I teach cookery. One of the things I impress on students is: Basics first. No point trying to make an elaborate meal if you haven't mastered basic techniques. They are the foundation of everything. The other thing when learning is: Only cook food that you like. No point in making something that you already hate. You want to eat and enjoy your creation! Good luck on your new adventure. Once you've had a few successes, and others appreciate them, your confidence will encourage you to go further and further. One of my students didn't even know how to toast bread. You should see her now, whipping up party food for kids, and full course meals for adults!
This is what kids should be eating at their school cafeterias in USA. Nutritious, delicious, inexpensive and compatible with different dietary choices. Instead they get pizza where the tomato sauce counts as a vegetable!
That is awful, here in the UK my granddaughter has roast chicken and vegetables, fish sometimes, she loves the dinners. Not all schools have chefs on the premises though
I'm Swedish but my parents are from Chile and they have cooked this for me. So this delicious dish is not only enjoyed in Spain but also in Latin America 😊
I'm chilean too and yeah, this stew is all over Latinamerica, I think its all a joint effort over time, for instance, potatoes and peppers are native from Latinamerica, they didn't exist anywhere else for a long time, but there were no lentils in America until the europeans arrived; carrots on the other hand, are native from Iran/Afghanistan. The stew just keep evolving over centuries.

Another thing I love about your videos is that you always give exact ingredient measures and cooking times, which is important when trying a recipe for the first time. I made this tonight May 11, 2023. My wife and I LOVED IT. The hardest part in preparing this delicious recipe is peeling the carrots and potatoes. I will definitely make this again.
If you scrub the potatoes really well there is no need to peel them; lots of fiber and nutrients (esp. antioxidants) in the peels. I only peel my spuds when serving company and never for family ;)
This is one of my favorite dishes from my childhood and still make it now. My eldest son recently asked me for the recipe but I don’t measure anything!!! Just sent this to him he’ll be so happy he can make it from a recipe now 🥰

Looks like if a hug were a meal. Lentils is one of my favorite foods, so hearty and comforting. Watching this is making me long for winter because when it's cold out I can eat lentil and veggie stews and soups every day
I like to add a little red wine when it is cooking. I have used celery in this recipe as well. I have used a hamhock for more flavor. When finished, I top it off with parsley, olive oil, sea salt, and a dollop of sour cream on top. Exquisite!

This channel is about Spanish food so i wanted to state the obvious...if you are going for Spanish flavor add chorizo and follow the traditional methods as were outlined in this channel's recipe. Many ways to make them and many ways will be delicious.
In Spain we have another version with chorizo and serrano ham chunks (be careful with salt then) and some red wine too, so is not that different. You can change the hamhock for chorizo next time if you want to give it a try. We make two different versions at home indeed. One with vegetables only without wine and with a little bit of vinegar in the end once in the plate and the one with chorizo and red wine and without vinegar. I don't know if these two versions are from different places in Spain or one of them is the Easter version, as it was not allowed to eat meat.

This looks, delicious. I will definitely try it. PS, If lentils/beans give you flatulence, use a good pinch of asafoetida (hing in Hindi) during the cooking. You can buy it online or in an Asian food store if you're near one. I use it all the time when cooking Indian lentil or bean dishes.
Good advice. However, if, instead of eating meat, you ate more legumes, your intestines would not act up. It's the things you rarely eat that make gas.
I lived in Spain for two years long ago, 1980-1982. I spent most of my time in Andalucia (southern Spain) and the Canary Islands. One fond memory of the 9 months I spent living in Sevilla with friends, was our nearly daily lunch trek to a small bar/cafe for a quick, cheap, deliciious lunch. The menu was limited, and when we entered the waiter frequently shouted, "Hoy hay lentejas y ensalada," or "Today we have lentils and salad," and that was always music to our ears. Love this lentil stew and I continue to cook it to this day, along with a frequent Spanish tortilla or paella. Love the food of Spain!

