      Exactly, and this is a perfect example - the combination of garbanzo beans plus rice equals a complete plant-based protein, and the veggies round out the nutrition. Serve this with a crisp green salad and a chunk of crusty bread, and you've reached vegan Nirvana -- throw in a glass of wine, and I'm in heaven, too 😁💖

    Albert- I made this dish today for dinner and it was fantastic! The only thing that I changed was adding 8 jumbo shrimps that I precooked in the pan before starting the rice dish; I cut them in half and added them to the dish after it was finished. The dish is great without the shrimps. I definitely will be making this again. Thank you for sharing.

    This is one of the best cooking sites for taking regular 'normal' ingredients that you can get at stores anywhere in the world and making them very edible and delicious in a short amount of time--you are a really good cook and should be up there with Chef Andres on the cooking channel...thanks for all of your great recipe idead! dt sandlin, charleston, sc, usa

    Mi hija es pece-vegetariana, (no vegana)... me encanta tu ejecución en la técnica y la importancia histórica que datas al describirla y como aportas tanto sabor y la aromatización con el romero ( una de sus espacias favoritas) aporta mucho al plato, sencillamente maravillosa!!     Tried this today … it came out perfect! Very tasty! To kick it up a notch I added 1 tablespoon of ghee (clarified butter) to my plate and it was fantastic. Thank you!

    Just made this! Incredibly flavourful and tasty. The only change I made was to add a tiny dash of turmeric to bring out the yellow colour in the dish.

    I love this channel! Does anyone know of a Spanish cooking channel that is in Spanish? I listen to Mexican cooking channels to practice my spanish, but I would like to also listen in Spanish from Spain as well.

    Fascinating way you cook your rice, same as Paella. I am wondering how my forefathers did it during the Spanish time. I am sure it didn't change in the last 100 years.
    In the Philippines we cook it on a covered pot. We wait for it until it boils, then remove the cover to simmer. By this time it's almost cooked. Then we cover it again. We turn off the heat depending if you want to eat dry or moist. For flavors, sometimes we put lemon grass, that's as far as I can remember. Otherwise, if we want more flavor - go for Paella.
    Quite interesting to know how our way of cooking rice have changed in the last 400 years. Of course, the current practice is to simply use a rice cooker. Lol

    Thank you. Great recipe. Do a historical dish mentioned in Don Quixote, and historical dishes from throughout Spain.. I noticed that this recipe predated the Colombian Exchange, no New World ingredients like guindillas, pimento, tomatoes, and so on.

    Is saffron really part of a farmer's dish? It is very expensive today and more then.

    What I have on hand is jasmine rice. Can I substitute it for the round rice?

      Absolutely, though you might want to add in less broth as jasmine requires less than round rice, I would say about 2 1/2 cups (595 ml), much love

    Sounds delicious and I am going to try it. But I don't think that medieval Spanish peasants could afford this. I don't know about rice. Was it grown in Spain in the Middle Ages? Even if, Saffron was surely a luxury only available to the richest, and salt was also a luxury in medieval times. The dish must hail from a later date!

    I'm middle eastern descent and I think I ate too many garbanzo beans in my growing up days so I no longer like them. Could I substitute a white bean like navy or kidney in this rice?

    I have a question I know garbanzo beans are part of your culture but my family has a problem with the texture of them are there any other beans that you might recommend we actually eat most beans it's the little I don't know crunch garbandos just have a different texture to them I'd really like to know I'd like to serve this as a main or a side and my household I think this would I'm thinking like a kidney bean or a cannellini both might break down but if you handle them very carefully they might not any other suggestions

    another thought for additional publicity--why don't you contact Chef Andres and ask to join one of his charity benefits after a natural disaster--he feeds so many people--and you would meet so many people in the food prep business--he does a lot of good--plus, you might want to put together a simple cookbook and put it up for sale...good luck...dts

    Every time you use garlic, I say to myself “no”. You put it in so early. I love garlic and tend to put it in towards the end. Maybe a minute after sautéing the carrots, onions and celery. Or maybe when you add the broth? I see you say you were born in Valencia, but where did you grow up?

      if the garlic is roughly chopped I add it in early as the flavors incorporate better, if the garlic is finely minced I add a couple minutes later, as I am looking for more of a fragrant garlic flavor, born in VLC raised in California :) much love
