OK I dared to modify the recipe a bit. Instead of boiling the cauliflower I steamed it. Takes a bit longer but you have much more control over the donness. Steamed in a pot over a steaming basket it took mine 7 minutes to be perfectly cooked. And guess what, more flavour remains in the cauliflower, and not passing into the boiling water.
Thank you for the tip. I think we should at least soak the cauliflower in boiling water for at least 10seconds to kill the worms,germs if there are any and then steam it. I have seen worms in organic cauliflower

Great recipe! When I make roasted cauliflower, Instead of boiling, I steam the florets in the pressure cooker (just a tiny bit of water at the ground of the pot) for 5 minutes. That way I lose fewer nutrients and I think the texture is also firmer (which I like more) than when cooked in water.

I learned to make this when I lived in Madrid, but it was backwards from how you do it. The raw cauliflower was sautéed in the garlic oil until it was a little browned & then a little water was added & you put the lid on to steam it until done. The idea was to use just the right amount of water so it was done just as the water was gone & you got a little sauce for it. It is delicious! ajo ajo ajo!!!!!!!
Actually no, initially I thought that its a very good idea. I have done this and takes too long for cauliflower to cook this way; by the time it is done all the flavors are by by, gonne, and also the paprika colour turns to a not so pleasant brown, to say the least. All that remains is the black pepper and a bit of smokiness from the paprika. Still, it is very difficult to control the cauliflower doneness by boiling because it is really fast, and it is different from one cauliflower to another. It is extremely easy to overcook it by boiling, mine was mushy after just 2 minutes boiling, no way 4 to 6 minutes as in the video. Next time I will try steaming, it is slower and hopefully it is more controllable.

very good. quick and easy and tastes perfect. i tried today. i would recommend to blanch the cauliflower only about 3 minutes. you can later adapt the consistency while frying it in the pan. you want that crunch that the young man here produces in the end. you can drop some roasted almonds flakes on top once serving. it gives it a moorish taste.

I have watched 4 recipes on this channel now and every single one had tons of garlic. I love it. I know pretty much nothing about spanish cuisine, but this looks like a promising start.:D
On my (the opposite) side of Europe cauliflower is usually boiled soft, sometimes even mushy, and served with bread crumbs fried in butter on top. Of the concoction, only the bread crumbs taste good, and the rest smells bad, giving everyone a lifelong hate of cauliflower. Around the Mediterranean, however, people serve cauliflower fried and it tastes great. I will try out this recipe today for afternoon snack and I bet it will be a hit!
Definitely a recipe to keep in my head, along with countless others. I would like to suggest an alternate version of this: Cook/boil the cauliflower until it's only half done (about 2 minutes or so depending on the size of the florets) and continue with the original recipe; instead of putting the cauliflower into a serving dish, put it on a parchment lined sheet tray and bake in an oven preheated to °350F for 7 to 10 minutes (a bit less if you have a convection oven). FYI. I love using Smoked Paprika. Along with ground coriander, it's an underrated and underused spice.

My partner usually cooks and this week I’m alone with a fridge of local grown produce. I found a cauliflower and didn’t know what to do with it. I used cold pressed coconut oil instead of the extra virgin olive oil. So simple and the flavours all amazing. Love it. I like it a little salty as well. Reminds me of the Chinese salty pork and beans dish. Much gratitude

One thing I would like to suggest, is that instead of allowing the water from the stockpot to run down the drain, to instead capture it in a container/pot, and after it has cooled off, find someway of using it, like water plants or grass with it. There are so many places that are in draught right now. Water is a valuable resource, even if you are fortunate enough not to be effected by draught. And because I do live in a pretty dry area, when making this beautiful dish tonight, I'll be steaming the cauliflower instead of boiling it, so that I'm using less water. Anyway, just a thought.

Made this today, and it was awesome! It's going into the rotation. The only thing I did different was cook the cauliflower in water with a chicken stock cube, and then use the water for soup.

This looks wonderful - have been buying frozen breaded cauliflower, but all the prices of food are going so high now, this went up $1.00, now this week up $1.50 - and that is almost $10.00 for just a small bag of breaded cauliflower. @@InflewEnza30boiling water is 100C and at that point it becomes steam. Heat is what kills germs and 100C steam is as effective as 100C water.

just roll the lightly boiled cauli in a small dish of soy sauce, that way you dont apply heat twice, which destroys the nutrients in most vegetables.

Spanish garlic cauliflower was so delicious and made a great hit. Te taste of the cauliflower was enhanced by the garlic and paprika and I’m only sorry I did not make more. Lovely. I’m gong to try all the Spain on a Fork recipes one by one. Susan

This looks wonderful - have been buying frozen breaded cauliflower, but all the prices of food are going so high now, this went up $1.00, now this week up $1.50 - and that is almost $10.00 for just a small bag of breaded cauliflower.