I watched already countless videos from this channel, and cooked several of the delicious dishes, and just realized that all the recipes are vegetarian.
Lentejas is my favourite starter here in Murcia but I’ve never seen a vegetarian version as shown here. They always add chunks of chorizo and lardons of jamon or bacon to the recipe. Whatever your choice, it’s delicious.
I'm from Murcia myself and, as you pointed out, I've never seen a veggie version of the dish. Only in canned food. Maybe it's something from other regions of Spain... Personally, I love my lentejas with chorizo, very fatty bacon and pork ribs (the latter is the best part of the dish for me, so tender and full of flavour). No need to say that lentejas is actually my all-time favourite dish xD

Thank you. This is my favorite for lentils thus far. I am not vegan, so I used chicken stock instead of veg. and a house tomato/marinara beacuse I make it every year and keep frozen cubes all year long, vs sauce, added fresh tomatoes too, with a dash of redwine vinegar and oilve oil on top prior to serving. This is one of the easiest to make, and your directions are easy to folllow. Thanks again.
I made this for the first time over the weekend and it was so easy (and oddly satisfying). When I tried it straight away I thought it was a little bland until I added some salt, pepper, vinegar and olive oil. We made this last night, the full recipe even though there are only two of us. It was quite outstanding and very delicious. We had enough left over for lunch to day. Next time we will try with green lentils and just a tiny bit of chilli to give some zing. Definitely now on our favourites list!

I live in Andalucía and I absolutely love real Spanish food - lentil stews are very popular here and a lot of people sprinkle white wine vinegar on top, which is really delicious! Eating it now - Oh my! This is literally the BEST lentil stew I've ever eaten, and I have had a LOT of lentil stew! Vegan-friendly, hearty, easy to make, and healthy! What more can I ask for? Another triumph!
Looks delicious! I'm Dominican and in my family we make it very similar, only substituting a few of the produce. We don't use paprika, auyama instead of potatoes and carrots, and cilantro instead of bay leaves and parsley. I'm definitely going to try your version because those flavors look fantastic too.

Lentils are amazing, in France we have the "Petit salé aux lentilles" which is a great classic but takes way more time to prepare and cook (and won’t be suited for veggetarians or people who won’t eat porc I’m afraid), I will try your spanish recipe asap 😋

Just made this - delish! I used the split orange lentils I had in the cupboard. I added shredded ham hock, which goes beautifully with this dish. No salt - probably enough salt in the stock I used - but lashings of black pepper. Very nice.
Interesting dish. I m greek and we have a similar dish but we keep it simple. We boil the lentils once , throw the first foaming water , we boil again and we add a little oil , onion , a little garlic and one-two laurel leaves. At the end five minutes before removing from fire we add origanum ( it gets bitter if cooked a lot) and finally some virgin olive oil , after removing from fire. The taste is amazing since you feel the taste of lentils not disguised by the variety of vegetables with the final touch of origanum. You eat with a food home-style bread and maybe some olives and you are in heaven...
The reason to throw the first water away is that in the boiling water the lentils released a lot of a kind of sugar types which typical let getting you become a ballon after eating lentils. So changing the boiling water makes them easier to digest :)
@@odysseasntalias5950 with the vinegar its also pretty common in Germany too but there u use also always bacon cubes at the beginning - instead of olive oil… So the typical brown lentil dishes about whole Europe seaming to be in general pretty equal 😅
The addition of the potatoes and peppers has not been an addition to my lentil soups. However this is a lentil STEW - and man did you make my mouth water. Definitely making this tonight. Thanks so much for this recipe - definitely a heart warming dish.

Anyway, I followed your recipe with the exception of the vegetable broth so I substituted with with chicken broth. The lentils cooked in 25 minutes and they were wonderfully tasting. I've just made this, tasted fantastic as expected. I used green lentils and added Turkish Sucuk instead of Chorizo which gave the stew even more of a garlic flavour.
I love lentils. Just bought some red lentils because that's all I could find at the store. Never cooked them before and didn't know they get soggy. I usually just add brown lentils to my turkey soup. To my knowledge, my Spanish grandmother never made a lentil dish. We have no handed down recipes. (She did cook a lot of garbanzos.)
My mother was born and raised in Zamora Spain and used to make the exact same thing. Sometimes she'd add a ham hock or chorizo. Delicious, filling, and inexpensive! Thanks for this!
YUM! When I visited Malaga many years ago, my sister and I ate lentil soup almost every day at a small restaurant frequented by locals. I made your recipe with bone broth and oregano (because I did not have a bay leaf). It was amazing and just how I remembered it! Terrific recipe, easy and quick too .... I have made this 3 times now ..... The first was according to the video, with the 2ndgo, I added some chorizo, dry sherry cayenne also added cans of chick peas and white kidney beans as I had no more lentils ..... Then ..... for number 3 ...... I used up some shrimp I had and substituted dry vermouth instead of the sherry ..... It's been different each time ..... but still fantastic Oh ..... and it freezes well too. Great channel ..... thanks

