      I'm from Califorinia, did my DNA test, and I'm more Spanish than the King of Spain. The only survivor of the Catholic Monarchy, Ferdinand and lsabella, are in the female line of Scandinavian royalty. They died out everywhere else.

    Dear Albert
    I find the fact that you are continuously able to amaze us all with new potato recipes remarkable. Many of these I have tried and none of them have ever failed or not lived up to expectations. There seems to be an endless stream of recipes and I believe Spanish cuisine has more variations than UK & Ireland.
    Is this because the Spanish were way ahead in the discovery of the potato in the new world or because in times of poverty they were far more inventive in the use of the potato as a staple. Maybe in the UK we relegated it to a back up and never let it reach it’s full potential. Muchas Gracias and Godspeed to your efforts.

      La cocina española es rica, pero este señor NO hace cocina española. Sólo "al estilo español" Por ejemplo: un español JAMAS pondría pimienta negra en un arroz en paella. En ninguno. Créame. Soy cocinero y español.

    What a great dish. I want to try this.
    I found this video from a search on Spanish Civil War food after reading in "The Anarchists of Casas Viejas" by Jerome Mintz where Pepe Pareja tells a story of sharing vegetarian meals with his friend Gallinito until the Guardia Civil stepped in and discouraged them from doing so. This was in 1932 before the civil war actually broke out but the ingredients and techniques seem like a plausible answer to the question of what Spanish vegetarians in that period might've eaten.
    Thank you for posting this.

    If somebody doesnt like olive oil, garlic, onion, paprika, bell pepper and tomato, they will have a serious problem with your channel, as there seem to be not many recipes in spanish cuisines without most of those ingredients ;-).
    Luckily I like all those ingredients, and I find your channel absolutely amazing. I have been watching so many videos since I discovered it a few days ago, and I look forward to cook and enjoy most of them. Right now I am thinking of throwing a Tapas party for family and / or a couple of friends (following the COVID rules of course). I just dont really know how to handle this, as I wish to prepare several warm Tapas, and also prepare some cold Tapas without them getting soggy. Any tipps on that ?

    I will certainly be doing that to my list of dishes although en los años de hambre I doubt that people would have used half a pepper. You would use what you had and quite often had a crowd to feed.

    • @NNLR-cm9mc
      @NNLR-cm9mc 3 роки тому

      In fact, peppers, potatoes, or for instance, corn were accepted precisely because that period of time where starvation was the norm! Thus, this type of rice recipe fits perfectly. Now, one should take into consideration that potatoes and rice are very filling (perfect to feed a crowd) and peppers were used as both, seasoning and vegetables! So it actually makes sense to use only half of it :)

    Dear Albert, thanks for mentioning that you don't have to peel the potato. I'd just like to add -- it's much better if you DON'T peel your potato, because something like 85% of all the vitamins in the potato are in the skin, or right under it! So scrub your potato nice and clean, but don't waste the nutritious skin (which also adds fiber and texture to your dish). Wonderful recipe!
