak spot..
I dont know why this and the fish video are my comfort videos but whenever I see it recommended i must watch it.

Lobster leg meat is fun and easy.
Crawfish head juices are delicious.
European flats taste like batteries.
Geoducks are unique.
Sea urchin roe sacks are super delicious.

In my country, whenever we go to the beach, those who are capable would dive and get some sea urchins then share it with everyone. I don't like raw meat so I don't eat it but it's nice to see everyone enjoying it. I don't get why people like it tho. It looks unappetizing to me.

Another tip, if you try to open up a crab especially the claw part but you don't have gloves nor scissors nearby, the easiest way to do it is to bite the exoskeletons off. No you do not eat them, you just bite them hard enough until you hear a crack, then open them up to get the meat.

I just tried mussels, and they are delicious, they dont taste fishy at all, it has a texture like squid and has a mild taste, but you should prepare it with parsley and garlic for the best taste