As always - a nice recipe and an interesting, Mediterranean variant. I love lentil stew, but my German variant differs in nuances. I use "Mirepoix" instead of peppers and tomatoes. In addition to salt, pepper, laurel, clove and cinnamon are used as spices. This is then bound with dark "Roux". In the south of Germany, lentil stew is often eaten with spaetzle (a type of pasta) and sausages. However, I would omit the potatoes

Bravo, this is a classic Spanish dish. You forgot one thing though - add a glug of olive oil before serving and serve with good bread. Dishes like this clearly have their origins with poverty but can become wonderful with additional ingredients like the ones in the video. Pork and/or chorizo is often added but.....I once made the Italian version of this with the best lentils in the world (Norcia) and added the traditional wild boar sausage. The lentils were so delicious that the tasty sausage wasn't necessary. Get the best lentils you can afford because they absorb flavour like a sponge. A cheap simple but great ingredient which could easily help with the problem of food poverty in countries like the U.K if people could cook dishes like this one.
@@montesierra717 Totally agree. It's delicious, healthy and affordable. These ingredients are, as you say, very humble. It's not a recipe that has to be followed by the letter either. You can add or remove some elements of it.
Lentejas and other staples used to be cheaper now they are becoming expensive because of demand (in average Lentejas $3, Garbanzos $3.5 and Habas $3.75 dollar per kg respectively, as reference good beef $6 dollar/kg) in this part of the world.

Lentejas is my favourite starter here in Murcia but I’ve never seen a vegetarian version as shown here. They always add chunks of chorizo and lardons of jamon or bacon to the recipe. Whatever your choice, it’s delicious.
I'm from Murcia myself and, as you pointed out, I've never seen a veggie version of the dish. Only in canned food. Maybe it's something from other regions of Spain... Personally, I love my lentejas with chorizo, very fatty bacon and pork ribs (the latter is the best part of the dish for me, so tender and full of flavour). No need to say that lentejas is actually my all-time favourite dish xD
Lentejas viudas or lentejas estofadas, no meats added, maybe more common in Central Spain.
This is easy, healthy and uses things we already have in our pantries. I love a meal like this with cold weather coming on. Thanks. I will be referring back to this recipe.

Thank you. This is my favorite for lentils thus far. I am not vegan, so I used chicken stock instead of veg. and a house tomato/marinara beacuse I make it every year and keep frozen cubes all year long, vs sauce, added fresh tomatoes too, with a dash of redwine vinegar and oilve oil on top prior to serving. This is one of the easiest to make, and your directions are easy to folllow. Thanks again.

I made this for the first time over the weekend and it was so easy (and oddly satisfying).
When I tried it straight away I thought it was a little bland until I added some salt, pepper, vinegar and olive oil.
But when I had the leftovers yesterday it was delicious and didn't need any extra seasoning.

We made this last night, the full recipe even though there are only two of us. It was quite outstanding and very delicious. We had enough left over for lunch to day. Next time we will try with green lentils and just a tiny bit of chilli to give some zing. Definitely now on our favourites list!

We’ve eaten lentil stew most of our lives, made a bit different, my mother is from South America. I love this simple recipe, I’ll have to try this out today. What I love about your recipes is that they are simple and many are veg recipes! Thanks for including those recipes as well! I made the white bean stew yesterday! It was nice and simple and it felt so healthy, but still delicious! I did add a half of potato though for some extra, since we didn’t have rice. Best

I live in Andalucía and I absolutely love real Spanish food - lentil stews are very popular here and a lot of people sprinkle white wine vinegar on top, which is really delicious! Looks delicious! I'm Dominican and in my family we make it very similar, only substituting a few of the produce. We don't use paprika, auyama instead of potatoes and carrots, and cilantro instead of bay leaves and parsley. I'm definitely going to try your version because those flavors look fantastic too.

Lentils are amazing, in France we have the "Petit salé aux lentilles" which is a great classic but takes way more time to prepare and cook (and won’t be suited for veggetarians or people who won’t eat porc I’m afraid), I will try your spanish recipe asap 😋

Just made this - delish! I used the split orange lentils I had in the cupboard. I added shredded ham hock, which goes beautifully with this dish. No salt - probably enough salt in the stock I used - but lashings of black pepper. Very nice.

Interesting dish. I m greek and we have a similar dish but we keep it simple. We boil the lentils once , throw the first foaming water , we boil again and we add a little oil , onion , a little garlic and one-two laurel leaves. At the end five minutes before removing from fire we add origanum ( it gets bitter if cooked a lot) and finally some virgin olive oil , after removing from fire. The taste is amazing since you feel the taste of lentils not disguised by the variety of vegetables with the final touch of origanum. You eat with a food home-style bread and maybe some olives and you are in heaven...

The reason to throw the first water away is that in the boiling water the lentils released a lot of a kind of sugar types which typical let getting you become a ballon after eating lentils. So changing the boiling water makes them easier to digest :)

So the typical brown lentil dishes about whole Europe seaming to be in general pretty equal 😅

I’ve been craving lentil soup and I bumped into your channel miraculously. Ive seen you on TV also and love your recipes. Anyway, I followed your recipe with the exception of the vegetable broth so I substituted with with chicken broth. The lentils cooked in 25 minutes and they were wonderfully tasting. I've just made this, tasted fantastic as expected. I used green lentils and added Turkish Sucuk instead of Chorizo which gave the stew even more of a garlic flavour.

I love lentils. Just bought some red lentils because that's all I could find at the store. Never cooked them before and didn't know they get soggy. I usually just add brown lentils to my turkey soup. To my knowledge, my Spanish grandmother never made a lentil dish. We have no handed down recipes. (She did cook a lot of garbanzos.)
My mother was born and raised in Zamora Spain and used to make the exact same thing. Sometimes she'd add a ham hock or chorizo. Delicious, filling, and inexpensive! Thanks for this!

YUM! When I visited Malaga many years ago, my sister and I ate lentil soup almost every day at a small restaurant frequented by locals. I made your recipe with bone broth and oregano (because I did not have a bay leaf). It was amazing and just how I remembered it! I am going to make another batch with chorizo and a pinch of clove powder (which is more Greek) because this is such a great basic recipe. Thank You!

Terrific recipe, easy and quick too .... I have made this 3 times now .....
The first was according to the video, with the 2ndgo, I added some chorizo, dry sherry cayenne also added cans of chick peas and white kidney beans as I had no more lentils .....
Then ..... for number 3 ...... I used up some shrimp I had and substituted dry vermouth instead of the sherry ..... It's been different each time ..... but still fantastic
Oh ..... and it freezes well too.

As always - a nice recipe and an interesting, Mediterranean variant. I love lentil stew, but my German variant differs in nuances. I use "Mirepoix" instead of peppers and tomatoes. In addition to salt, pepper, laurel, clove and cinnamon are used as spices. This is then bound with dark "Roux". In the south of Germany, lentil stew is often eaten with spaetzle (a type of pasta) and sausages. However, I would omit the potatoes

Bravo, this is a classic Spanish dish. You forgot one thing though - add a glug of olive oil before serving and serve with good bread. Dishes like this clearly have their origins with poverty but can become wonderful with additional ingredients like the ones in the video. Pork and/or chorizo is often added but.....I once made the Italian version of this with the best lentils in the world (Norcia) and added the traditional wild boar sausage. The lentils were so delicious that the tasty sausage wasn't necessary. Get the best lentils you can afford because they absorb flavour like a sponge. A cheap simple but great ingredient which could easily help with the problem of food poverty in countries like the U.K if people could cook dishes like this one.
Ironically, this humble recipe is way healthier than much of what people eat nowadays in many parts of the world.
@@montesierra717 Totally agree. It's delicious, healthy and affordable. These ingredients are, as you say, very humble. It's not a recipe that has to be followed by the letter either. You can add or remove some elements of it.
Lentejas and other staples used to be cheaper now they are becoming expensive because of demand (in average Lentejas $3, Garbanzos $3.5 and Habas $3.75 dollar per kg respectively, as reference good beef $6 dollar/kg) in this part of the world.
